All-Around Favorite: Chocolopolis: The defining difference between these chocolates and others we tasted was the utterly complex and rich ganache inside each different truffle. Chocolopolis has one of the largest collections of craft chocolate bars in the world—many of which they incorporate into their truffles. The Champions Box (my favorite) features all of their award-winning truffles. Lacquered and glossy, each truffle delivers serious taste, (think lemon-lavender white chocolate or the Madagascar dark chocolate). The top taste was the Dominican Republic House Blend truffle, made from their proprietary blend of select Dominican Republic couvertures (cacao). Chocolopolis founder Lauren Adler notes, “I’d compare our style of confections to the French tradition, where it’s really about the quality and the flavor of the chocolate.” Her caramel cups dusted with a cluster of sea salt are worth a bite too.

Vosges’ truffles are mild. This works well in the Woolloomooloo, which delivers a macadamia flavor that is pervasive without being strong. However, the other pieces are generally too mild for my taste. You might expect the curry in the Naga or the wasabi in the Black Pearl to be prominent, but they are weak. If you get a huge box of chocolates and can’t finish them in two weeks, you can store them in the refrigerator for up to 1 month. After that, the flavors of the creams and ganaches can turn stale. When storing chocolates in the refrigerator, take the same steps you would when refrigerating chocolate bars. Be sure to wrap the box very well in plastic wrap, and seal in a zip-top plastic bag. Prior to eating, let the chocolates come to room temperature before unwrapping to avoid any condensation.

Created by Austrian chocolatier Joseph Zotter in 1987, Zotter Chocolates offers 365 flavors, produced each day of the year! While we taste-tested an assortment of flavors ranging from the creamy, caramel-filled Coffee Toffee to the not-for-the-faint-of-heart 100% cacao Peru bar, the Goji Berries in Sesame Nougat emerged as the unanimous favorite. This milk chocolate bar is studded with dried goji berries and filled with layers of green tea ganache, homemade nougat and soy and sesame filling. Elk Candy Company makes fine chocolate and marzipan. I do not think marzipan is very interesting when it is plain or merely coated in chocolate, so it is nice to find a chocolatier that has developed their marzipan further, as Elk Candy Company has done with their flavored marzipan rolls. I like marzipan this way. Elk sells it in slices. Flavors include pistachio, truffle, hazelnut, and orange.
