Africans consume less than 4% of chocolate sold globally, but Ivory Coast is looking to change that with their handmade, artisanal chocolates. Known as the leader in the production and exporting of cocoa beans, the country has begun producing their own chocolate as the region continues to stabilize and experience economic growth. One company, Instant Chocolat, was launched in 2015 and has experienced tremendous growth in its first few years. Their chocolate, ranging from pralines to bars, is popular both locally and internationally, particularly with corporate clients like Air France and Citibank.

They also can make their own candy bar, enjoy a chocolate tasting session, tour the town of Hershey via trolley, solve a gooey whodunit in the 4D Chocolate Mystery attraction and shop at one of the largest candy stores around. Blue’s Chocolates (formerly Chocolatier Blue) features fine chocolates of diverse flavors. One of my favorites was the Sweet Potato Casserole, for its novel flavor. The sweet potato flavor was well presented and balanced with the chocolate. The Hazelnut was also excellent. Hazelnut is a traditional flavor in chocolates, but the natural hazelnut flavor shone in this piece without being bitter. Other favorites included 75% Dark, Lemon, Pistachio, Passion Fruit Caramel, Candy Cane, and Pear. The PB Crunch was crunchy and had a nice peanut flavor with a pleasant tang.
Founder Colin Gasko is running a small but ambitious operation. Each single-origin chocolate bar at Rogue is sourced from independent farms in Peru, Dominican Republic, Ecuador, Trinidad and Tobago, and Honduras. Unlike other fair-trade chocolate purveyors, Rogue pays more than twice the minimum for some of its cacao order to ensure the lasting success of those farms. I have to admit that I have always loved Ghirardelli and Betty Crocker Triple Chunk so I wasn’t too surprised. The beauty of it is that I had 20 willing judges who didn’t confer with each other. There were definitely clear-cut winners.

Schedule a factory tour at select producers such as Le Chocolatier Manon, Cyril Chocolat or Chocolaterie Defoidmont, or take in a chocolate- and praline-making demonstration at one of the shops.
Connecticut is apparently so well known for its chocolate shops that it has a bona fide tour route for sweet confections called the Connecticut Chocolate Trail. So how does Bridgewater Chocolate in West Hartford stand apart from the crowd? Its stunning packaging, for one. But the chocolate tortels, truffles and dark chocolate-covered cherries on a milk chocolate heart are luxurious and rich.
