Even today, the chocolate trade looks a lot like it did in colonial days: Raw materials bought at generally low prices in the tropics are shipped to the developed world and turned into a luxury product. Today, three of the largest importers of cacao to America are fighting a lawsuit filed by a human rights group claiming that they buy beans harvested by child slaves, mostly in the nation of Ivory Coast. Several journalists have contended that the extent of slavery in the cacao industry has been overblown, but it’s hardly comforting to hear that the number of slaves who helped make your afternoon snack has been exaggerated. Without doubt, adults and children on some cacao farms, particularly in West Africa, perform demanding, exhausting work for awful pay.

Elk Candy Company makes fine chocolate and marzipan. I do not think marzipan is very interesting when it is plain or merely coated in chocolate, so it is nice to find a chocolatier that has developed their marzipan further, as Elk Candy Company has done with their flavored marzipan rolls. I like marzipan this way. Elk sells it in slices. Flavors include pistachio, truffle, hazelnut, and orange.
Michel Cluizel ($35 for 15 pieces), another favorite from our 2014 review, performed well against the new competition. Everything we said about it before still stands. It’s a very well-made chocolate, and the flavors are pretty safe. These would be a good choice for a person who likes Godiva and is interested in better quality chocolate, but is not yet ready for unorthodox flavors.
L.A. Burdick ($40 for 34 pieces, medium-size wood box) was well received, with three second place votes and only one strike against it. The subtle shades of chocolate squares hide a mix of French-inspired ganaches, including plenty of boozy options like Macallan whisky and green Chartreuse. These are safe, middle-of-the-road gifting chocolates that are probably suitable as professional gifts. They are known best for their chocolate mice, which are undeniably cute. L.A. Burdick is based in New Hampshire, with stores in New York City, and Cambridge and Boston.
Bridgewater chocolate bars. (Big image.) Take classic chocolates, make them with good chocolate, and upgrade the design and execution a notch, and you have Bridgewater’s assorted chocolates. You can taste the quality and care that goes into these chocolates. I liked the peanut butter pieces quite a bit, as well as the Irish and almond toffees. Not all the pieces moved me, but you should try for yourself.
Chocoholic travelers can have an immersive experience in Hershey, Pennsylvania, at Hershey Park. The amusement park, with roller coasters, water rides and candy mascots, also holds two hotels and one campground. Guests can take in shows and concerts, eat thousands of calories thanks to chocolate-themed menus and rich desserts or even get sticky with a "chocolate fondue wrap" at the full-service spa. 

Along with the Chocolate Chip cookies, you can choose from the Dark Chocolate Sea Salt (a brownie-like cookie made with Valrhona dark cocoa and Ghirardelli bittersweet chocolate chips. It delivers a subtle and delightful “ting” of salt on the tongue), the clever Lemon Blueberry White Chocolate Chip, the White Chocolate Cherry Chip which is baked with tart Montmorency dried cherries, and a hefty Oatmeal Raisin.

Baking Notes: I cooked every brownie mix for LESS time than listed on the box. I used cake testers to test the middle to make sure the brownies were done. Click HERE for an inexpensive cake tester. None of them reached even the minimum baking time listed on the box. My advice to you is to ALWAYS set the timer for less time than listed on the box.  If not, you may end up with hockey pucks for dessert!

Dilettante claims confectionary descendance from Julius Rudolph Franzen, pastry chef to Franz Josef, Emperor of Austria and King of Hungary. I have only their truffles to judge them by. Unfortunately, I prefer other pieces with a greater variety of components and expression. Truffles are too often an overdose of chocolate and cream. Dilettante may move up on my list when I have more experience with their products, such as their gift box assortment.

Anna Shea Chocolates is an experience not to be missed. The flavors, ingredients, technique, and artistry are excellent, including an excellent color chart and playful names. The assortment includes a variety of flavors including fruit, cinnamon, liqueurs, and some playful flavors like red velvet and birthday cake. The assortment was light on nut flavors, which tend to be my favorites.
For those who don't eat animal products (or just prefer to stay away from dairy), these Amore di Mona vegan chocolates make a delicious and thoughtful gift. They're also free from gluten, wheat, soy, and peanuts, and they come in a 24-piece box complete with a bow. Best of all, reviewers say, it's "very high quality chocolate" and they "taste amazing!"
"Commence your tasting with the white chocolate, macadamia nut and Cointreau Ambrosia truffle; with your second sip give our milk chocolate Wink of the Rabbit truffle a whirl. Rosé Champagnes are a tad fuller bodied than their golden counterparts and in general, tend to stand up better to darker chocolates. Cheers to an eternal life of wine + chocolate!"
This was, hands-down, Krader’s favorite. “Oh, my God,” she said. “I feel like I just fell into a pool of chocolate.” More to the point, the Neuhaus truffles did everything Krader said a good chocolate truffle should: The tender coating gave way to a luxurious whipped mousse filling, with layers of flavor. About 3.6 billion Ferrero Rocher are sold every year in over 35 countries. This brand has had a major impact in China since China allowed foreign businesses to increase the economy. The gold wrapping gave a luxurious and different appearance which the Chinese associated with wealth, which allowed for its popularity in China over other chocolate brands.
We cut the chocolates into quarters so that more than one person could taste all of the offerings while also trying to avoid palate fatigue. While this may sound like a silly problem, it can be quite frustrating when your taste buds become overstimulated mid-tasting and fail you. To try to limit this, Saltines and club soda were set out to help tasters pace themselves.

If you still want a classic chocolate chip cookie, the Salty Sweet version uses thin slabs of chocolate that layer throughout giving each bite the perfect dough to chocolate ratio. But don’t stop there. We loved the Oatmeal Raisin cookies (“Best I’ve ever had” said one taster), the Dark Chocolate cookies (“Deeply chocolate without being too sweet’) and the Spicy Cinnamon cookies which absolutely live up to the name. If you need a break from the exotic and unusual flavors, try Donnelly’s white chocolate macadamia nut or a honey vanilla caramel.
Chocolate Apéritifs au Fromage is chocolate-covered cheese. That was an unusual combination, new to me. The flavors are balanced and modest, but the cheese prevails. The Boîte Gourmande contains plain square wafers of chocolate, Florentins (chocolate cookies, square wafers covered with a honey and nut confection), mendiants (chocolate disks topped with nuts and dried fruit), and chocolate sticks containing candied orange peel. All are good. These are little chocolate delicacies, to be savored. The dried fruit arrived still fresh and full of flavor.
