The Quatre Epices was well balanced blend of four spices. Wild Cherry had a nice piquant cherry flavor the first time I tried it but was milder on a later occasion. The Praline Noisette was good with a sharp hazelnut flavor, and the Mocha Cream was good, but some of the other gianduja pieces were mild or weak. The Honey had mild flavors with not much honey shining through. The cinnamon of the Cinnamon Toast was present but stood alone, not partnering well with the chocolate.

Dilettante claims confectionary descendance from Julius Rudolph Franzen, pastry chef to Franz Josef, Emperor of Austria and King of Hungary. I have only their truffles to judge them by. Unfortunately, I prefer other pieces with a greater variety of components and expression. Truffles are too often an overdose of chocolate and cream. Dilettante may move up on my list when I have more experience with their products, such as their gift box assortment.
Unlike many of the boxed chocolates we've tried, the Recchiuti offer a full sensory experience, which is part of the reason to give boxed chocolates in the first place. The flavors really set this selection apart from the competition. Classic concoctions, such as Burnt Caramel and Piedmont Hazelnut, offer just the right balance of sweet and bitter, while more adventurous flavors, such as Tarragon Grapefruit and Star Anise & Pink Peppercorn, are never overpowering (a problem we've found with most other flavored chocolates). And the black-on-black packaging—sexy, but not over the top or too obvious—looks and feels much more elegant than offerings from every other brand we looked at. Inside, the jewel box holds shapes and textures far more intriguing than the monotonous square candies in most other assortments. Overall, these bonbons are far more well-rounded than others we've tried.

Chocolat Céleste is a mixed bag; I have enjoyed some pieces but not all (relative to experienced expected for the price), and prices have escalated. I suggest the Grand Cru collection. Although pricey, $139/lb. in 2012, it is a rare opportunity to taste criollo (a type of cacao, from which chocolate is made). I enjoyed the criollo pieces in the collection. They should be approached as a tasting experience: Cleanse your palate with water, smell, taste, let the chocolate dissolve, and take the time to experience it. The collection also has non-criollo pieces that I found a bit flat and dry compared to the criollo.

The Mom’s Apple Pie Truffle had a good apple flavor, a background of pie crust flavor, and was well accompanied by white chocolate. I did find it too playful with non-chocolate flavors to take it seriously as a chocolate piece. The Chocolaterie also has simpler and more direct flavors, such as the Epicurean Truffle and the Hawaiian Pink Sea Salt Butter Caramel.
I just wanted to let you know how much I love your products and especially your customer service. I got married in August, and I wanted to give my groomsman and bridesmaids something unique. So initially I was looking for wine of the month. I choose your company based on the fact that it had international wine, not just from one region. If you are looking for a local chocolate shop this is THE place!! I am a frequent customer and have never been disappointed with my choice.  If you ask they will give you a print out of all their current truffle flavors so you know what they are made of (especially good if you don't want to be surprised with a white chocolate center like me ).  They also serve gelato, pies, and fantastic chocolate chip cookies. It's a great spot to take a date or just treat yourself to something special! I have tried out the other chocolate shops here in Indy and these guys really do have the BEST chocolate!

It was Fair-Trade, USDA certified, 81% dark chocolate and came in a box made from Spanish Elm engraved with the specific bar number, as only 574 were made. There was also a 116 page booklet included, so you could read it and remind yourself why you spent $260 on a chocolate bar. The only ingredients, by the way, were cocoa and cane sugar.
