When we heard she was debuting Wild Ophelia, an American-inspired “sister” line to Vosges, we were excited to try it for ourselves. Intended as an “American road trip through chocolate,” Wild Ophelia aims to connect the American farmers’ movement with chocolate. The 41 percent cacao milk chocolate bars feature all-natural ingredients such as New Mexican pecans, California almonds and Michigan cherries sourced directly from small farms across the USA. Markoff first gained fame with offbeat creations like the Mo’s Bacon Bar, so it’s no surprise that Wild Ophelia features unexpected flavors such as BBQ Potato Chips, Beef Jerky and Peanut Butter & Banana.
You can't make a list of popular chocolate brands without including Mars. This incredibly famous worldwide brand is responsible for Snickers, Galaxy, Dove, M&M'S, Milky Way, Twix, 3 Musketeers, and Mars bars. Like Nestlé, Mars focuses on candy bars and confectioneries instead of plain chocolate products. But it definitely offers a combination of chocolate, nougat, caramel, or other ingredients that you won't be able to say no to. 

Some of the Fruity pieces were excellent, particularly the Mango Passionfruit ganache. The fruit flavor was nicely bittersweet and strong with a good peak, complemented by slightly bitter chocolate. The Lime ganache, Raspberry ganache, and Red Berry bouquet coulis were also quite good with strong fruit flavors. The Orange Zest coulis was very interesting. I had the sensation of flavor in the upper palate versus on the tongue. The Apricot coulis flopped, though; it was weak and not sweet enough for me.
To identify the best chocolate shop in each state, 24/7 Wall St. indexed ratings weighted by number of reviews for thousands of chocolate shops nationwide on Yelp and Google. To be considered, a chocolate shop must be in or near a city with a population of at least 100,000 people. In states with few or no cities of this size, chocolate shops in smaller cities were also considered. Shops listed for South Dakota and West Virginia had only a small number of reviews, but were the highest-rated shops for their states. Ratings are the number of points given by Yelp and Google users out of a possible 5.
It is National Chocolate Day, the perfect occasion on which to suggest a line-up of the 15 best chocolate bars in the whole world. This is a personal choice and it is en extremely subjective topic. But as a judge at the International Chocolate Awards and a Grand Jury judge at the Academy of Chocolate awards I have tasted a lot of chocolate - and these are my favourites, in reverse order of my opinion of their deliciousness.

Guittard's Grand Cacao Drinking Chocolate is a combination of chocolate and cocoa. It boasts intense flavor, the red-brown color of Dutch process cocoa, and a toasty aroma. Made at its full strength, the drink is super-rich and so thick it’s nearly syrupy and best consumed in small quantities. You can always use less of the mix if you like and still have a very flavorful hot chocolate.
I am a longtime fan of Legacy's handmade truffles. The chocolate is always the melt-in-your-mouth good and the ganache is divine. Bissinger’s toffee is pretty good. The pieces in their French Collection and Signature Classic assortments were good quality but did not have a lot of flavor for me. For example, I did not taste much blackberry in the Blackberry Caramel, and the Pecan Nut Ball was too sweet with not enough nut flavor. The price is high for Standard chocolates; you can get some nice Fine chocolate at the same price.

The Wild Strawberry was also strong, very nice for strawberry. Some pieces were classics like the House Dark and some were playful like the PB & Jelly or the Speculous S’more, and they were all well done, not a false note among them. My biggest flavor criticism might be that the Gianduja Hazelnut was a little sharp for hazelnut, whereas I prefer a broader, smoother flavor.

