Susanna Yoon used to make the chocolates at Thomas Keller’s three-Michelin-starred Per Se, where each meal ends with a tableside buffet of bonbons. Yoon spun her craft into Stick With Me, a shop in Manhattan’s Nolita neighborhood. Inside a space roughly the size of one of Willy Wonka’s golden tickets, she sells two dozen different types of bonbons, eight different types of soft caramel candies, and a handful of packaged brittles, toffees, nougats, and marshmallows. Africans consume less than 4% of chocolate sold globally, but Ivory Coast is looking to change that with their handmade, artisanal chocolates. Known as the leader in the production and exporting of cocoa beans, the country has begun producing their own chocolate as the region continues to stabilize and experience economic growth. One company, Instant Chocolat, was launched in 2015 and has experienced tremendous growth in its first few years. Their chocolate, ranging from pralines to bars, is popular both locally and internationally, particularly with corporate clients like Air France and Citibank.
There’s a drinking chocolate for everyone at Elbow Chocolates. Late last year, I grew curious about an Italian chocolate brand called Amedei. I mean curious in the same sense that sharks are curious about surfers. Amedei, founded in 1990, is the joint project of a 42-year-old Italian named Alessio Tessieri and his younger sister, Cecilia; he buys the cacao and she turns it into dark, glossy bars. In November, a competition in London awarded a gold prize to one of Cecilia’s handiworks, a single-plantation chocolate called Chuao. Two other Amedei products tied for silver.

Over the chocolate shop has an unmistakeable woody, rough powdery texture to it, much like actual cocoa powder, and about the same darkness of it. The hazelnut further adds to this coarse, almost woody feel. The coffee is just noticable enough to amplify the chocolate. This has a certain HEAT to it, like there's the tiniest bit of chili. It also lasts the longest of these four on my skin.

Zak’s Chocolate is a small-batch chocolate shop located in Scottsdale, Arizona. What makes them so unique? They source all their cocoa beans from a single, ethical source and roast the beans themselves, allowing Zak’s to carefully control the production of their sweets. They then turn the beans into elegantly flavored chocolates, with delicacies such as a blackberry lychee bonbons, a brownie flight and a cacao nib caramel.

“We became convinced it was impossible to become number one in the world buying beans from brokers,” Alessio says. “The broker cannot tell you who grew the beans, or how it was done.” I don’t take Alessio for a weepy humanitarian, and yet he practices enlightened self-interest when it comes to the people who grow his cacao. He has invested in Chuao, agreeing to pay off the farmers’ mounting debts and buying baseball uniforms for the local team. He needs their best work so that he and Cecilia can do their best work.


There is nothing conventional about Kate Weiser’s chocolate bars. Packaging: While we were fans of the chocolate, the packaging we're not too sure about. While that may be taking it a little far, the lace covered heart is definitely va-va-voom so while these chocolates may be perfect for your S.O. maybe don't give them to your grandma.

Chuao Chocolatier: (pronounced chew-wow) This company specializes in textural surprise. The whiz kid behind the firecracker truffle (chipotle caramel fudge with sea salt and popping candy) likes to thread in a secret layer of heat that doesn’t hit until the finish so you get the full-on rich chocolaty pleasure with a spank of fun at the end. The other favorite in this tasting was the Salted Chocolate Crunch with toasted panko breadcrumbs, olive oil ganache and a dusting of sea salt—a truly devilish bit. American consumers are expected to spend an astonishing $1.8 billion-plus on candy for the holiday this year, and about 75% of that will be on chocolate. Mass-market confectioners like Russell Stover, in business since 1923, will account for most of the sales. (The company, which also owns the Whitman’s brand, is the largest boxed-candy manufacturer in America.) Most smaller chocolate shops prepare special Valentine’s Day assortments and/or other chocolate-related gifts, though, and these tend to offer greater variety and utilize better-quality chocolate.
