One piece had a very good blend of hazelnut and almond with a fine crunchy texture. The marzipan was very good; Jacky Pédro brought out the flavor well. He must have sense of humor and self-confidence to label one of his products Le Crottin du Pin. To avoid spoiling your appetite, I will not translate the name, but the piece is a cocoa meringue with a chocolate cream filling. It was nice and very unusual and just a bit bitter. I also strayed from chocolate and tried the Patés de Fruits, which were very good.

The 36-piece assortment I ordered from William Dean Chocolates contained a broad selection of chocolates and flavors, from the familiar peanut butter or even childhood favorite peanut butter and jelly, to fine lavender or port and plum. The Port and Plum was one of my favorites of the box. The flavors interplayed nicely and had some depth. The Mexican Mango was a very nice mango puree with a little bit of spiceness. The PB Krunch had a strong peanut flavor roasted just right. The WD 64%, a straight chocolate piece, was another of my favorites.

A long, long time ago, the Aztecs used to sip something they called Xocolatl as a health tonic. This not-so-sweet beverage derived from cacao seeds (which they believed were a gift from the gods) paved the way for today’s much sweeter version of chocolate. Fast-forward to the late 19th-century and Swiss chocolatiers developed the conching technique to produce the smooth feel of solid chocolate we now know and love.
This is a box of confections for an adventurous chocolate lover. Every piece is memorable. The sesame nougat was the first one we tried and it still sticks out as one of my favorites. It has the perfect texture of chewy caramel, a little crunch from toasted sesame seeds and the snap of perfectly tempered dark chocolate. The Star Anise & Pink Peppercorn starts with the licorice-like star anise and finishes with the pink peppercorn, the flavors unfolding on the tongue like a sensory short story. While I don’t think any of the flavors would be offensive, some people might be scared off by the esoteric flavor combos. (Those palates will be happy with our well-made runner up.)

With traditions and recipes based in the Netherlands, Chocolaterie Stam makes some of the most exquisite chocolates in the entire United States, let alone Des Moines, Iowa. You can’t go wrong with any of their bonbons or truffles, which are so rich and decadent that you’ll think you’re truly in Europe. The corn-shaped milk chocolate with a hazelnut praline filling is the perfect nod to Iowa and is just as tasty as it looks.
B.T. McElrath Chocolatier was an artisan chocolatier in Minnesota but has become a part of Annie B’s. (I have not done a new review since the change.) McElrath’s truffle assortment was excellent, with balanced and moderately strong flavors. In most pieces, the flavors remained distinct, working together without losing their own identities. B.T.’s Signature Dark Chocolate Truffle had a full chocolate flavor without any bitterness and without being very sweet. Other flavors include caramel; passion fruit; lavender and pepper; chile and lime, lime, coconut, and ginger; cinnamon and star anise. All were well done. I would ask for a different and stronger caramel flavor, but that is a quibble of personal preference.
I enjoy finding artisan chocolatiers when I travel. Chocolat Abeille (French for bee) is a gem in downtown Omaha. Their general assortment includes a variety of beautiful pieces including fruit, tea, and other flavors. Among these, the Caramel Ganache presented its chocolate flavor nicely, while others tended to be stronger in their fruit or other flavors. They are made in small batches and may sell quickly; the pieces that were available varied slightly over several visits in the course of a week. My favorite was a larger special piece (priced to match), the Hazelnut Banana Crisp, with a nice balance between its banana, hazelnut, and chocolate flavors.
This Italian chocolatier specializes in hazelnut-flavored chocolate pralines, combining a hazelnut chocolate cream and a whole hazelnut with a crisp chocolate shell in either milk or dark chocolate. It’s a decadent chocolate experience, but with a complexity and mild bitterness from the hazelnut that makes it a more adult experience. Perfect for nut lovers.

Even today, the chocolate trade looks a lot like it did in colonial days: Raw materials bought at generally low prices in the tropics are shipped to the developed world and turned into a luxury product. Today, three of the largest importers of cacao to America are fighting a lawsuit filed by a human rights group claiming that they buy beans harvested by child slaves, mostly in the nation of Ivory Coast. Several journalists have contended that the extent of slavery in the cacao industry has been overblown, but it’s hardly comforting to hear that the number of slaves who helped make your afternoon snack has been exaggerated. Without doubt, adults and children on some cacao farms, particularly in West Africa, perform demanding, exhausting work for awful pay.
Candinas Chocolatier is a small manufacturer run by Markus Candinas. His truffle assortment includes two very nice nut pieces, with a very fine crunchy texture and good flavors. The truffles have thin shells and medium-strength flavors. Another piece was sweet and fruity, quite appealing. However, without a chart, you do not know what to expect. The web site also offers no selection of pieces. The marzipan piece I liked seems to be gone. Much of the assortment is plain or mild ganaches or other “just chocolate” pieces that do not interest me. Given that, though, the milk chocolate truffle was spot on, and the flavors are nice.
