The Chocolate Dream Box is a treasure at the southern tip of Silicon Valley, not far from Fleur de Cocoa. Chocolatier Holly Westbrook uses mostly classic compositions, such as fruits and nuts, to good effect. I sampled a pound assortment with not a false note in the batch. Along the way, I encountered the Duo with hazelnuts in peak texture and a medium-light but distinct hazelnut flavor. The Exquisite truffle had a good dark chocolate ganache with fruity notes as promised. At 72% cacao, the Black Truffle was not intense chocolate but was rich and pillowy.
Chocolat Céleste is a mixed bag; I have enjoyed some pieces but not all (relative to experienced expected for the price), and prices have escalated. I suggest the Grand Cru collection. Although pricey, $139/lb. in 2012, it is a rare opportunity to taste criollo (a type of cacao, from which chocolate is made). I enjoyed the criollo pieces in the collection. They should be approached as a tasting experience: Cleanse your palate with water, smell, taste, let the chocolate dissolve, and take the time to experience it. The collection also has non-criollo pieces that I found a bit flat and dry compared to the criollo.

This is a delicious handmade product produced at their store in Lucerne, but you can also purchase at their store in Zurich. The chocolate here far exceeds the taste and quality of other chocolatiers in both Zurich and Lucerne. If you happen to go to Lucerne, be sure to taste the homemade ice cream only available here. While the chocolate ice cream was excellent, the cherry was my favorite.
K’s 5-star review: Beautifully painted, deliciously filled, Norman Love bonbons are crafted to delight. The flavors are astounding and exceptionally executed. The back of the shop can be seen where bustling confectioners are building each morsel with care and quantity. They also have a cafe if you need to chill. The store is located near the airport, it's should be tradition to resource a box when traveling ... If you are looking for exotic flavors, a reward, a gift to wow, or just an excuse to float on the sweet aroma of chocolate, this is the spot. A few favorites I would recommend: keylime, passion fruit, apple ala mode, lemon bar, hot dark chocolate, tahitian caramel, Florida orange, mango, mmm. The bonbon shells are so delicate they serve as an accent to augment the fillings within. Truly brilliant.
I have liked Chuao in the past but think their products have changed, perhaps to support larger production and distribution. My 2014 order was somewhat disappointing, not up to the $84/lb. price. Ingredients seemed to be good quality, but the flavors were generally not strong, and the chocolate flavors were weak. The honey combined nicely with the nut flavors in Nut & Honeylicious. But the nut flavors, which are often my favorites, were mild in this and other pieces. Among the stronger flavors were the raspberry and strawberry in the Framboise and Strawberry Seduction, but even these were medium strength at best and without strong support from the chocolate.
This Italian chocolatier specializes in hazelnut-flavored chocolate pralines, combining a hazelnut chocolate cream and a whole hazelnut with a crisp chocolate shell in either milk or dark chocolate. It’s a decadent chocolate experience, but with a complexity and mild bitterness from the hazelnut that makes it a more adult experience. Perfect for nut lovers.

There may be bars with frillier packaging and more envelope-pushing additions, but when it comes to pure, classic chocolate, Bonnat can lay claim to the crown. This family company began in 1884 and was beloved by Jackie Kennedy Onassis who gave bars to White House guests during the holidays. The Juliana bars are made from specially-grown Brazilian cacao beans, fermented, then dried in the sun slowly, over seven days. Back in France, the beans are painstakingly refined and tempered over five days. It’s an intricate process but, as Stephane Bonnat says, “In the Alps, we have time.”

MarieBelle’s chocolates have fun designs, but the flavors did almost nothing for me. The Swiss chocolate is a thin shell around the fillings and contributed little to the taste. Good ingredients were used, and the flavors, when I could detect them, were well done. However, even pieces I would expect to have prominent flavors, like the Pineapple or Mandarin, were weak. The Spices piece was good, and the Hazelnut Praline was good except for the slightness of the flavor. I could not recommend these at half the price, let alone the $100/lb. charged.

Within three weeks, the Tessieris decided that they weren’t going to buy chocolate anymore—they would make it. Cecilia apprenticed with bean-to-bar artisans around Europe. At first they bought cacao from brokers, but by 1997, Alessio had begun hunting it himself, from Ecuador to Madagascar to the Caribbean coast of Venezuela. This last region was especially rich with cacao of the first rank; a lot of money was at stake, and life could get rough. Four years ago, someone tried to murder a cacao buyer who worked with Valrhona, strafing his car with an automatic weapon and leaving him with a half-dozen gunshot wounds.

