Owner Patricia Tsai is a self-taught chocolatier whose background in the business world taught her how to avoid the pitfalls of running a sustainable food business. Since 2012, Tsai has been sourcing cacao from a small farm in Tabasco, Mexico. At Chocovivo, she roasts and grinds those beans into chocolate using a grinder made in Mexico; she also has an ancient Aztec stone grinder, which is fascinating to watch in action. The shop sells a variety of chocolate products, including hot chocolate mix and chocolate sauce, but Tsai’s single-origin and blended bars (flavored with locally sourced coffee, spices, and essences) have attracted a loyal following. Review: One of our tasters summed these little treats up in the following words: "soft, creamy and totally different." Not gonna lie, we weren't big fans of the idea of strawberries and cream in lieu of chocolate for Valentine's Day but one bite and we stuffed our faces. The truffles are creamy and sweet and surprisingly decadent. These are a perfect option for someone who *gasp* doesn't like chocolate (they are rare but they do exist) but you manage to love anyway.
French Broad: This chocolatier opened in Asheville in 2007 and does a nice job of giving the chocolate lover a big truffle for the buck. These were some of the largest truffles we tasted. Their Buddha Collection’s vegan truffle was a favorite (composed of bitter sweet chocolate and coconut cream), lending the truffle a nice exotic edge. The Lavender and honey from the signature collection box—a milk chocolate ganache around a dark chocolate ganache blended with local honey and lavender—was the a delicious riff on lavender. The mole negro—housemade mole in dark chocolate and rolled in sesame seeds—great texture and spice. 

Owner and chocolatier Katrina Markoff chooses every spice, flower, and chocolate that is flown into the Vosges kitchen to be transformed into fine chocolates. She learned the art of French confectionery at Le Cordon Bleu in Paris. Further inspired by her global apprenticeships, infusions of rare spices and flowers are combined with premium chocolate in truffles such as Mexican vanilla bean and Argentinean dulce de leche.
You can't make a list of popular chocolate brands without including Mars. This incredibly famous worldwide brand is responsible for Snickers, Galaxy, Dove, M&M'S, Milky Way, Twix, 3 Musketeers, and Mars bars. Like Nestlé, Mars focuses on candy bars and confectioneries instead of plain chocolate products. But it definitely offers a combination of chocolate, nougat, caramel, or other ingredients that you won't be able to say no to.
