Tessa Halstead grew up in the chocolate business: Her father ran a chocolate shop in Dallas a generation ago. Today in Austin, she’s built Chocolaterie Tessa into a community hub. Halstead and her crew produce chocolates on a larger scale than most, and offer single-origin bonbons in addition to assorted flavors that change seasonally. Krader’s conclusions are based on her own, explicitly biased preferences. “I have a sweet tooth, so I don’t always like the bitter chocolates that go up to astronomically high cocoa amounts,” she said. “Sometimes chocolate can be too intensely chocolate.” The truffles were graded on taste, aesthetic, and overall presentation. Richart’s Intense Valentine Gourmet Chocolates are $77 for a box of 49 chocolates. The real frustration here is that it's 49, not 50, so those of us with a strong sense of symmetry will have to eat them quickly just to cope. However, they are legitimate French Chocolates, each one having one of seven fancy flavors / aromas - floral, spicy, citrus, balsm, roasted, fruity, or herbal. The box also comes with a dark chocolate plaque for your valentine, so maybe that's piece 50.
Valrhona has been creating exceptional gourmet chocolate since 1922, with cocoa beans purchased directly from premier plantations in South America, the Caribbean, and Pacific regions. The chocolate, made in the French style, comes in a variety of bars. Valrhona was one of the first chocolatiers to describe its chocolate like wine, labeling creations as grand cru, single origins, single estate, and vintage chocolate from bean to bar. In 2008, it introduced spicy, salty Xocopili.
The makers were recently crowned the best of the best at the International Chocolate Awards, the biggest and most comprehensive global competition in the world. Soma Chocolatemaker, based in Toronto, was named best chocolate maker in the world for its dark milk chocolate bar made with cocoa beans from Guasare, Venezuela. Omnom Chocolate from Reykjavik, Iceland, took parallel honors for its milk chocolate bar featuring Icelandic milk powder and cocoa from Nicaragua.

On the shelves at À La Mère de Famille sit sweets and treats of all kinds, including bars of 100 percent pure origin Venezuelan cocoa. Surprisingly melty and vibrantly aromatic, the plain chocolate is smooth, while the inclusion bars are beautifully strewn by hand with whole hazelnuts, almonds, and tidy little chunks of candied ginger.
At Sucré in New Orleans, everything is simultaneously decadent and delicate. The shop’s signature chocolates feature playful flavors like peanut butter and jelly and German chocolate cake. The macarons, which include chocolate, almond and lavender flavors, are famous throughout Louisiana. Of course, the shop’s standout offerings are sold during Carnival,which include a selection of gold, green, and purple chocolates in iconic flavors (creme brulee, Southern pecan praline, and bananas Foster).
At their Brooklyn, New York, factory, the bearded brothers Rick and Michael Mast create fantastic single-origin dark chocolate bars that are wrapped in custom-printed paper and named after the sources of the cacao beans, such as Papua New Guinea, Moho River, Sambirano Valley, and La Red de Guaconejo. “They’re interesting, and certainly showcase the tangy, tropical, terroir-driven flavors of chocolate,” says F&W’s Kristin Donnelly. mastbrothers.com
Review: Let's just say you get what you pay for and since you'll have to shell out top dollar ($50 to be exact) for these babies, we can assure you, they're good. However, we do have to point out that they are tasty, but not amazing. One taster described one of the Godiva's as "[feeling] like a hug, a milky embrace" while another brought things back to earth with "the special edition truffle, not so special." Don't worry, while not every piece is delectable, there are some definite stand outs, so they're worth the extra dough.
Galaxy is sold as Dove in several countries internationally. This brand of chocolate ranges in flavors from milk chocolate, fruit & nut varieties, and bubbles. The Galaxy and Dove brands also market products including hot cocoa powder, cakes, and ice cream. This comes in second to the Cadbury Dairy Milk bar in the best selling chocolate bars in the United Kingdom.
Lifelong enthusiasts, they grew cacao plants in their apartments and made small batches in their Palo Alto garage. After two years of taste tests, they took their handmade dark chocolate public, opening Dandelion Chocolate in 2012. Located in San Francisco’s eclectic Mission district, their factory turns out 2,500 single-origin 70 percent cacao bars per week. Their releases, which change frequently with the season, source cacao from places as far-flung as Venezuela, Madagascar, and Papua New Guinea.
Cacao Art: Made by sisters Susana and Isabel Garcia, who started the business in Venezuela but later moved to Miami (lucky for us). Says Isabel, “We think, as sisters, there is a lot of nostalgia in our chocolates, because we like to recreate the tastes of our shared childhood in Venezuela.” Case in point, the decadent Anís y Papelón truffle (an International Chocolate Awards winner) made from sweet anise and raw cane sugar and inspired by a traditional Venezuelan pastry. The sisters use as many local and organic ingredients as possible and different spices and flavors from their extensive travels in Europe and North and South America.
Our chocolate drinks are made using premium single origin chocolate. We make 3 drinking chocolates (a classic dark French style, a lighter Venezuelan milk with cinnamon, and a spicy dark one with ginger, coconut milk and other spices) and several different hot chocolates including vegan and sugar free options. Hotel Chocolat is a UK based company specializing in exclusive chocolates. But, right away their noticeable lack of selection is a huge turn off. With only approximately 10 products to choose from this website is a disappointment. They do offer white, milk and dark chocolate items. But, the only thing that really caught our attention was a beautiful heart shaped chocolate milk and strawberry flavored item. Unfortunately, they were sold out weeks in advance of the holiday and the item cost $55.00.
The Pistachio Marzipan and Bandol Breeze (apricot pâte de fruit and marzipan) were too weak for my taste, but most of Jacques Torres’ pieces had both good non-chocolate and chocolate flavors. The Golden Espresso was another very good piece. Mom’s Chocolate Peanut Brittle did not quite work for me, but Grandma’s Chocolate Peanut Butter Crunch was excellent, with a great roasted peanuts flavor and complementing chocolate. In spite of my few quibbles I, most of Torres’ pieces are done to near perfection, and I would class Torres with Burdick. Both are near the same quality. Burdick uses a bit more exotic flavors while Torres takes familiar flavors to great heights.

