American consumers are expected to spend an astonishing $1.8 billion-plus on candy for the holiday this year, and about 75% of that will be on chocolate. Mass-market confectioners like Russell Stover, in business since 1923, will account for most of the sales. (The company, which also owns the Whitman’s brand, is the largest boxed-candy manufacturer in America.) Most smaller chocolate shops prepare special Valentine’s Day assortments and/or other chocolate-related gifts, though, and these tend to offer greater variety and utilize better-quality chocolate.

I was not satisfied at Pierre Marcolini. The Massepain Pistache was unremarkable. The dark chocolate in the Noisettine Fondant was so strong it almost overpowered the hazelnut. The ingredients and components in the piece were good, but the composition was not great. In the Trianon Fondant, the dark chocolate exterior did overpower the filling, and the wafers were soggy, not crisp.

In the lofty strata where Tessieri operates, “making chocolate” means that you make the chocolate. You import cacao beans from plantations. You roast them and husk them and grind the cacao nibs into a fine paste. You add sugar and grind some more. Finally you swirl the mixture in open tanks called conches, which smooths the texture while helping to blow off acids and other nasty flavors. It’s complicated, demanding work, and few small companies even attempt it.
Ginger Elizabeth Hahn has produced molded and flavored chocolates since 2007. The Quatre Epices was well balanced blend of four spices. Wild Cherry had a nice piquant cherry flavor the first time I tried it but was milder on a later occasion. The Praline Noisette was good with a sharp hazelnut flavor, and the Mocha Cream was good, but some of the other gianduja pieces were mild or weak. The Honey had mild flavors with not much honey shining through. The cinnamon of the Cinnamon Toast was present but stood alone, not partnering well with the chocolate.

Elk Candy Company makes fine chocolate and marzipan. I do not think marzipan is very interesting when it is plain or merely coated in chocolate, so it is nice to find a chocolatier that has developed their marzipan further, as Elk Candy Company has done with their flavored marzipan rolls. I like marzipan this way. Elk sells it in slices. Flavors include pistachio, truffle, hazelnut, and orange.

La Chatelaine Chocolat Co: Located in, of all places, Bozeman Montana, owners JP Wlady Grochowski and Shannon Hughes Grochowski are most inspired by nature. Says Shannon, “We walk through a small forest each day to work, and feel inspired each time, whether it’s the color of the leaves, deep green of the spruces or the scent of sage, or the local snow-capped Bridger Mountains. We also find a lot of inspiration in France, where we spend each summer with our children and Wlady's maman and cousins.” Top taste was the Absinthe in dark chocolate ganache and the dark and rich Arriba truffle —composed of 72% dark chocolate made from Forestero beans of Arriba origin.

Review: We have to start out by warning you, this chocolate is hella sweet. Whitman's is another Valentine's Day staple, which again, offers lots of nougat and caramel-y choices so we can see why it's popular. However, when you're spending so little on so much chocolate it's kind of a given that you're gonna get some sugary product. Also it's worth noting that our box didn't come with a sheet outlining the contents so in the words of one taster "you literally never know what you're gonna get."

The Pecan Penuche also plays on local products, Georgia pecans. Its flavor makes nice use of pecans but is a little sweeter than I would like. Two pieces make excellent use of spices. The Aztec has a deep chocolate flavor, strong enough to stand up to the blend of six chilies and spices that kick in after a few seconds. In the Cayenne Passion Fruit, the cayenne and passion fruit play nicely with and against each other and with the chocolate. I often find that “hot” spices detract from chocolate, but Hard has blended these well.


These Wockenfuss artisan truffles are not just absolutely delicious, they’re also gorgeously crafted. There are 12 truffles in the box, each with unique fillings, made with dark chocolate and milk chocolate. The onyl complaint you’ll have with these gourmet chocolates is that they are so beautifully decorated you’ll find it difficult to actually eat them.

