Some of the Fruity pieces were excellent, particularly the Mango Passionfruit ganache. The fruit flavor was nicely bittersweet and strong with a good peak, complemented by slightly bitter chocolate. The Lime ganache, Raspberry ganache, and Red Berry bouquet coulis were also quite good with strong fruit flavors. The Orange Zest coulis was very interesting. I had the sensation of flavor in the upper palate versus on the tongue. The Apricot coulis flopped, though; it was weak and not sweet enough for me.

We came to this conclusion after evaluating 11 brands, including our 2014 picks, and taking suggestions from Wirecutter commenters over the past year, as well as fellow Wirecutter staffers.

Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.

You can’t get fresher honey bon bons than the ones you will find at Mademoiselle Miel. The honey used in these scrumptious confections is gathered from the rooftops of St. Paul, Minnesota, itself. Get your honey bon bons however you like — smoked with scotch, in a seasonal flavor or simply as classic, pure honey — but just get them. Mademoiselle Miel’s commitment to local ingredients extends to all the shop’s products, which also include maple chocolate bars.
By and large, the truffles are nice. In the Class 5, the chocolate led, and the raspberry was a good partner. The Black Diamond made good use of chocolate. The Rocky Top had a mild pleasant coffee flavor. The Powder Day was a good firm white chocolate. Mostly the strengths were medium, although the hazelnut was weak in the milk chocolate Mud Season.

But, the only thing that really caught our attention was a beautiful heart shaped chocolate milk and strawberry flavored item. Unfortunately, they were sold out weeks in advance of the holiday and the item cost $55.00.

There is an unadulterated plain dark chocolate for the purists and one with a hint of vanilla for those who want just a little more depth. You'll also find peppermint drinking chocolate and a spiced drinking chocolate with chilies and cinnamon for those who prefer a little spice in their life.
American consumers are expected to spend an astonishing $1.8 billion-plus on candy for the holiday this year, and about 75% of that will be on chocolate. Mass-market confectioners like Russell Stover, in business since 1923, will account for most of the sales. (The company, which also owns the Whitman’s brand, is the largest boxed-candy manufacturer in America.) I love Milkboy chocolate. It is honestly the best chocolate bar I've ever tasted. I tried it for the first time after I purchased one bar at a specialty food store when I was on vacation. I had to have more, so I searched for it everywhere in my town, but with no luck. I'm so happy I found this online, and I hope they start distributing in more locations soon.
At $120 a pound, Maison du Chocolat ($60 for 28 pieces) is pretty expensive chocolate, but it’s some of the best we’ve ever tasted. These are bonbons for the chocolate purist because you can still really taste the chocolate in each one. Even in the raspberry ganache, which is so packed with fresh flavor that you could swear you just ate the perfect raspberry, the complexity of the chocolate still comes through. The ganaches are incredibly smooth and the chocolate that comprises the shell is perfectly tempered, giving a very satisfying “snap” on first bite. The flavors, though, are more traditional than our main pick’s. While every chocolate in the Recchiuti box pleasantly surprised us, the Maison chocolates, although excellent, aren’t as adventurous. For a Valentine’s or romantic gift, we feel the Recchiuti make a better choice.

If you are looking for gourmet chocolate with a twist, Vosges Chocolate might be the website for you. A Cordon Bleu trained chef steps out of the box to use unique ingredients. At Vosges you can anticipate bacon, cheese, peppers, and other non traditional ingredients in the chocolate selection. The website is fun but the search functionality is a bit limited.

In 2005, when John Grahm took over this mid-century Los Angeles shop where Marilyn Monroe once purchased her sweets, he fashioned it into an edgy and modern version of Old Hollywood elegance. At this year’s tasting, we again liked Michel Cluizel’s well-executed, classic fillings. This box is sure to please anyone with an affinity for old-style French chocolates. They are the sweetest of our top picks, but they are not as nuanced as those from Recchiuti and lack whimsical flavor combinations (which might be a bonus for some palates). We also found this assortment, dominated by simple squares and circles, less visually exciting than the Recchiuti’s range of unexpected shapes. But for the traditionalist, this box might be just perfect.

If you get a huge box of chocolates and can’t finish them in two weeks, you can store them in the refrigerator for up to 1 month. After that, the flavors of the creams and ganaches can turn stale. When storing chocolates in the refrigerator, take the same steps you would when refrigerating chocolate bars. Be sure to wrap the box very well in plastic wrap, and seal in a zip-top plastic bag. Prior to eating, let the chocolates come to room temperature before unwrapping to avoid any condensation.
