Within each category there is a small selection of products for your choosing. Take note that extra fees apply to packaging at Hotel Chocolate and their shipping was higher priced than some.
Shugarman’s Little Chocolate Shop is the definition of “off the beaten path.” You won’t find a website for this 420-square-foot shop in Madrid, New Mexico, but if you visit, you’ll find an ever-rotating selection of uniquely flavored chocolates. Mixtures like dark chocolate with pink peppercorns, lavender, lemongrass and merlot salt sound crazy, but chocolatier Harvey Shugarman makes it work.
For this year’s update, I brought in 11 brands, including our 2014 picks. We took the past year’s suggestions from our Wirecutter commenters and input from other Wirecutter staffers. In the end, we tasted Jacques Torres, Neuhaus, Francois Payard, Maison du Chocolat, Tumbador, Leonidas, Fran's, and John and Kira’s against our 2014 picks, Christopher Elbow, Recchiuti, and Michel Cluizel.
Chocolate Apéritifs au Fromage is chocolate-covered cheese. That was an unusual combination, new to me. The flavors are balanced and modest, but the cheese prevails. The Boîte Gourmande contains plain square wafers of chocolate, Florentins (chocolate cookies, square wafers covered with a honey and nut confection), mendiants (chocolate disks topped with nuts and dried fruit), and chocolate sticks containing candied orange peel. All are good. These are little chocolate delicacies, to be savored. The dried fruit arrived still fresh and full of flavor.
Baking Notes: I cooked every brownie mix for LESS time than listed on the box. I used cake testers to test the middle to make sure the brownies were done. Click HERE for an inexpensive cake tester. None of them reached even the minimum baking time listed on the box. My advice to you is to ALWAYS set the timer for less time than listed on the box. If not, you may end up with hockey pucks for dessert!
Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.
The beginning of Godiva chocolates traces back to a 1920s chocolate- and sweet-making workshop owned and operated by the Draps family in Brussels, Belgium. Their “pralines,” typical Belgian filled chocolates, were sold in the large, highly fashionable shops. At the age of 14, Joseph Draps went into the family business. Over the years, he developed both his ability and creative talent as a master chocolate-maker as well as his business sense. He decided to create a prestige range of chocolates and to give it an evocative name. He chose “Godiva” and marketed his chocolates in instantly recognizable gold boxes. In recognition of its excellence, Godiva has been rewarded with an appointment as supplier to the Court of Belgium. Godiva continues to be an innovator in gourmet chocolate.
My wife and I purchased a Chocolate of the Month Club for her Grandmother who lived in another state. It was a great gift, easy and convenient for us, and as a chocolate lover, she was thrilled. The best part was that every month, when she would receive her next shipment, she would call us and tell us all about it, and it gave us a chance to talk, catch up on her life, and stay connected. We hadn't anticipated the extra benefit of choosing that gift, but we truly appreciated it.
Visiting the Republica del Cacao should be on every chocoholic's bucket list! The youngest company among our selections, the Republica del Cacao is an Ecuadorian chocolate firm founded in 2004. The brand arose out of an effort to preserve the indigenous Arriba cacao plants grown predominantly on family farms in the Manabí, Los Ríos and El Oro regions of Ecuador. Republica del Cacao's claim to fame is their single-origin dark chocolate bar, made with nothing but cacao, sugar and cocoa butter, allowing the complex flavors of each region's chocolate to speak for themselves. The company has also branched out into beverages like hot cocoa, coffee and chocolate- and coffee-flavored liqueurs.
Bissinger’s toffee is pretty good. The pieces in their French Collection and Signature Classic assortments were good quality but did not have a lot of flavor for me. For example, I did not taste much blackberry in the Blackberry Caramel, and the Pecan Nut Ball was too sweet with not enough nut flavor. The price is high for Standard chocolates; you can get some nice Fine chocolate at the same price.
For over 90 years, Esther Price Candies has been making the milkiest, most scrumptious chocolates in Ohio. Based out of Dayton, this local chain’s chocolate-covered caramels are their most popular product, but no trip to one of their seven locations across the state would be complete without picking up a box of their Buckeyes — it’s the most iconic dessert in Ohio, after all.
Today the Teuscher kitchens in Zurich make more than 100 varieties of chocolates using these original recipes, which have been handed down from father to son. Only the finest and most expensive natural ingredients are used, and absolutely no chemicals, additives, or preservatives are added. The house specialty is a champagne truffle, a blend of fresh cream, butter, and chocolate with a champagne cream center, dusted with confectioner’s sugar. Chocolates are flown to Teuscher stores worldwide weekly.
Famous in New York and internationally as an uncompromising chocolatier, Jaques Torres makes gourmet chocolate chip cookies that are an elegant and rich version of everyone’s favorite cookie. Each cookie measures 5 inches in diameter. Jacques uses his rich, house blend 60% dark chocolate baking discs, which means this cookie skews to the adult tastes, or kids with a discerning palate.
Jacques Torres has every holiday cornered with bonbons and chocolate sculptures that boggle the mind, but it’s his caramelized macadamia nuts enrobed in milk chocolate — tasting something like a deconstructed candy bar — that regularly sell out. I was introduced to Alegio Chocolate on a chocolate crawl and bought a selection to taste at home. The Raspberry had a good balance with strong raspberry and good chocolate working together. The Orange was similar but slightly milder. The Santa Domingo is an unusal combination of green olive, licorice, currants, and apricot. Those flavors actually stood to the side a bit to present the chocolate at center stage. The Espresso worked well with a slightly salted caramel. The Habeñero had a little bite to it, while the Honey was of course sweet. Throughout the pieces, distinct chocolate flavors were presented well.