I brought in 20 judges.  This way I could ensure that we had a variety of taste testers with different palettes.  I had a few rules and one of them was they couldn’t communicate with each other while tasting the brownies. I studied a phenomenon called “group think” in college and know people can be swayed by other people’s opinions. So it had to be less talking and more eating!  They were happy to oblige because I was offering them BROWNIES.
It is said that Ferrero Rocher is the bestselling brand of chocolate on Earth, with millions of people all over the world buying this chocolate every year. The company has been a leader in the chocolate industry for over 200 years. Ferrero Rocher chocolates are wrapped in golden foil, making them a popular holiday gift. There may be bars with frillier packaging and more envelope-pushing additions, but when it comes to pure, classic chocolate, Bonnat can lay claim to the crown. This family company began in 1884 and was beloved by Jackie Kennedy Onassis who gave bars to White House guests during the holidays. The Juliana bars are made from specially-grown Brazilian cacao beans, fermented, then dried in the sun slowly, over seven days. Back in France, the beans are painstakingly refined and tempered over five days. It’s an intricate process but, as Stephane Bonnat says, “In the Alps, we have time.”
B.T. McElrath Chocolatier was an artisan chocolatier in Minnesota but has become a part of Annie B’s. (I have not done a new review since the change.) McElrath’s truffle assortment was excellent, with balanced and moderately strong flavors. In most pieces, the flavors remained distinct, working together without losing their own identities. B.T.’s Signature Dark Chocolate Truffle had a full chocolate flavor without any bitterness and without being very sweet. Other flavors include caramel; passion fruit; lavender and pepper; chile and lime, lime, coconut, and ginger; cinnamon and star anise. All were well done. I would ask for a different and stronger caramel flavor, but that is a quibble of personal preference.
Chocolate is supposed to be fun, and that’s something Bon Bon Bon takes to heart. This Detroit shop makes open-top chocolates inspired by local cultures, using local ingredients, and packaged in recyclable boxes. Each stunning bon is handcrafted; they come in unique flavors like Bour-Bon-Bon-Bon (whiskey caramel, bourbon dark chocolate ganache and glacee orange) and coffee and donuts. In a nod to Michigan’s rich music history, Bon Bon Bon also sells chocolate cassettes and records.

At Sucré in New Orleans, everything is simultaneously decadent and delicate. The shop’s signature chocolates feature playful flavors like peanut butter and jelly and German chocolate cake. The macarons, which include chocolate, almond and lavender flavors, are famous throughout Louisiana. Of course, the shop’s standout offerings are sold during Carnival,which include a selection of gold, green, and purple chocolates in iconic flavors (creme brulee, Southern pecan praline, and bananas Foster).

Tessa Halstead grew up in the chocolate business: Her father ran a chocolate shop in Dallas a generation ago. Today in Austin, she’s built Chocolaterie Tessa into a community hub. Halstead and her crew produce chocolates on a larger scale than most, and offer single-origin bonbons in addition to assorted flavors that change seasonally. The always-in-season salted caramel is a favorite, but customers also come for the strawberry basil in the summertime and autumn’s cinnamon spice. Valrhona, the Rolls Royce of chocolate, has been crafting couvertures (chocolates with high cocoa content) since 1922. Hailing from France's Rhône Valley, Valrhona's wine country influence is unmistakable. The label on each Valrhona cru (single origin bar) bears the name of that bean's terroir, the most exclusive of these being the Vintage Single Origin bars, sold in limited quantities according to crop yield. Valrhona also suggests wine pairings designed to bring out the "notes" in each chocolate's complex flavor profile. From chocolate pearls to tasting squares, the brand's nec-plus-ultra chocolate bar selection is available at specialty grocery stores.
Richart’s Intense Valentine Gourmet Chocolates are $77 for a box of 49 chocolates. The real frustration here is that it's 49, not 50, so those of us with a strong sense of symmetry will have to eat them quickly just to cope. However, they are legitimate French Chocolates, each one having one of seven fancy flavors / aromas - floral, spicy, citrus, balsm, roasted, fruity, or herbal. The box also comes with a dark chocolate plaque for your valentine, so maybe that's piece 50.
The love for chocolate does not discriminate. No matter how old you are, where you are from, how much money you have, or what your social status is, chances are there is some kind of chocolate that you can't say no to. There is a reason why chocolate is loved by people around the world -- it actually causes a chemical reaction in the brain that makes you happy.
You will actually have to visit Amsterdam to sample what may be the best chocolates in the Netherlands. The proprietors of Puccini Bomboni, a delightful cafe and restaurant, hand-make each chocolate on the premises and do not deliver. Exotic combinations of chocolate and spices, concocted from the freshest ingredients, are a specialty. Although the variety isn’t enormous, the quality is truly amazing.
This was, hands-down, Krader’s favorite. “Oh, my God,” she said. “I feel like I just fell into a pool of chocolate.” More to the point, the Neuhaus truffles did everything Krader said a good chocolate truffle should: The tender coating gave way to a luxurious whipped mousse filling, with layers of flavor. (“It comes in waves,” Krader said.) "And how many mediocre ones."

