Founder Colin Gasko is running a small but ambitious operation. Each single-origin chocolate bar at Rogue is sourced from independent farms in Peru, Dominican Republic, Ecuador, Trinidad and Tobago, and Honduras. Unlike other fair-trade chocolate purveyors, Rogue pays more than twice the minimum for some of its cacao order to ensure the lasting success of those farms. The Maison du Chocolat packaging, while very sophisticated, is pretty conservative and not as sexy as our top pick. The textured box mimics pebbled brown leather and has the logo stamped on the back. The adjective that comes to mind is “professional”; it looks luxe but understated and reserved. We think this box of chocolate would be great as a corporate gift, or for your mother-in-law.
L.A. Burdick ($40 for 34 pieces, medium-size wood box) was well received, with three second place votes and only one strike against it. The subtle shades of chocolate squares hide a mix of French-inspired ganaches, including plenty of boozy options like Macallan whisky and green Chartreuse. These are safe, middle-of-the-road gifting chocolates that are probably suitable as professional gifts. They are known best for their chocolate mice, which are undeniably cute. L.A. Burdick is based in New Hampshire, with stores in New York City, and Cambridge and Boston.
French Broad Chocolate is a must-try shop located in Asheville, North Carolina. It has chocolates that have won numerous awards at the International Chocolate Awards and Good Food Awards. The confections, which range from single-source bars to vegan lemongrass and ginger truffles, are made with local ingredients and sustainable, wholesome cacao beans.
Xocolatti’s globally-inspired truffles and slates (very thin versions of chocolate bark ($28) with layers that recall slate rock) come in seven exotic flavors like mango and paprika with white chocolate. “In India, we usually eat fruit with spices on it, and one of the most popular combinations is mangos with paprika on top,” says founder Shaineal Shah. xocolatti.com
After surveying the options, devil’s food seemed like the best choice for side-by-side testing. Since the key characteristic of a devil’s food cake is its richness, we figured we’d be able to judge more fairly by basing our test on the big brands’ most indulgent offerings. Next, the pros in our Test Kitchen baked each cake according to the directions on its package. To rid our bakers and testers of any preconceived biases, we prepared and compared each brand without its flashy packaging or marketing claims.
Norman Love Confections: Chef Norman Love’s chocolates always have a tropical high toned fruitiness to them—even his dark selections. We loved his holiday candy cane selection (which comes in a fetching candy cane-shaped box.) The sleek, lustrous very colorful chocolates won big for shock and awe—they also tasted great too. This was one of the most festive and fun collections that we opened.
Pastry chef Jacques Torres left Manhattan’s Le Cirque in 2000 to open his own chocolate factory. Torres now runs a chocolate empire that includes two production facilities, six NYC outposts and one in Atlantic City. Sometimes, the best chocolate shops around the country have been in business for generations, descended from old-style candy-making facilities. Sometimes they’re no more than a few years old, started by artisanal chocolatiers, some with formal training and others with little more than a love for chocolate and a desire to learn. Sometimes they’re even local branches of large chains.
On the other hand, the pieces from Whole Foods Market were not as impressive. The Elizabeth, Antoinette, and Madeleine were good. The Jeanett had a strong mint flavor that overpowered its white chocolate. The Sophie is marzipan with lemon, which is interesting. I wanted more marzipan, but it was good. Not everything worked. The Valentina is a chewy caramel with lavender. Lavender is aromatic, but that was distracting, and it did not contribute a pleasing flavor. The Patricia certainly had chili but was weak on tangerine. These were fine for grocery store chocolates, but lackluster for the price, $51/lb. The box has drawings illustrating the pieces, but I was unable to match several pieces to the drawings.

However, it is the chocolate that counts here. Norman Love falls short. Although the pieces were visually great, quite polished, and perfectly executed, they did not use chocolate well. Perhaps a third had a good chocolate presence. There were quite good non-chocolate flavors, including peanut butter, pistachio, lime, and pumpkin. The Peanut Butter & Jelly was very good but not good enough to justify putting them in an expensive confection.
This Italian chocolatier specializes in hazelnut-flavored chocolate pralines, combining a hazelnut chocolate cream and a whole hazelnut with a crisp chocolate shell in either milk or dark chocolate. It’s a decadent chocolate experience, but with a complexity and mild bitterness from the hazelnut that makes it a more adult experience. Perfect for nut lovers.
