French Broad: This chocolatier opened in Asheville in 2007 and does a nice job of giving the chocolate lover a big truffle for the buck. These were some of the largest truffles we tasted. Their Buddha Collection’s vegan truffle was a favorite (composed of bitter sweet chocolate and coconut cream), lending the truffle a nice exotic edge. The Lavender and honey from the signature collection box—a milk chocolate ganache around a dark chocolate ganache blended with local honey and lavender—was the a delicious riff on lavender. The mole negro—housemade mole in dark chocolate and rolled in sesame seeds—great texture and spice.
The milk chocolate orange truffle is also excellent, but I am not as fond of the others. I had to work to taste the hazelnut in the milk chocolate hazelnut, and the chocolate flavors did not seem strong to me in the milk chocolate, dark chocolate, or darkest dark chocolate. I wonder if the cream they are using is a little unusual. (The web site gives a hint: In addition to heavy cream, the truffles contain butter and butterfat.)
K’s 4-star review: Champagne Truffles are amazing. When you shop in the store, they have "mini" truffles which are even better. I absolutely recommend these as a highlight of a trek along 5th Ave (among other distractions). Other chocolates from the case weren't as impressive (or disappointing: the triple-layer gianduja was dry and crumbled apart in the bag). Oh, and don't expect that the chocolate will be packaged nicely with a self-selected assortment: you get a clear plastic baggy like you just bought bulk dime store candy. Otherwise, staff was courteous and helpful. So, yay! I'm a fan of one piece! Rather generous rating for one piece ... ah well.

Dilettante claims confectionary descendance from Julius Rudolph Franzen, pastry chef to Franz Josef, Emperor of Austria and King of Hungary. I have only their truffles to judge them by. Unfortunately, I prefer other pieces with a greater variety of components and expression. Truffles are too often an overdose of chocolate and cream. Dilettante may move up on my list when I have more experience with their products, such as their gift box assortment.

I absolutely LOVE chocolate! My sugar runs low, no, I'm not diabetic ... but I do eat very healthy and I eat this chocolate quite a lot; whenever I need some extra glucose like before & during an exam, before & during a hike. Exactly when and where the first chocolate shops opened in America is uncertain, but early contenders for the honor include The Original Velatis, which set up shop selling caramels (some of them involving chocolate) in 1866 in Silver Spring, Maryland, and Govatos, which went into business in Wilmington, Delaware, in 1894 (both are still going strong; see slideshow).

The 36-piece assortment I ordered from William Dean Chocolates contained a broad selection of chocolates and flavors, from the familiar peanut butter or even childhood favorite peanut butter and jelly, to fine lavender or port and plum. The Port and Plum was one of my favorites of the box. The flavors interplayed nicely and had some depth. The Mexican Mango was a very nice mango puree with a little bit of spiceness. The PB Krunch had a strong peanut flavor roasted just right. The WD 64%, a straight chocolate piece, was another of my favorites. 

By and large, the truffles are nice. In the Class 5, the chocolate led, and the raspberry was a good partner. The Black Diamond made good use of chocolate. The Rocky Top had a mild pleasant coffee flavor. The Powder Day was a good firm white chocolate. Mostly the strengths were medium, although the hazelnut was weak in the milk chocolate Mud Season.

They are offered a sneak peek into the Cluizel workshop, then feast on fanciful bonbons like caramel mushrooms, “cappuccinos” filled with coffee ganache and macarolats — macaroons with different flavored coatings and fillings.

If you think chocolate all tastes the same around the world, Kyya Chocolate in Springdale, Arkansas, will prove you wrong. This bean-to-bar chocolate shop makes a variety of single-origin dark chocolate treats, allowing customers to taste the subtle differences between offerings from Uganda, Ecuador, Madagascar, and beyond. There’s nothing artificial in this shop, just pure, beautiful flavors.

At 255 years old, this candy shop on Rue du Faubourg-Montmatre is the oldest in Paris, and luck for everyone who visits, it’s precious façade is historically landmarked and it’s interior lovingly preserved. On the shelves at À La Mère de Famille sit sweets and treats of all kinds, including bars of 100 percent pure origin Venezuelan cocoa. Surprisingly melty and vibrantly aromatic, the plain chocolate is smooth, while the inclusion bars are beautifully strewn by hand with whole hazelnuts, almonds, and tidy little chunks of candied ginger.
La Chatelaine Chocolat Co: Located in, of all places, Bozeman Montana, owners JP Wlady Grochowski and Shannon Hughes Grochowski are most inspired by nature. Says Shannon, “We walk through a small forest each day to work, and feel inspired each time, whether it’s the color of the leaves, deep green of the spruces or the scent of sage, or the local snow-capped Bridger Mountains. We also find a lot of inspiration in France, where we spend each summer with our children and Wlady's maman and cousins.” Top taste was the Absinthe in dark chocolate ganache and the dark and rich Arriba truffle —composed of 72% dark chocolate made from Forestero beans of Arriba origin. 

Stuart, Florida, located about 80 miles north of Fort Lauderdale, is already one charming small town to visit. Its highlight, though, is Castronovo Chocolate. This bean-to-bar small-batch chocolate shop has won several gold medals at the International Chocolate Awards for its lemon oil and lemon salt-infused white chocolate, Sierra Nevada 63 percent dark chocolate and Colombia mocha milk chocolate. The service here is attentive and as world-class as the bars themselves.