To be considered, a chocolate shop must be in or near a city with a population of at least 100,000 people. In states with few or no cities of this size, chocolate shops in smaller cities were also considered. Ratings are the number of points given by Yelp and Google users out of a possible 5.

If you still want a classic chocolate chip cookie, the Salty Sweet version uses thin slabs of chocolate that layer throughout giving each bite the perfect dough to chocolate ratio. But don’t stop there. We loved the Oatmeal Raisin cookies (“Best I’ve ever had” said one taster), the Dark Chocolate cookies (“Deeply chocolate without being too sweet’) and the Spicy Cinnamon cookies which absolutely live up to the name. Gluten-Free and Vegan cookie options are available too, and they are just as delicious as the classic versions.
Marti Chocolatt: Chocolatier Tonet Tibay was inspired to combine her Philippine heritage with the finesse and sophistication of the French way of making chocolates and confectionery. Her surprising and unexpectedly delightful combinations are at the heart of her chocolates—consider the Kalamansi (zesty Phillipine lime and dark chocolate) is a piquant surprise with a decadent core. We also loved the silky Buko Pandan (a major award-winner) with young coconut bits with pandan leaf infusion in milk chocolate. Marti Chocolatt was awarded Best Chocolatier in America in 2012 and 2013 by International Chocolate Salon.
The pieces in a one-pound box were quite varied in appearance, with few repetitions. Most pieces have full flavors of moderate strength. The designs were elegant but not as ornate as Burdick’s. The cinnamon-ginger piece was very good, and the chocolate-coconut mixture is notable. Some pieces are somewhat ordinary, not entirely worthy of a fine chocolatier.
In addition, boxed chocolates come in several pieces to make sure you have plenty of chocolates at your disposal. Most manufacturers also deliver fast, so you can start enjoying your chocolates only a few days after making the order. Plus boxed chocolates tend to include different varieties of chocolates for optimum satisfaction. To help you identify the best package, we unveil the following guidelines.

One of the oldest candy businesses in the country, Schimpff’s Confectionary in Jeffersonville, Indiana, is half chocolate shop, half museum, which makes it a charming tourist destination on its own. Beyond the collection of candy-making history here, the chocolates are old-fashioned and scrumptious. Don’t leave without picking up some caramel-covered marshmallows, which are called “mojeskas” in this part of the country.
Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.
For their new chocolate line, che Thomas Keller and olive oil icon Armando Manni are ratcheting up the intrinsic health benefits of cocoa beans and EVOO. The chocolate is made according to the same "live" principles Manni designed for his cultish oils--a method developed with the University of Florence to minimize heat exposure and retain antioxidants throughout processing. The two tapped former pastry chef Chi Bui (Daniel, Le Bernardin) to perfect the blockbuster bars, which double down on the antioxidant power with a finishing hit of Manni oil. Among all of the tested chocolates, the Recchiuti come in the most intriguing shapes and designs. No two chocolates are the same. Some have intricate patterns, while others look like little sculptures. This contrasted sharply with the John and Kira’s box, filled with 15 squares of the same shape, size, and texture (a little monotonous for a romantic gift).


