The Mint Chocolate Cookie had good flavors, but I did not find the composition as compelling as in the other pieces. It seemed a little incohesive, although the components were good. The Raspberry Rose was not as strong as other pieces but was still excellent. The pieces were in thin shells of white, milk, or dark chocolate. All of the shells contributed good flavors, but I might like a little more of them.

First time there we tried a few chocolate candies. We started eating them as soon as we left the shop and could not stop! They were so good, we kept walking and eating and didn't pay attention to where we were going. In Venice that can really get you lost! After finding our way back to the shop we bought more candy. This time enough to get us through the rest of the trip.
The Quatre Epices was well balanced blend of four spices. Wild Cherry had a nice piquant cherry flavor the first time I tried it but was milder on a later occasion. The Praline Noisette was good with a sharp hazelnut flavor, and the Mocha Cream was good, but some of the other gianduja pieces were mild or weak. The Honey had mild flavors with not much honey shining through. The cinnamon of the Cinnamon Toast was present but stood alone, not partnering well with the chocolate.
The Peanut Crunch started with a good light crunch and revealed distinct but light toasted peanut flavor. That was my favorite, and I also enjoyed the Apricot Cream, Marshmallow Cream, and Tart Cherry. I would prefer stronger chocolate flavors in Anette’s chocolates. The Dansk Bar sounded promising with “chocolate truffle layered over marzipan and vanilla caramel,” but I was disappointed. The flavors were not brought out well, and the texture was firmer than I expected. I also found the Triple Berry Cream too sweet to enjoy the fruit and chocolate flavors, so I recommend you select your favorite pieces from the case if you are in the store.

The Swiss pioneers paved the way for future confectioners by crafting some of the world's first chocolate candies. Although I'm really not a big fan of dark chocolate, I received this as a gift and have to say I'm delighted with it. I love almond and the dark chocolate of this is not bitter or too strong like some sweet dark chocolate bars tends to be. Africans consume less than 4% of chocolate sold globally, but Ivory Coast is looking to change that with their handmade, artisanal chocolates. Known as the leader in the production and exporting of cocoa beans, the country has begun producing their own chocolate as the region continues to stabilize and experience economic growth. One company, Instant Chocolat, was launched in 2015 and has experienced tremendous growth in its first few years. Their chocolate, ranging from pralines to bars, is popular both locally and internationally, particularly with corporate clients like Air France and Citibank.
Hailing from France’s Rhône Valley, Valrhona’s wine country influence is unmistakable. The label on each Valrhona cru (single origin bar) bears the name of that bean’s terroir. It is the most exclusive of these being the Vintage Single Origin bars, sold in limited quantities according to crop yield. Valrhona also suggests wine pairings designed to bring out the “notes” in each chocolate’s complex flavor profile. The most famous Venezuelan cacao of all comes from Chuao. The trees of Chuao are shielded by mountains from all but the warm Caribbean breezes; the soil is naturally irrigated by three cascading rivers. Doutre-Roussel calls the region “one of the jewels of the earth.” Besides the microclimate, Chuao has centuries-old traditions of harvesting and preparing cacao. First it’s fermented to develop the compounds that will later blossom into rich aromatics, then it’s laid out on the parvis in front of the village church to dry slowly in the sun. Because the farmers worked together as a cooperative, Chuao is one of the only places where a chocolate maker could buy, at one stroke, 9 to 10 tons of uniformly excellent cacao. Until recently, that chocolate maker was Valrhona. Today every last kilo of cacao from Chuao goes to Amedei.
