I’ve been a fervent consumer of chocolate my whole life, to the point where I can open up almost any box of assorted bonbons and immediately spot the chewy caramel (it’s usually square). Aside from my personal affinity for bonbons and truffles, I tasted many different brands when they crossed my desk while I was working as a food editor at Martha Stewart. I learned how to quickly spot the difference between inexpensive and high-quality chocolates by looking for a perfect temper, examining ingredients, and, of course, tasting.
“Wow,” said Krader, biting into one of the company’s flat, square truffles. “This is definitely the chocolate with the most distinct point of view.” By that, she meant that it had perhaps the most unusual flavor of the bunch, with distinctly fruity notes. “This is from someone who’s redefining what truffles can be,” she said. “The flavorings don't punch you in the face, and it tastes like it was just made.” In other words: advanced chocolatiering. “There’s a sophistication about them,” she said. “Truffle neophytes might want something more general.”

Sweet Girl Cookies will make you feel like a kid again, that is, if you’re like me and always tried (and still try) to choose the biggest cookie on the cookie plate. These gourmet cookies are generously big—4.4 ounces, and they cry out to be enjoyed with a big glass of milk or cup of coffee for dunking. Each cookie tends toward a dense cake-like rather than chewy texture, and each flavor is packed with chips. The middle of these cookies (even their “smaller” 2 ounce cookies) is one inch thick. French Broad: This chocolatier opened in Asheville in 2007 and does a nice job of giving the chocolate lover a big truffle for the buck. These were some of the largest truffles we tasted. Their Buddha Collection’s vegan truffle was a favorite (composed of bitter sweet chocolate and coconut cream), lending the truffle a nice exotic edge. The Lavender and honey from the signature collection box—a milk chocolate ganache around a dark chocolate ganache blended with local honey and lavender—was the a delicious riff on lavender. The mole negro—housemade mole in dark chocolate and rolled in sesame seeds—great texture and spice.
The Corso was the most novel piece, combining olive oil, salt, and chocolate. I was skeptical, but the olive oil was presented nicely and worked well with the chocolate. My sensations of the Pietra alternated between the chocolate and hazelnut flavors; they were balanced nicely. Generally, Hermé’s pieces had good chocolate and nice flavors, although I did not agree with all of the balances. I did not taste the caramel or salt very much in the Makassar, and the raspberry in the Ispahan could have been stronger.
Garrison’s pieces generally were not a good showcase for chocolate; it played only a minor role in most pieces. While ordering, I was put off by the lengthy legal terms. I would rather a chocolatier tell me more about their products than about how all shipping problems will work against the customer, and the seller does not want to be bothered with anything like ensuring their product is delivered well.
These are the best cookies I've ever had! A friend gave me a box of these for Christmas, and my son and I devoured them. I had to get more. Do not think of the price tag. These are not Chips Ahoy or Oreos. These are desserts as dainty, tasty, and elegant as you'd find in a 4 star restaurant. You won't be able to eat a dozen at one sitting....possibly not in two. They are filling and just an amazing little bit of heaven. I am so glad I can get these through Amazon because the nearest Cosco is a two hour drive from me here on the Oregon coast. And I would feel so guilty driving that far just to buy cookies. But, I am ashamed to say, I'd probably do it. Yes. They are THAT ... full review
The lucky residents of Sacramento have a treasure in Ginger Elizabeth Chocolates. The Hazelnut Praline was excellent, with evocative hazelnut. The Almond Rocher had a great texture. Its almond was well balanced with the choolate although it could have been stronger. The Peanut Butter Croquant also had an excellent balance with the flavors brought out well, including a little zip to the peanut butter.

Hiraeth is a Welch word that is tough to translate but it expresses that feeling of longing and nostalgia that borders on homesickness for a time or place you can no longer return to. That’s the kind of emotional time travel we had when we unboxed our cookies from 1812 House. These are timeless, classic cookies made with real butter and vanilla and handmade in small batches. Eating one is like stepping back in time, a pleasure mixed with nostalgia.

Vosges’ truffles are mild. This works well in the Woolloomooloo, which delivers a macadamia flavor that is pervasive without being strong. However, the other pieces are generally too mild for my taste. You might expect the curry in the Naga or the wasabi in the Black Pearl to be prominent, but they are weak. The flavors are present, but you have to work at tasting them.
Pastry chef and chocolatier Kate Weiser hasn’t been making chocolates for that long, but has already won wide acclaim. Though Weiser offers an array of gorgeous, hand-painted chocolate bonbons, her candy bars are the real draw. Chocolatier Kee Ling Tong opened her flagship store in New York City’s Soho in 2002 as a combination flower and chocolate shop. Some of the Fruity pieces were excellent, particularly the Mango Passionfruit ganache. The fruit flavor was nicely bittersweet and strong with a good peak, complemented by slightly bitter chocolate. The Lime ganache, Raspberry ganache, and Red Berry bouquet coulis were also quite good with strong fruit flavors. The Orange Zest coulis was very interesting. I had the sensation of flavor in the upper palate versus on the tongue. The Apricot coulis flopped, though; it was weak and not sweet enough for me.
Chocolate Visions makes excellent chocolates with nice flavors. I tried The Works Collection and generally enjoyed both the pieces with familiar flavors and those with novel combinations. The Hazelnut Trio had an unusual structure that showcases its familiar flavors well. The spice was distinct in the Tarragon, quite unusual, and worked well with the chocolate.
For their new chocolate line, che Thomas Keller and olive oil icon Armando Manni are ratcheting up the intrinsic health benefits of cocoa beans and EVOO. The chocolate is made according to the same "live" principles Manni designed for his cultish oils--a method developed with the University of Florence to minimize heat exposure and retain antioxidants throughout processing. The two tapped former pastry chef Chi Bui (Daniel, Le Bernardin) to perfect the blockbuster bars, which double down on the antioxidant power with a finishing hit of Manni oil.
