B.T. McElrath Chocolatier was an artisan chocolatier in Minnesota but has become a part of Annie B’s. (I have not done a new review since the change.) McElrath’s truffle assortment was excellent, with balanced and moderately strong flavors. In most pieces, the flavors remained distinct, working together without losing their own identities. B.T.’s Signature Dark Chocolate Truffle had a full chocolate flavor without any bitterness and without being very sweet. Other flavors include caramel; passion fruit; lavender and pepper; chile and lime, lime, coconut, and ginger; cinnamon and star anise. All were well done. I would ask for a different and stronger caramel flavor, but that is a quibble of personal preference. 

With four boutique locations throughout Seattle, this shop gets its name from Fran Bigelow, a master chocolatier who is renowned for her harmonious blending of textures and flavors. Valrhona, the Rolls Royce of chocolate, has been crafting couvertures (chocolates with high cocoa content) since 1922. Hailing from France's Rhône Valley, Valrhona's wine country influence is unmistakable. The label on each Valrhona cru (single origin bar) bears the name of that bean's terroir, the most exclusive of these being the Vintage Single Origin bars, sold in limited quantities according to crop yield. Valrhona also suggests wine pairings designed to bring out the "notes" in each chocolate's complex flavor profile. From chocolate pearls to tasting squares, the brand's nec-plus-ultra chocolate bar selection is available at specialty grocery stores.

Stuart, Florida, located about 80 miles north of Fort Lauderdale, is already one charming small town to visit. Its highlight, though, is Castronovo Chocolate. This bean-to-bar small-batch chocolate shop has won several gold medals at the International Chocolate Awards for its lemon oil and lemon salt-infused white chocolate, Sierra Nevada 63 percent dark chocolate and Colombia mocha milk chocolate. The service here is attentive and as world-class as the bars themselves.
This was, hands-down, Krader’s favorite. “Oh, my God,” she said. “I feel like I just fell into a pool of chocolate.” More to the point, the Neuhaus truffles did everything Krader said a good chocolate truffle should: The tender coating gave way to a luxurious whipped mousse filling, with layers of flavor. (“It comes in waves,” Krader said.) The units were big enough for two satisfying bites, and they tasted as if they'd been made five minutes earlier. “A chocolate like this makes you realize how many old chocolates you’ve eaten in your life,” she said. "And how many mediocre ones."
I just wanted to let you know how much I love your products and especially your customer service. I got married in August, and I wanted to give my groomsman and bridesmaids something unique. Fittingly, the chocolate takes center stage from the onset, not a more familiar dense semi-dark chocolate but rather, almost exactly as another has put it, like milk chocolate cocoa powder, somehow at the very intersection of sweet and dry. It's plenty sweet but not over the top, and the sharpness of the cocoa powder is somehow there. Another similar analogous experience is the smell of a milk chocolate bar when first being unwrapped. If you are looking at this product and reviews, chances are you have already eaten a lot of dark chocolate. If you haven’t, this isn’t a great place to start given the cacoa content is so high (I found this out myself the hard way). I used to eat mainly milk chocolate, which is primarily sugar. I initially tried an 85% dark and despised it. I then worked my way up starting with like a 45%, then 60%, than 72%, then 85%, then 88-100%...which worked a lot better as my taste could adapt to the change (for better or worse [better for me as I need to watch my dietary intake and want the health benefits of dark chocolate], standard commercial milk chocolate is now so overly sweet to me that I cannot eat it.)

They flavors create a chocolate that is sweet without being saccharine. The Alcove Red Velvet Milk Chocolate, made with 64 percent cacao, is blended with spices and other natural ingredients. The Oaxaca truffle, for example, uses guajillo and pasilla chilies with 75% cacao Tanzanian dark chocolate and pumpkin seeds, while the Naga truffle is filled with sweet Indian curry and coconut that's covered by 45% cacao deep milk chocolate. If you're getting a bit freaked out by the experimental flavors, have no fear — there are also chocolates with cherries, hazelnuts, and other more traditional ingredients inside.
I was not satisfied at Pierre Marcolini. The Massepain Pistache was unremarkable. The dark chocolate in the Noisettine Fondant was so strong it almost overpowered the hazelnut. The ingredients and components in the piece were good, but the composition was not great. In the Trianon Fondant, the dark chocolate exterior did overpower the filling, and the wafers were soggy, not crisp.

Anette’s Chocolate Factory has a nice variety of chocolates, more than your usual Standard assortment. Examples include the Peach Cobbler, Roasted Hazelnut Morsel, Mint Truffle, Triple Berry, and Himalayan Salted Caramel. They were a bit hit and miss for me, but I would say their milk or dark Ensemble (12 truffles, 18 others) or Anette’s Assorted (30 others) boxes are a good deal.

K’s 5-star review: Nama grand mariner and Nama champagne: rich and delicious. Absolutely. Remind me of Burdick's Pave, which are one of my absolute favorites. The Nama are a better value -- more pieces with the benefit of a handy prong to keep all the cocoa dusted pieces from feather off on your fingers. Boxes run $18.00 each as of 4/2014. Potato chips: really didn't click. Tasted greasy and didn't flatter either -- more guilt and less pleasure.
Visiting the Republica del Cacao should be on every chocoholic's bucket list! The youngest company among our selections, the Republica del Cacao is an Ecuadorian chocolate firm founded in 2004. The brand arose out of an effort to preserve the indigenous Arriba cacao plants grown predominantly on family farms in the Manabí, Los Ríos and El Oro regions of Ecuador. Republica del Cacao's claim to fame is their single-origin dark chocolate bar, made with nothing but cacao, sugar and cocoa butter, allowing the complex flavors of each region's chocolate to speak for themselves. The company has also branched out into beverages like hot cocoa, coffee and chocolate- and coffee-flavored liqueurs.
Owner and debonair chocolatier Giorgio Demarini took the skills he learned as a graphic designer and applied his artistic talent to something sweeter. Now he makes chocolates with his mother at Roselen, hand-painting playful designs to turn into delectable, unique masterpieces. His jungle-style flavor blends, like passion fruit lemongrass or lychee with geranium petals, can be found nowhere else. Try to catch a tasting class, where Demarini pairs his handcrafted Peruvian chocolates with various local libations. Great list! There are only two I haven’t hit. I will say that Cavanaugh’s Cherry Chocolates are the best ever! For fun at V Chocolates you must get a package of the Chocolate Frogs, the Harry Potter in you will be so happy. Cummings’ Chocolate Pecan Turtles are so right, I don’t want to be wrong! Hatch’s!!!! You can't make a list of popular chocolate brands without including Mars. This incredibly famous worldwide brand is responsible for Snickers, Galaxy, Dove, M&M'S, Milky Way, Twix, 3 Musketeers, and Mars bars. Like Nestlé, Mars focuses on candy bars and confectioneries instead of plain chocolate products. But it definitely offers a combination of chocolate, nougat, caramel, or other ingredients that you won't be able to say no to.
