Subject = FABULOUS! I just received my July shipment, the Royal Palm box of Dark Signature truffles, and have to tell you that they are now my favorite chocolatier! The flavors are in perfect balance, the chocolates are not too sweet (so many dark chocolates have been ruined by over-sweetening). The quality is superb! Thank you for introducing them to me

The top taste was the Dominican Republic House Blend truffle, made from their proprietary blend of select Dominican Republic couvertures (cacao). Chocolopolis founder Lauren Adler notes, “I’d compare our style of confections to the French tradition, where it’s really about the quality and the flavor of the chocolate.” Her caramel cups dusted with a cluster of sea salt are worth a bite too.
Christopher Elbow ($35 for 16 pieces) was our top pick for 2014. In a blind tasting, a panel voted it their favorite. I absolutely LOVE chocolate! My sugar runs low, no, I'm not diabetic ... but I do eat very healthy and I eat this chocolate quite a lot; whenever I need some extra glucose like before & during an exam, before & during a hike. I only eat good quality chocolate and there are a lot of healthy delicious chocolates but I have been eating this one for the last couple years. I used to only eat very dark chocolate, but 2 years ago my mom gave me some milk chocolate and I haven't been able to go back.

Something was also lost in presentation. The uniformity of the pieces made for a bland appearance. An open box showed an array of blocks. The nearly identical undecorated chocolates lacked the attractiveness of of other chocolatiers’ colorful pieces with diverse shapes and decorations. And, while creative effort has clearly gone into zChocolat’s collection, I found the pieces pleasant but not compelling.

I love Milkboy chocolate. It is honestly the best chocolate bar I've ever tasted. I tried it for the first time after I purchased one bar at a specialty food store when I was on vacation. I had to have more, so I searched for it everywhere in my town, but with no luck. I'm so happy I found this online, and I hope they start distributing in more locations soon.

“Wow,” said Krader, biting into one of the company’s flat, square truffles. “This is definitely the chocolate with the most distinct point of view.” By that, she meant that it had perhaps the most unusual flavor of the bunch, with distinctly fruity notes. “This is from someone who’s redefining what truffles can be,” she said. “The flavorings don't punch you in the face, and it tastes like it was just made.” In other words: advanced chocolatiering. “There’s a sophistication about them,” she said. “Truffle neophytes might want something more general.”