Also known as home to the Little Chocolatiers from former the hit TLC show, Hatch’s is at the top of our list when it comes to the best chocolates in Salt Lake City. The quality of chocolate that you consume here whether it be with a caramel apple, inside some of their homemade ice cream, or melted in a cup of hot cocoa is truly top notch. At 255 years old, this candy shop on Rue du Faubourg-Montmatre is the oldest in Paris, and luck for everyone who visits, it’s precious façade is historically landmarked and it’s interior lovingly preserved. On the shelves at À La Mère de Famille sit sweets and treats of all kinds, including bars of 100 percent pure origin Venezuelan cocoa. Kit Kat is a wafer biscuit bar which is covered by chocolate. It was created in England and is currently produced by Nestle, and in the U.S., H.B. Reese Candy Company. All-Around Favorite: Chocolopolis: The defining difference between these chocolates and others we tasted was the utterly complex and rich ganache inside each different truffle. Chocolopolis has one of the largest collections of craft chocolate bars in the world—many of which they incorporate into their truffles. The Champions Box (my favorite) features all of their award-winning truffles. Lacquered and glossy, each truffle delivers serious taste, (think lemon-lavender white chocolate or the Madagascar dark chocolate). The top taste was the Dominican Republic House Blend truffle, made from their proprietary blend of select Dominican Republic couvertures (cacao). Chocolopolis founder Lauren Adler notes, “I’d compare our style of confections to the French tradition, where it’s really about the quality and the flavor of the chocolate.” Her caramel cups dusted with a cluster of sea salt are worth a bite too.
High-quality chocolate, made from the best cacao beans, is the first step. Next is the filling. When a confectioner makes the conscious decision to make high-quality chocolates, they forgo preservatives and artificial flavors and use natural fruit, nuts, butters, spices and herbs. The end result is something that isn’t as shelf stable as Russell Stover or other drugstore candies. Preservatives in those drugstore offerings affect the flavor of the chocolates. When you pit the long-life brands to more perishable high-end chocolates in a blind taste test, the differences are glaringly clear.
Ethel M's return policy left us feeling confused. On the one hand, they offer a 100% unconditional guarantee. But, on the Returns and Exchanges page, it mentions that "in some minor cases", returning merchandise may result in a 25% restocking or administrative fee. And, in that same section, it says that there are no returns accepted for unwanted products.
In researching and testing for this guide, I was surprised to find that expensive doesn’t always mean high quality. Other fine confections include French macarons, toffees made with Texas pecans, and rich cakes and pastries.
American consumers are expected to spend an astonishing $1.8 billion-plus on candy for the holiday this year, and about 75% of that will be on chocolate. Mass-market confectioners like Russell Stover, in business since 1923, will account for most of the sales. (The company, which also owns the Whitman’s brand, is the largest boxed-candy manufacturer in America.) Most smaller chocolate shops prepare special Valentine’s Day assortments and/or other chocolate-related gifts, though, and these tend to offer greater variety and utilize better-quality chocolate.

Luxuriously wrapped in gold foil and handmade paper, each of their bars is signed by the chocolatier and printed with its unique origin story.
#3: Great Value (Wal-Mart Generic Brand) Fudge Brownie Mix — the underdog and least expensive brownie mix killed it in the brownie mix challenge, much to the surprise of the judges.  One judge even gave it a perfect score and deemed it the favorite.  It consistently received a few solid 8’s, a few 9’s, and one 10.  It also received a 2 and several 4’s so it wasn’t a favorite across the board.  Most reviewers like the soft, chewy texture with flaky top. They enjoyed the fudgy flavor. Some thought it was slightly artificial tasting and wouldn’t eat it again. It scored well enough to nab the #3 spot. What a shocker!

Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.

Connecticut is apparently so well known for its chocolate shops that it has a bona fide tour route for sweet confections called the Connecticut Chocolate Trail. So how does Bridgewater Chocolate in West Hartford stand apart from the crowd? Its stunning packaging, for one. But the chocolate tortels, truffles and dark chocolate-covered cherries on a milk chocolate heart are luxurious and rich.
If you get a huge box of chocolates and can’t finish them in two weeks, you can store them in the refrigerator for up to 1 month. After that, the flavors of the creams and ganaches can turn stale. When storing chocolates in the refrigerator, take the same steps you would when refrigerating chocolate bars. Be sure to wrap the box very well in plastic wrap, and seal in a zip-top plastic bag. Prior to eating, let the chocolates come to room temperature before unwrapping to avoid any condensation.
