Garrison’s pieces generally were not a good showcase for chocolate; it played only a minor role in most pieces. While ordering, I was put off by the lengthy legal terms. Because Jacques Torres is as serious about technique as he is about fun, it’s possible to walk out of one of his eight New York City stores without a pure, single origin bar of dark chocolate and a bag full of chocolate-covered Cheerios (the idea for which he had when a mother quieted her wailing baby with a handful of the cereal.) His 80 percent Porcelana cocoa bars are unusually sweet and silky for chocolate with such a high cocoa content, but Torres says the qualities of these rare, special beans allow him to ratchet up the cocoa without adding more sugar.

Review: When we first saw this box we didn't really have high expectations but considering this was the only chocolate assortment that was nearly wiped out by our testers, it's safe to say it's a true contender. Like the other Russell Stover on the list, this heart has a lot of variety but unlike its counterpart the chocolates seem to have a little more inspiration and flavor behind them. Overall reactions boiled down to head nods of approval from our tasters so if you're looking for something good that isn't wildly expensive, this is a great way to go.

For their new chocolate line, che Thomas Keller and olive oil icon Armando Manni are ratcheting up the intrinsic health benefits of cocoa beans and EVOO. The chocolate is made according to the same "live" principles Manni designed for his cultish oils--a method developed with the University of Florence to minimize heat exposure and retain antioxidants throughout processing. The two tapped former pastry chef Chi Bui (Daniel, Le Bernardin) to perfect the blockbuster bars, which double down on the antioxidant power with a finishing hit of Manni oil. In the lofty strata where Tessieri operates, “making chocolate” means that you make the chocolate. You import cacao beans from plantations. You roast them and husk them and grind the cacao nibs into a fine paste. You add sugar and grind some more. Finally you swirl the mixture in open tanks called conches, which smooths the texture while helping to blow off acids and other nasty flavors. It’s complicated, demanding work, and few small companies even attempt it.
All-Around Favorite: Chocolopolis: The defining difference between these chocolates and others we tasted was the utterly complex and rich ganache inside each different truffle. Chocolopolis has one of the largest collections of craft chocolate bars in the world—many of which they incorporate into their truffles. The Champions Box (my favorite) features all of their award-winning truffles. Lacquered and glossy, each truffle delivers serious taste, (think lemon-lavender white chocolate or the Madagascar dark chocolate). The top taste was the Dominican Republic House Blend truffle, made from their proprietary blend of select Dominican Republic couvertures (cacao). Chocolopolis founder Lauren Adler notes, “I’d compare our style of confections to the French tradition, where it’s really about the quality and the flavor of the chocolate.” Her caramel cups dusted with a cluster of sea salt are worth a bite too.
Anna Shea Chocolates is an experience not to be missed. The flavors, ingredients, technique, and artistry are excellent, including an excellent color chart and playful names. The assortment includes a variety of flavors including fruit, cinnamon, liqueurs, and some playful flavors like red velvet and birthday cake. The assortment was light on nut flavors, which tend to be my favorites.
As a professional courtesy, we’ll do the math for you: If you order a dozen of these 4.4 ounce cookies…hold on while we cipher…that’s over three pounds of cookies. Too much? No worries. We walked buy this store in New York City and subsequently ordered the hot chocolate on a stick variety pack. They come in three favors (white, milk and dark chocolate) and taste great! We love good chocolate (vahalrona, Godiva, Jacque Torres, etc.). These are very tasty, fun to use, and unique. Kids especially enjoyed creating their own chocolate drink. We also emailed the company for rush delivery and they were excellent in responding and following up. Highly recommend!
Connecticut is apparently so well known for its chocolate shops that it has a bona fide tour route for sweet confections called the Connecticut Chocolate Trail. So how does Bridgewater Chocolate in West Hartford stand apart from the crowd? Its stunning packaging, for one. But the chocolate tortels, truffles and dark chocolate-covered cherries on a milk chocolate heart are luxurious and rich.
