Lifelong enthusiasts, they grew cacao plants in their apartments and made small batches in their Palo Alto garage. After two years of taste tests, they took their handmade dark chocolate public, opening Dandelion Chocolate in 2012. Located in San Francisco’s eclectic Mission district, their factory turns out 2,500 single-origin 70 percent cacao bars per week. Their releases, which change frequently with the season, source cacao from places as far-flung as Venezuela, Madagascar, and Papua New Guinea.

The Thai peanut butter cups at Alma Chocolate in Portlandm Oregon, are what make this shop famous, but don’t discount their other offerings. Their bonbons are some of the best in the country and come in beautiful flavors such as fig and marzipan and passion fruit caramel. They also pay homage to chocolate’s Latin roots by making hand-crafted chocolate icons, made with 74 percent single-estate dark chocolate and painted with 23-karat edible gold.
Candy — and especially chocolate — has been associated with Valentine’s Day since the 19th century. English confectioner Richard Cadbury started packaging his chocolates in heart-shaped boxes adorned with Cupids and rosebuds as early as 1861, and by the early 20th century, what had originally been a religious holiday had become fully commercialized. Candy shops (and florists) reaped the benefits.

If you want to try a wide assortment of fine European chocolates for little more than the price of a basic Russel Stover box, Merci’s assortment is a great option. This box of twenty small bars comes with six varieties – milk chocolate, coffee and cream, hazelnut almond, hazelnut cream, dark mousse, and praline cream. Each bar is individually wrapped for easy eating, making this offering from the German brand a tasty and affordable option for those just entering the world of high-end European chocolate.
The truffles are packaged in a row, as in the above image (which unfortunately does not convey the triangular shapes well), in a triangular box. A mild drawback is that the box unfolds and opens flat, which is not convenient for holding the remaining truffles until you can eat them. I recommend trying Telluride once. The price is a bit high, although the reasonable shipping price partly compensates for that.
This is a delicious handmade product produced at their store in Lucerne, but you can also purchase at their store in Zurich. The chocolate here far exceeds the taste and quality of other chocolatiers in both Zurich and Lucerne. If you happen to go to Lucerne, be sure to taste the homemade ice cream only available here. While the chocolate ice cream was excellent, the cherry was my favorite.
Chocolate is a guilty pleassure made of the mass of roasted cocoa beans and cocoa butter processed with powdered sugar. This sweet is hundreds of years old. The word cocoa derives from the Aztec word "cacahualtl". According to the legend the cocoa was the most beautiful tree in the Aztecs' paradise. They believed the cocoa beans provided wisdom and helped cure diseases. These trees originaly grew in the Amazon and Orinoco basins. The Mayans started to cultivate cocoa more than 2,500 years ago. They used the cream of cocoa to cure wounds and as both stimulant and relaxing medicine. They also created a bitter beverage called "chocolha" with the seeds of cocoa and some local spicies which was only consumed by the nobles.

Chloé Doutre-Roussel, the author of The Chocolate Connoisseur and one of the world’s leading authorities on fine chocolate, uses another word to describe what came next: vendetta. “Everything Alessio does, he does with intensity,” Doutre-Roussel says. “So this revenge became his focus. He put everything—the family money, even his sister—on this project.”
I visited Melt while in transit through London and was only able to sample a few pieces. My favorite was the Crispy Croquant, a hazelnut feuillantine with superb texture, excellent hazelnut flavor, and a nice scent. The Raspberry and Mint marvelously combined those flavors with a soft raspberry ganache and crystallized mint leaves in a white chocolate shell. The Sea Salted Praline and Gianduja Dome were also very good. The Sea Salted Caramel trailed a bit behind. It lost points for falling apart when bitten into and a strong note in the caramel that did not quite harmonize with the rest of the piece for me.
The Mom’s Apple Pie Truffle had a good apple flavor, a background of pie crust flavor, and was well accompanied by white chocolate. I did find it too playful with non-chocolate flavors to take it seriously as a chocolate piece. The Chocolaterie also has simpler and more direct flavors, such as the Epicurean Truffle and the Hawaiian Pink Sea Salt Butter Caramel.
For the chocolate purist, or anyone looking for the perfect corporate gift, we think Maison du Chocolat ($60 for 28 pieces) is a great premium choice. The flavors are subtle enough to really let the chocolate shine. The packaging, reminiscent of brown pebbled leather, is understated and innocuous enough to gift for professional reasons. Although these chocolates are incredibly smooth and slightly less sweet than the Michel Cluizel, the overall flavor profile isn’t quite as daring as those in the Recchiuti box and might not provide the same sensory adventure as our main pick. We also think the assortments available online are a little big for a Valentine’s gift (although you can purchase smaller boxes in their stores).
The Maison du Chocolat packaging, while very sophisticated, is pretty conservative and not as sexy as our top pick. The textured box mimics pebbled brown leather and has the logo stamped on the back. The adjective that comes to mind is “professional”; it looks luxe but understated and reserved. We think this box of chocolate would be great as a corporate gift, or for your mother-in-law.
Chocolat Céleste is a mixed bag; I have enjoyed some pieces but not all (relative to experienced expected for the price), and prices have escalated. I suggest the Grand Cru collection. Although pricey, $139/lb. in 2012, it is a rare opportunity to taste criollo (a type of cacao, from which chocolate is made). I enjoyed the criollo pieces in the collection. They should be approached as a tasting experience: Cleanse your palate with water, smell, taste, let the chocolate dissolve, and take the time to experience it. The collection also has non-criollo pieces that I found a bit flat and dry compared to the criollo.
Taza Chocolate tries to maintain Mexican traditions when crafting its products. Each disc is made from stone ground organic cacao beans to create a bold, rustic chocolate disc. Taza means “cup” in Spanish and the company encourages customers to use the discs to make classic Mexican hot chocolate, which usually has a hint of spice in the mix. The discs in this box each represent their own unique flavor and spice combinations. There are six choices—cinnamon, cacao puro, vanilla, guajillo chili, salted almond and coffee—that chocolate enthusiasts can use in sauces, drinks or desserts.
Nobody knows for sure how many chocolate shops there are in the U.S. today, at least in part because many of them do double duty as patisseries, ice cream parlors, or gift shops. Suffice to say that there is probably not a city or a town of any size in the country that doesn’t boast at least one purveyor of specialty chocolates, and many places have more. There are at least 80 of them in New York City, for instance, and more than 30 in Los Angeles.
