Our own country is the world’s biggest producer of chocolate. One thing that sets American chocolate apart? The frequent use of peanuts and almonds. There are a number of artisan chocolate shops across the country, but Hershey’s in the country’s largest producer of the candy. And of course, there’s Hersheypark in Hershey, Pennsylvania, a popular family destination for both thrill rides and all the chocolate and confections one can handle!
Zak’s Chocolate is a small-batch chocolate shop located in Scottsdale, Arizona. What makes them so unique? They source all their cocoa beans from a single, ethical source and roast the beans themselves, allowing Zak’s to carefully control the production of their sweets. They then turn the beans into elegantly flavored chocolates, with delicacies such as a blackberry lychee bonbons, a brownie flight and a cacao nib caramel.

Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.
The second question had an easy answer: Chocosphere, World Wide Chocolate and other very handy Web sites for people who care about cacao content. A carton from Chocosphere containing just over a half pound of Amedei bars and squares ran me $50, with shipping. The next day, the whole box was gone. In my defense, I’ve seen engagement rings that came in bigger boxes. I knew that I wanted more, but at $100 a pound it would be cheaper to fly to Italy and go to the factory myself, which is what I did. This might make me the first traveler in history who went to Tuscany to save money on a candy bar.
Launched in 2006, the Seattle-based Theo Chocolate was the first chocolate manufacturer in the US to be both 100 percent organic and fair-trade. (The Fair Trade Certificate goes only to eco-friendly products made by workers who are paid enough to cover their basic needs and reinvest in their operations.) Theo’s conscientious chocolates are delicious: nuanced and intense, like dark, single-origin bars from nations such as Ghana and Madagascar. Founder Joseph Whinney is so passionate about chocolate that he hired a biologist to genetically map Theo’s beans. Not all of Theo’s endeavors are so serious: 3,400 Phinney bars, named for the factory’s street address, come in whimsical flavors like the salty-sweet Bread and Chocolate ($7), featuring dark chocolate mixed with bread crumbs; it’s perfect with afternoon coffee. theochocolate.com
We were struck by the fine presentation of this collection by Ferrero. Every piece of high-quality chocolate comes individually wrapped making them a perfect addition to any party or just a nice treat to go with after dinner wine. The box itself is designed perfectly for gift-giving and the variety of chocolates inside mean that there are tastes and textures to satisfy almost any chocolate enthusiast out there. Each piece of chocolate flawlessly combines a smooth taste with a crisp and crunchy wafer center, with a dash of hazelnuts rounding out the flavors.
I have liked Chuao in the past but think their products have changed, perhaps to support larger production and distribution. My 2014 order was somewhat disappointing, not up to the $84/lb. price. Ingredients seemed to be good quality, but the flavors were generally not strong, and the chocolate flavors were weak. The honey combined nicely with the nut flavors in Nut & Honeylicious. But the nut flavors, which are often my favorites, were mild in this and other pieces. Among the stronger flavors were the raspberry and strawberry in the Framboise and Strawberry Seduction, but even these were medium strength at best and without strong support from the chocolate.

Hershey’s Chocolate World is one of the top attractions in Hershey. Visitors can take a free tour to see how cocoa beans are transformed into Hershey’s chocolate. They also can make their own candy bar, enjoy a chocolate tasting session, tour the town of Hershey via trolley, solve a gooey whodunit in the 4D Chocolate Mystery attraction and shop at one of the largest candy stores around. One piece had a very good blend of hazelnut and almond with a fine crunchy texture. The marzipan was very good; Jacky Pédro brought out the flavor well. He must have sense of humor and self-confidence to label one of his products Le Crottin du Pin. To avoid spoiling your appetite, I will not translate the name, but the piece is a cocoa meringue with a chocolate cream filling. It was nice and very unusual and just a bit bitter. I also strayed from chocolate and tried the Patés de Fruits, which were very good.

To be considered, a chocolate shop must be in or near a city with a population of at least 100,000 people. In states with few or no cities of this size, chocolate shops in smaller cities were also considered. Ratings are the number of points given by Yelp and Google users out of a possible 5.
This Brussels, Belgium-based chocolatier has a long-standing reputation as one of Europe’s best chocolate-makers, and this dark chocolate collection is a fantastic way to sample their variety of confections. I love Milkboy chocolate. It is honestly the best chocolate bar I've ever tasted. I tried it for the first time after I purchased one bar at a specialty food store when I was on vacation. I had to have more, so I searched for it everywhere in my town, but with no luck. I'm so happy I found this online, and I hope they start distributing in more locations soon.