Late last year, I grew curious about an Italian chocolate brand called Amedei. I mean curious in the same sense that sharks are curious about surfers. Amedei, founded in 1990, is the joint project of a 42-year-old Italian named Alessio Tessieri and his younger sister, Cecilia; he buys the cacao and she turns it into dark, glossy bars. In November, a competition in London awarded a gold prize to one of Cecilia’s handiworks, a single-plantation chocolate called Chuao. Two other Amedei products tied for silver.

Nothing says "I love you" quite like like a giant heart shaped box stuffed with chocolate (food = love right?). But it can be daunting to pick out the right box when there are so many pimped out and deceiving options to choose from. Fortunately for you, we got down and dirty and went through too many chocolates to find the right box for your boo (or your boss).

In France it was introduced from Spain in 1615, when infanta Anne of Austria, showed the chocolate drink to her new husband, the King Louis XIII. In Belgium, the Low Countries back then, the production of chocolates started in 1635 under the Spansh occupation. In 1657 a Frenchman living in London opened “The Coffee Mill and Tobacco Roll“, a shop which sold the first tablets of solid chocolate, that were used to prepare this new drink. Chocolate became so popular that the British government taxed it heavily to the extent that chocolate had a price which was equivalent to two thirds of its weight in gold. Switzerland started to produce chocolate in the middle of the XIX century.


