Exactly when and where the first chocolate shops opened in America is uncertain, but early contenders for the honor include The Original Velatis, which set up shop selling caramels (some of them involving chocolate) in 1866 in Silver Spring, Maryland, and Govatos, which went into business in Wilmington, Delaware, in 1894 (both are still going strong; see slideshow).
Created by Austrian chocolatier Joseph Zotter in 1987, Zotter Chocolates offers 365 flavors, produced each day of the year! While we taste-tested an assortment of flavors ranging from the creamy, caramel-filled Coffee Toffee to the not-for-the-faint-of-heart 100% cacao Peru bar, the Goji Berries in Sesame Nougat emerged as the unanimous favorite. This milk chocolate bar is studded with dried goji berries and filled with layers of green tea ganache, homemade nougat and soy and sesame filling. The corn-shaped milk chocolate with a hazelnut praline filling is the perfect nod to Iowa and is just as tasty as it looks.

This South American country may not be the first to come to mind when you think about the world's best chocolate, but it should be. Research suggests that cocoa originated in Ecuador, where it was cultivated and eaten over 5,000 years ago. The most flavorful chocolate produced today comes from aromatic "arriba cacao," from which only 5 percent of the world's chocolate is made. Sixty-three percent of that cacao is grown in Ecuador. One of the country's top three brands, Pacari, continues to collect international awards. Kallari and Republica del Cacao chocolates also have bold Ecuadorian flavors.

Vosges ($40 for 16 pieces) is famous for round truffles with exotic, unexpected combinations like wasabi with black sesame and even Taleggio cheese with walnuts. Their bacon bar is beloved by many people we talked to, but their assorted chocolates weren’t as well received. Funniest comment: “Cumin?? Pastry chef Christopher Elbow worked at the American Restaurant in Kansas City, Missouri, until the demand for his chocolate petits fours convinced him to launch his own candy business in 2003. His beautiful hand-painted chocolates come in creative flavors like bananas Foster and caramel apple. You can’t really make a bad choice at Boise’s The Chocolat Bar. Since 2004, this shop has been using local and organic products to allow the lusciousness of chocolate shine through. The top highlight at this shop is the Nipples of Venus truffle, which features dark chocolate ganache topped with white chocolate and Madagascar vanilla with a tiny dot of white chocolate on top. The barks are also worth traveling to Idaho for, with unique combinations like red chili pistachio and lemon lavender almond.
After surveying the options, devil’s food seemed like the best choice for side-by-side testing. Since the key characteristic of a devil’s food cake is its richness, we figured we’d be able to judge more fairly by basing our test on the big brands’ most indulgent offerings. Next, the pros in our Test Kitchen baked each cake according to the directions on its package. To rid our bakers and testers of any preconceived biases, we prepared and compared each brand without its flashy packaging or marketing claims.
Owner Patricia Tsai is a self-taught chocolatier whose background in the business world taught her how to avoid the pitfalls of running a sustainable food business. Since 2012, Tsai has been sourcing cacao from a small farm in Tabasco, Mexico. At Chocovivo, she roasts and grinds those beans into chocolate using a grinder made in Mexico; she also has an ancient Aztec stone grinder, which is fascinating to watch in action. The shop sells a variety of chocolate products, including hot chocolate mix and chocolate sauce, but Tsai’s single-origin and blended bars (flavored with locally sourced coffee, spices, and essences) have attracted a loyal following. It is National Chocolate Day, the perfect occasion on which to suggest a line-up of the 15 best chocolate bars in the whole world. This is a personal choice and it is en extremely subjective topic. But as a judge at the International Chocolate Awards and a Grand Jury judge at the Academy of Chocolate awards I have tasted a lot of chocolate - and these are my favourites, in reverse order of my opinion of their deliciousness.
