Today, her shop specializes in bonbons in California-inspired flavors like Eureka lemon, raspberry rose geranium, brown butter, buttermilk lime, and olive oil sea salt. Jacques specializes in fresh, handcrafted chocolates. Eat them there, where cafe tables encourage you to sit, sip hot chocolate, and enjoy a freshly baked pain au chocolat — or take a selection home. Visitors often can see the chocolate goodies being prepared behind large glass windows. There are five Jacques Torres Chocolate shops in the city, plus one in Harrah’s in Atlantic City.
Bernachon is famous for quality, but it was disappointing to me. Bernachon’s chocolate, which they make from raw cacao beans, is very good, and their pieces that are mostly chocolate are very good. However, some of their other pieces flopped for me. One such was the Créole, which has marzipan with rum-flavored currants. I did not like its composition at all. The pralines with liqueur also did nothing for me. (Eat them whole. The liqueur will spill when you bite into them.)

Its Champagne truffles are renown, and their handmade floral packaging is unparalleled, but when it comes to their bars Teuscher goes for pure unadulterated chocolate. Beginning with only the thin-shelled Criollo beans (surely the rarest, and some say the highest quality), the Teuscher chocolate-makers produce every bar by hand in Zurich, adding only cocoa butter and sugar (and sometimes very little, as in their 99 percent cocoa bar). While its headquarters are in Switzerland, lucky for us, Teuscher has shops all over the world—including in nine U.S. cities.

The most famous Venezuelan cacao of all comes from Chuao. The trees of Chuao are shielded by mountains from all but the warm Caribbean breezes; the soil is naturally irrigated by three cascading rivers. Doutre-Roussel calls the region “one of the jewels of the earth.” Besides the microclimate, Chuao has centuries-old traditions of harvesting and preparing cacao. First it’s fermented to develop the compounds that will later blossom into rich aromatics, then it’s laid out on the parvis in front of the village church to dry slowly in the sun. Because the farmers worked together as a cooperative, Chuao is one of the only places where a chocolate maker could buy, at one stroke, 9 to 10 tons of uniformly excellent cacao. Until recently, that chocolate maker was Valrhona. Today every last kilo of cacao from Chuao goes to Amedei.

Garrison’s pieces generally were not a good showcase for chocolate; it played only a minor role in most pieces. While ordering, I was put off by the lengthy legal terms. I would rather a chocolatier tell me more about their products than about how all shipping problems will work against the customer, and the seller does not want to be bothered with anything like ensuring their product is delivered well.
We were also impressed with the boxes the chocolates are delivered in. The beautiful boxes are made of wood or other materials and can be engraved upon request - for a small fee. You may place your own picture or logo on the engraving as you prefer. This allows your gift to be even more personal, impressive and appreciated. The product may even been wrapped and will be placed in a draw string cotton pouch. Include a personal gift message if you like and you may ask to ship the gift now or later as needed.
Unique flavors like Tarragon Grapefruit, Sesame Nougat, and Star Anise & Pink Peppercorn are part of the mix, as well as safer flavors like Burnt Caramel, Piedmont Hazelnut, and Candied Orange Peel (which is the best chocolate-covered candied orange peel you'll ever have). While unusual flavors can easily become gimmicky and overwhelming, Recchiuti has executed theirs perfectly with subtle, elegant, and rounded blends. This was especially apparent when compared with our previous pick, Christopher Elbow, whose perfume-y flavors almost knock you over.
The selection at Chocolate is vast, everything from a simple chocolate-dipped fortune cookie for less than a dollar, to a 200+ piece Valentine's assortment of gluten-free chocolates for over $300. We did notice that none of their categories included two of the most popular “candy holidays”, Halloween and Christmas, but Easter chocolates are sold year-round.