The Pecan Penuche also plays on local products, Georgia pecans. Its flavor makes nice use of pecans but is a little sweeter than I would like. Two pieces make excellent use of spices. The Aztec has a deep chocolate flavor, strong enough to stand up to the blend of six chilies and spices that kick in after a few seconds. In the Cayenne Passion Fruit, the cayenne and passion fruit play nicely with and against each other and with the chocolate. I often find that “hot” spices detract from chocolate, but Hard has blended these well.
#3: Great Value (Wal-Mart Generic Brand) Fudge Brownie Mix — the underdog and least expensive brownie mix killed it in the brownie mix challenge, much to the surprise of the judges.  One judge even gave it a perfect score and deemed it the favorite.  It consistently received a few solid 8’s, a few 9’s, and one 10.  It also received a 2 and several 4’s so it wasn’t a favorite across the board.  Most reviewers like the soft, chewy texture with flaky top. They enjoyed the fudgy flavor. Some thought it was slightly artificial tasting and wouldn’t eat it again. It scored well enough to nab the #3 spot. What a shocker!
The Chocolaterie is a delightful find in a suburb of Atlanta. They have a variety of truffles with flavors that are both fanciful and familiar. The Cookie Dough Truffle gives a good impression of its namesake and is both enjoyable and playful. As with the Malted Milkshake Truffle, the flavor composition conveys a luxurious feel. These and several other flavors weave multiple flavor sensations without losing them in a blend.

When chocolates are around, the whole world seems beautiful. Chocolate is an ingredient which is loved by all ages and in all the nations. Chocolate can melt the boundaries, bridge the gaps, build relations and jazz up one’s mood during the blues. Chocolate is extracted from the majestic tree – Theobroma cacao which is very rare in the world. The real value of chocolates can be understood by the folklore about the Revolutionary War when the soldiers sometimes used to receive chocolates as their payments. Isn’t it interesting and bizarre? Chocolate has a plethora of stories linked with it.

See’s ($18 for 1 pound, available nationwide) was one of the value picks in our tasting lineup. Their chocolates tend to be bigger, enough for two bites instead of one, with a mix of dark and milk chocolate, around old-fashioned nougat and nut caramel fillings. While it got three strikes against it, it also got one third place vote. The assortment may be a nostalgic standby for devotees, but it can’t compete with the more boutique chocolates out there. Still, they were far and away better than Russell Stover.
Chocolatier and pastry chef Marc Aumont has been crafting fine chocolates for decades, taking over his father’s business in France at the age of 16. Today, Aumont makes the desserts at chef Gabriel Kreuther’s restaurant in midtown Manhattan and commandeers the chocolate shop next door. The chocolate room itself is encased in glass so patrons can see each bonbon as it rolls off the enrobing conveyor belt, a mesmerizing process. Aumont is known for his macaron-flavored bonbons, but the whole line, from the addictive macadamia nut toffee to the filled and multi-flavored chocolate bars, is worth sampling. 43 West 42nd Street, New York, NY
Back in 1857, Jean Neuhaus opened a pharmacy in Brussels, Belgium and decided to coat medicines with chocolate to help them go down better. By 1912, Neuhaus' son had created the praline, and in 1915, his wife designed the first box of Neuhaus chocolates. Fast forward to 2018, and Neuhaus chocolates are still considered among the very best. We've tasted Neuhaus chocolate at its shops in NYC, and it's delicious.
Fittingly, the chocolate takes center stage from the onset, not a more familiar dense semi-dark chocolate but rather, almost exactly as another has put it, like milk chocolate cocoa powder, somehow at the very intersection of sweet and dry. It's plenty sweet but not over the top, and the sharpness of the cocoa powder is somehow there. Another similar analogous experience is the smell of a milk chocolate bar when first being unwrapped. “You can tell that this chocolate is top-of-the-line,” Krader said. “It’s a very smooth experience.” She described the flavor as “buttery” and expanded on that theme by describing the experience as feeling like you’re “putting on the most luxurious and cushy chocolate robe.” The petite size of the truffles, however, raised a red flag. “I like a chocolate that takes two bites to finish,” she said. “These are a bit small for my taste, though aesthetically, they’re very pleasing.”
Woodhouse Chocolate has some very nice pieces; you should definitely visit when in St. Helena or even Napa. However, not every piece lives up to their price level, so be selective about your assortment. I found the shifting flavors of orange, cream, marzipan, and chocolate in the Fiori di Sicilia made it a fun experience, although its chocolate is a minor player. I particularly recommend the Pecan Caramel for an excellent pecan flavor, which mixes well with the chocolate, and the Peanut Croquant, again for a good medium-strong peanut flavor that mixes well with chocolate.
French Broad: This chocolatier opened in Asheville in 2007 and does a nice job of giving the chocolate lover a big truffle for the buck. These were some of the largest truffles we tasted. Their Buddha Collection’s vegan truffle was a favorite (composed of bitter sweet chocolate and coconut cream), lending the truffle a nice exotic edge. The Lavender and honey from the signature collection box—a milk chocolate ganache around a dark chocolate ganache blended with local honey and lavender—was the a delicious riff on lavender. The mole negro—housemade mole in dark chocolate and rolled in sesame seeds—great texture and spice.
Among all of the tested chocolates, the Recchiuti come in the most intriguing shapes and designs. No two chocolates are the same. Some have intricate patterns, while others look like little sculptures. This contrasted sharply with the John and Kira’s box, filled with 15 squares of the same shape, size, and texture (a little monotonous for a romantic gift).

