Nobody knows for sure how many chocolate shops there are in the U.S. today, at least in part because many of them do double duty as patisseries, ice cream parlors, or gift shops. Suffice to say there is probably not a city or a town of any size in the country that doesn’t boast at least one purveyor of chocolates. There are at least 25 in New York City, for instance, and more than 30 in Los Angeles.
Visiting the Republica del Cacao should be on every chocoholic's bucket list! The youngest company among our selections, the Republica del Cacao is an Ecuadorian chocolate firm founded in 2004. The brand arose out of an effort to preserve the indigenous Arriba cacao plants grown predominantly on family farms in the Manabí, Los Ríos and El Oro regions of Ecuador. Republica del Cacao's claim to fame is their single-origin dark chocolate bar, made with nothing but cacao, sugar and cocoa butter, allowing the complex flavors of each region's chocolate to speak for themselves. The company has also branched out into beverages like hot cocoa, coffee and chocolate- and coffee-flavored liqueurs.
After many years in the high-end restaurant business (Per Se, Le Cirque, Union Square, Postrio) former New Yorker Paul Seyler was ready for a new adventure. In 2007, he and his family headed north to the little town of North Ferrisburgh, Vermont where they got seriously busy and launched Cookie Love. Their recipes reflect their commitment to local ingredients and clean fresh food.
Katalin Csiszar and her husband, Zsolt Szabad, began the award-winning Rozsavolgyi in their home in Budapest in 2004. They source beans from Venezuela growers, and roast them very lightly to preserve their true flavors. Only organic cane sugar and a small amount of of cocoa butter goes in before they are formed into intricate patterns meant to mimic fireplace tiles, and wrapped by hand in paper that looks like your chic grandma’s vintage silk scarf. Purists rave about their Criollo and Trincheras bars, but those who like surprises go for inclusions like olives and bread, and flavors of Japanese matcha, and Indian masala spices.
Krader appeared genuinely surprised after biting into Teuscher’s hefty, dark-chocolate truffle. "It’s very dense,” she said. “A powerhouse.” Krader didn’t take to the truffle— “not my favorite,” she said—but acknowledged that many people would. “I think this is for people who go big, who want the triple-decker burger—the highest pile of truffles on their pasta,” she said.

John Scharffenberger, already a big name in the wine world, decided in 1997 to try his hand at artisanal chocolate-making. Using a vintage German melangeur — a machine that slowly grinds cacao beans into a chocolate liquor — and personally sampling beans from more than 150 international cacao farms, he and partner Robert Steinberg sought to bring traditional European chocolate craftsmanship to the States, proudly emphasizing cacao content on the bars' labels — a first for American chocolatiers. The San Francisco team also became the first American bean-to-bar manufacturer in 50 years. Now a member of the Hershey family, Scharffen Berger produces a modest but exquisite selection of bars and tasting squares sold at stores like Whole Foods including a crunchy Milk Chocolate Bar with Sea Salted Almonds.
When I spoke with Eric Case of Valrhona Chocolate, he made a point to differentiate filled chocolates from chocolate bars: “Chocolate and chocolates. Chocolate is something made from a bean, to give to someone that then creates a bonbon, or a confection, or a candy. ‘Chocolates’ are all kinds of things that happen to use chocolate in the ingredients, but they also have marzipan, toffee, nuts, or fruit.” Because of these additions, the shelf life of a quality box of chocolates is (generally) much shorter than that of a bar.
On the other hand, the pieces from Whole Foods Market were not as impressive. The Elizabeth, Antoinette, and Madeleine were good. The Jeanett had a strong mint flavor that overpowered its white chocolate. The Sophie is marzipan with lemon, which is interesting. I wanted more marzipan, but it was good. Not everything worked. The Valentina is a chewy caramel with lavender. Lavender is aromatic, but that was distracting, and it did not contribute a pleasing flavor. The Patricia certainly had chili but was weak on tangerine. These were fine for grocery store chocolates, but lackluster for the price, $51/lb. The box has drawings illustrating the pieces, but I was unable to match several pieces to the drawings.

Norman Love Confections: Chef Norman Love’s chocolates always have a tropical high toned fruitiness to them—even his dark selections. We loved his holiday candy cane selection (which comes in a fetching candy cane-shaped box.) The sleek, lustrous very colorful chocolates won big for shock and awe—they also tasted great too. This was one of the most festive and fun collections that we opened.

And thankfully I no longer have search, someone else has done that for me and I can truthfully say that I trust their judgment on what is a fine chocolate way better than my previous guess work.
Many pieces featured nut pralinés or pastes, and there was significant variety, including hazelnut, almond, pistachio, walnut, and various combinations, some with fruit flavors as well. The 3 was the fruitiest, and the most different from the others in the collection, featuring caramel, passion fruit, coconut, and mango in dark chocolate. The passion fruit dominated, and the chocolate flavor seemed a bit lost.

High-quality chocolate, made from the best cacao beans, is the first step. Next is the filling. When a confectioner makes the conscious decision to make high-quality chocolates, they forgo preservatives and artificial flavors and use natural fruit, nuts, butters, spices and herbs. The end result is something that isn’t as shelf stable as Russell Stover or other drugstore candies. Preservatives in those drugstore offerings affect the flavor of the chocolates. When you pit the long-life brands to more perishable high-end chocolates in a blind taste test, the differences are glaringly clear.
Unlike many of the boxed chocolates we've tried, the Recchiuti offer a full sensory experience, which is part of the reason to give boxed chocolates in the first place. The flavors really set this selection apart from the competition. Classic concoctions, such as Burnt Caramel and Piedmont Hazelnut, offer just the right balance of sweet and bitter, while more adventurous flavors, such as Tarragon Grapefruit and Star Anise & Pink Peppercorn, are never overpowering (a problem we've found with most other flavored chocolates). And the black-on-black packaging—sexy, but not over the top or too obvious—looks and feels much more elegant than offerings from every other brand we looked at. Inside, the jewel box holds shapes and textures far more intriguing than the monotonous square candies in most other assortments. Overall, these bonbons are far more well-rounded than others we've tried.
