The 97-year-old chocolatier known for it’s eye-popping displays of bon bons is a favorite of the Belgian royal family. But its high-class tablets, packaged in charming, pastel boxes, are worthy of a taste as well. Perhaps most worthy is Mary's 72 percent dark chocolate bar made with beans from the equatorial (and volcanic) African island of São Tomé. Even today, the chocolate trade looks a lot like it did in colonial days: Raw materials bought at generally low prices in the tropics are shipped to the developed world and turned into a luxury product. Today, three of the largest importers of cacao to America are fighting a lawsuit filed by a human rights group claiming that they buy beans harvested by child slaves, mostly in the nation of Ivory Coast. Several journalists have contended that the extent of slavery in the cacao industry has been overblown, but it’s hardly comforting to hear that the number of slaves who helped make your afternoon snack has been exaggerated. Without doubt, adults and children on some cacao farms, particularly in West Africa, perform demanding, exhausting work for awful pay.
French Broad Chocolate is a must-try shop located in Asheville, North Carolina. It has chocolates that have won numerous awards at the International Chocolate Awards and Good Food Awards. The confections, which range from single-source bars to vegan lemongrass and ginger truffles, are made with local ingredients and sustainable, wholesome cacao beans.
Bernachon is famous for quality, but it was disappointing to me. Bernachon’s chocolate, which they make from raw cacao beans, is very good, and their pieces that are mostly chocolate are very good. However, some of their other pieces flopped for me. One such was the Créole, which has marzipan with rum-flavored currants. I did not like its composition at all. The pralines with liqueur also did nothing for me. (Eat them whole. The liqueur will spill when you bite into them.)

Co-owners Corey and David Menkes spend more time sourcing their chocolate than molding it, ensuring the beans they use come from farms that practice sustainable agriculture and pay their workers fair wages. Krader appeared genuinely surprised after biting into Teuscher’s hefty, dark-chocolate truffle. "It’s very dense,” she said. “A powerhouse.” Krader didn’t take to the truffle— “not my favorite,” she said—but acknowledged that many people would. “I think this is for people who go big, who want the triple-decker burger—the highest pile of truffles on their pasta,” she said.

Late last year, I grew curious about an Italian chocolate brand called Amedei. I mean curious in the same sense that sharks are curious about surfers. Amedei, founded in 1990, is the joint project of a 42-year-old Italian named Alessio Tessieri and his younger sister, Cecilia; he buys the cacao and she turns it into dark, glossy bars. In November, a competition in London awarded a gold prize to one of Cecilia’s handiworks, a single-plantation chocolate called Chuao. Two other Amedei products tied for silver.