After surveying the options, devil’s food seemed like the best choice for side-by-side testing. Since the key characteristic of a devil’s food cake is its richness, we figured we’d be able to judge more fairly by basing our test on the big brands’ most indulgent offerings. Next, the pros in our Test Kitchen baked each cake according to the directions on its package. To rid our bakers and testers of any preconceived biases, we prepared and compared each brand without its flashy packaging or marketing claims.


K’s 5-star review: Through a narrow lobby and off the street, Chocolat Moderne is tucked on the 9th floor off the beaten path. Please do not let this discourage your New York chocolate trekking -- it is worth taking the extra step (or, if preferred, elevator ride) to visit. This chocolatier is absolutely stocked with a decadent selection (and I do mean selection and decadent) hosting rack after rack of freshly created bonbons. The lady herself, Joan Coukos, and her hubby were the hands-on reps at the counter, so the charming customer service was stellar. Bonbons are painted in perfectly tempered shell molds (Valrhona has never been in better form) with filled centers that absolutely ooze with a bravado of focused flavors -- from the trending and expected sea salt caramel and liquor-splashed ganaches, to oreintal persuasions such as persimmon peach and shiso lime. Pieces were $2.5-$3.5. Bars $8. Chocolat Moderne has middle man retailers such as D&D and Whole Foods that offer some of their products. However, I would strongly recommend visiting the NY location if it's available to your schedule -- you deserve it!

On the other hand, the pieces from Whole Foods Market were not as impressive. The Elizabeth, Antoinette, and Madeleine were good. The Jeanett had a strong mint flavor that overpowered its white chocolate. The Sophie is marzipan with lemon, which is interesting. I wanted more marzipan, but it was good. Not everything worked. The Valentina is a chewy caramel with lavender. Lavender is aromatic, but that was distracting, and it did not contribute a pleasing flavor. The Patricia certainly had chili but was weak on tangerine. These were fine for grocery store chocolates, but lackluster for the price, $51/lb. The box has drawings illustrating the pieces, but I was unable to match several pieces to the drawings.
In 2005, when John Grahm took over this mid-century Los Angeles shop where Marilyn Monroe once purchased her sweets, he fashioned it into an edgy and modern version of Old Hollywood elegance. Partnering with designer Kelly Wearstler, Grahm created a line of stunning bars covered in edible crystal, filled with tortilla chips and cayenne pepper, and flavored with balsamic vinegar. But tradition still rules at Compartés, so everything is handmade and people (not machines) do the packaging.

As Saint Valentine's Day rose in popularity, people began sending gifts of flowers, love letters, and other trinkets. Liquid chocolate drinks were understandably not convenient to mail to a sweetheart. In 1847, Joseph Fry invented chocolate you could eat by adding extracted cocoa butter back into the drinking cocoa powder, changing forever how we think of chocolate.
I was introduced to Alegio Chocolate on a chocolate crawl and bought a selection to taste at home. The Raspberry had a good balance with strong raspberry and good chocolate working together. The Orange was similar but slightly milder. The Santa Domingo is an unusal combination of green olive, licorice, currants, and apricot. Those flavors actually stood to the side a bit to present the chocolate at center stage. The Espresso worked well with a slightly salted caramel. The Habeñero had a little bite to it, while the Honey was of course sweet. Throughout the pieces, distinct chocolate flavors were presented well.