You can’t really make a bad choice at Boise’s The Chocolat Bar. Since 2004, this shop has been using local and organic products to allow the lusciousness of chocolate shine through. Connecticut is apparently so well known for its chocolate shops that it has a bona fide tour route for sweet confections called the Connecticut Chocolate Trail. So how does Bridgewater Chocolate in West Hartford stand apart from the crowd? Its stunning packaging, for one. But the chocolate tortels, truffles and dark chocolate-covered cherries on a milk chocolate heart are luxurious and rich.
The second question had an easy answer: Chocosphere, World Wide Chocolate and other very handy Web sites for people who care about cacao content. A carton from Chocosphere containing just over a half pound of Amedei bars and squares ran me $50, with shipping. The next day, the whole box was gone. In my defense, I’ve seen engagement rings that came in bigger boxes. I knew that I wanted more, but at $100 a pound it would be cheaper to fly to Italy and go to the factory myself, which is what I did. This might make me the first traveler in history who went to Tuscany to save money on a candy bar.
Why they're cool: Look, normally these guys cost like a $1 each at the check out counter and I always want to grab the whole box but I can't spend $60 on a last minute craving. You don’t have to look all that hard to find a world-class chocolatier in New York, but while you’re looking, don’t skip over Stick With Me. Located in the Nolita neighborhood of Manhattan, chocolatier Susanna Yoon is crafting handmade bonbons and caramels that rival desserts served at some of the most expensive restaurants in the country. The bonbons look more like hand-painted marbles and less like chocolates, with playful flavors like speculoos s’more and black and white to match.

After trying several Fine chocolatiers that have been recommended highly, I tried Burdick again and realized his work is significantly above other artisan chocolatiers. Do not miss this. If you cannot get to the cafés in Harvard Square, Walpole, or New York, call or order on the web to have chocolate shipped to you. Burdick Chocolate is well priced for this quality and reasonable for shipping and makes an excellent gift.

Elbow’s pieces are mostly square ganaches or round caramels. Many of the caramels were dominated by a sweet fruit caramel, with chocolate from the crisp shell playing a lesser role. The chocolate was a little stronger in the Fleur de Sel, which was wonderful to bite into. The Bananas Foster is also notable because four flavors, chocolate, banana, caramel, and rum, are each noticeable and distinct, working together but not diminshing each other.

The phrase dark chocolate sea salt caramels should be a selling point in itself, but these bite-size treats also have something else going for them: they have almost 500 five-star reviews on online. And there’s a reason why. They make other salty-sweet chocolate-caramel combos seem lackluster in comparison. One reviewer said they have a “bold saltiness” that’s “not for the faint of heart” and another said, “My favorite candy ever!” The creamy, rich caramel is cooked to just the right consistency and the smooth chocolate goes perfectly with the visible salt flakes on top.
Maison du Chocolat’s smallest online offering is a box of 28, which we also think is better to share with a larger group rather than with just one other person. Recchiuti’s offering of 16 chocolates feels more appropriate for sharing between a couple over the course of a few days or a week. And although these chocolates aren’t much more expensive per piece than the Recchiuti, having to buy a bigger box really bumps up the price. You can purchase smaller boxes in Maison du Chocolat stores, but that doesn’t help if you’re not in New York, Paris, or other larger cities where the shops can be found.

Review: We have to start out by warning you, this chocolate is hella sweet. Whitman's is another Valentine's Day staple, which again, offers lots of nougat and caramel-y choices so we can see why it's popular. However, when you're spending so little on so much chocolate it's kind of a given that you're gonna get some sugary product. Also it's worth noting that our box didn't come with a sheet outlining the contents so in the words of one taster "you literally never know what you're gonna get."
Zak’s Chocolate is a small-batch chocolate shop located in Scottsdale, Arizona. What makes them so unique? They source all their cocoa beans from a single, ethical source and roast the beans themselves, allowing Zak’s to carefully control the production of their sweets. They then turn the beans into elegantly flavored chocolates, with delicacies such as a blackberry lychee bonbons, a brownie flight and a cacao nib caramel.
The actual Black Dinah shop in Westbrook is tiny and unassuming, but don’t let the small size of the storefront detour you from trying their fresh artisan chocolates. Their truffles and chocolates are picture-perfect and come in stunning flavors such as pear Champagne and brown butter (the latter is painted with a signature Maine lobster). Their sipping chocolate, which is rich and creamy, is also a must-have for those long, cold Maine winter nights.
This North End chocolate and nut shop run by two childhood friends features a variety of artisan chocolates by local and national chocolatiers as well as gourmet nut mixes, health bars, and specialty snacks, as well as vegan and gluten-free chocolates. Tasting days give the opportunity to try anything from Pure 7’s dark chocolate peppermint bar to Northlight Baking Co.’s macarons.

Bridgewater chocolate bars. (Big image.) Take classic chocolates, make them with good chocolate, and upgrade the design and execution a notch, and you have Bridgewater’s assorted chocolates. You can taste the quality and care that goes into these chocolates. I liked the peanut butter pieces quite a bit, as well as the Irish and almond toffees. Not all the pieces moved me, but you should try for yourself.
Also known as home to the Little Chocolatiers from former the hit TLC show, Hatch’s is at the top of our list when it comes to the best chocolates in Salt Lake City. The quality of chocolate that you consume here whether it be with a caramel apple, inside some of their homemade ice cream, or melted in a cup of hot cocoa is truly top notch. Some of Hatch Family go-to’s are their chocolate covered Oreos, chocolate covered raspberries, and aztec salted caramels.