I discovered this wonderful chocolate brand more than a year ago in one of my Amazon Sweet Surprise boxes and immediately started searching for more. Hands down, this is the best chocolate I’ve ever had, European or American. The flavors in this selection are among my all-time favorites made by Seattle Chocolate. At 255 years old, this candy shop on Rue du Faubourg-Montmatre is the oldest in Paris, and luck for everyone who visits, it’s precious façade is historically landmarked and it’s interior lovingly preserved. On the shelves at À La Mère de Famille sit sweets and treats of all kinds, including bars of 100 percent pure origin Venezuelan cocoa. Surprisingly melty and vibrantly aromatic, the plain chocolate is smooth, while the inclusion bars are beautifully strewn by hand with whole hazelnuts, almonds, and tidy little chunks of candied ginger.
Let’s be honest, all chocolate is good, but the true artisans make chocolate that transcends good---taking us into the realm of speechless. The chocolates featured in this story were tasted, debated over, and tasted again. If they delivered on impact, richness and the element of surprise, they made the cut. One final note, almost every chocolatier made a spicy chocolate offering—and only one, Chuao, pulled it off in a delicate, surprising (not punishing) way. Heat in a chocolate truffle can border on cruel sometimes. It was also nice to see that bacon and chocolate have parted ways--as we did not receive any pork-inspired truffles this year. Otherwise, it was a very nice showing. Happy indulging.

Chubby Chipmunk Hand-Dipped Chocolates is a quirky little chocolate shop that has something for everybody. This Deadwood, South Dakota, shop is known for its handmade truffles, which come in dessert- and drink-inspired flavors such as root beer float, New York cheesecake and Bailey’s Irish Cream. You know you’re getting a real gold nugget too, because each chocolate has to pass personal inspection before being sold.

Juan enjoys Åkesson's Single Plantation Chocolate, Madagascar, Bejofo Estate, 75%, made with Criollo cocoa (the world's most precious and celebrated variety) grown in northwest Madagascar. "It distinguishes itself with well-defined aromas and flavors. But I especially enjoy the balance of its smooth and creamy texture – that makes it unforgettable."

This cozy chocolate lounge and boutique schedules yummy events like a Chocolate & Bubbles Happy Hour and an upcoming “50 Shades of Chocolate” five-course dinner. If Chicago is famous for its scenic and culinary treats then it would be totally unfair to overlook Vosges Haut-Chocolat. The chocolatier stands at the no. 2 position with the virtue of its unparalleled chocolate flavours, variety and essence. If you are in Chicago, you can find the best French confectionery treat here. Apart from the rich quality regular chocolate recipes, you can discover a range of experimental recipes as well using various flowers and spices.
The Tessieris work about 40 miles west of Florence, close to the Arno, and not far from Pisa; the Italian wine and food magazine Gambero Rosso has called this region the Chocolate Valley because of the concentration of chocolatiers who work there—among them Paul de Bondt, Roberto Catinari and Luca Mannori. The Chocolate Valley is not nearly as famous as other parts of Tuscany. For me, this only increased its allure. While other tourists inched through the vineyards of Chianti staring at the exhaust pipe of the rental car just ahead, I would be lazily bobbing along in a rowboat, dipping pieces of bread over the side into the world’s biggest fondue.
You can't make a list of popular chocolate brands without including Mars. This incredibly famous worldwide brand is responsible for Snickers, Galaxy, Dove, M&M'S, Milky Way, Twix, 3 Musketeers, and Mars bars. Like Nestlé, Mars focuses on candy bars and confectioneries instead of plain chocolate products. But it definitely offers a combination of chocolate, nougat, caramel, or other ingredients that you won't be able to say no to.
French Broad Chocolate is a must-try shop located in Asheville, North Carolina. It has chocolates that have won numerous awards at the International Chocolate Awards and Good Food Awards. The confections, which range from single-source bars to vegan lemongrass and ginger truffles, are made with local ingredients and sustainable, wholesome cacao beans.
