I brought in 20 judges. This way I could ensure that we had a variety of taste testers with different palettes. I had a few rules and one of them was they couldn’t communicate with each other while tasting the brownies. I studied a phenomenon called “group think” in college and know people can be swayed by other people’s opinions. So it had to be less talking and more eating! They were happy to oblige because I was offering them BROWNIES.
Today the Teuscher kitchens in Zurich make more than 100 varieties of chocolates using these original recipes, which have been handed down from father to son. Only the finest and most expensive natural ingredients are used, and absolutely no chemicals, additives, or preservatives are added. The house specialty is a champagne truffle, a blend of fresh cream, butter, and chocolate with a champagne cream center, dusted with confectioner’s sugar. “Wow,” said Krader, biting into one of the company’s flat, square truffles. “This is definitely the chocolate with the most distinct point of view.” By that, she meant that it had perhaps the most unusual flavor of the bunch, with distinctly fruity notes. “This is from someone who’s redefining what truffles can be,” she said. “The flavorings don't punch you in the face, and it tastes like it was just made.” In other words: advanced chocolatiering. “There’s a sophistication about them,” she said. “Truffle neophytes might want something more general.”
There is nothing conventional about Kate Weiser’s chocolate bars. They are painstakingly crafted, yes, but from there Weiser goes rogue, taking the grandest Venezuelan cocoa and adding açaí berries, or, in the ultimate rebellious act, going blonde with a caramel and sesame seed brittle bar. Her riotous, Jackson-Pollock-splatter-painted candy bars and bonbons are beautiful the way a punk rock romance might be—exuberant and irreverent in style and taste.
Hotel Chocolat is a UK based company specializing in exclusive chocolates. But, right away their noticeable lack of selection is a huge turn off. With only approximately 10 products to choose from this website is a disappointment. They do offer white, milk and dark chocolate items. But, the only thing that really caught our attention was a beautiful heart shaped chocolate milk and strawberry flavored item. Unfortunately, they were sold out weeks in advance of the holiday and the item cost $55.00.
The phrase dark chocolate sea salt caramels should be a selling point in itself, but these bite-size treats also have something else going for them: they have almost 500 five-star reviews on online. And there’s a reason why. They make other salty-sweet chocolate-caramel combos seem lackluster in comparison. One reviewer said they have a “bold saltiness” that’s “not for the faint of heart” and another said, “My favorite candy ever!” The creamy, rich caramel is cooked to just the right consistency and the smooth chocolate goes perfectly with the visible salt flakes on top.
The milk chocolate orange truffle is also excellent, but I am not as fond of the others. I had to work to taste the hazelnut in the milk chocolate hazelnut, and the chocolate flavors did not seem strong to me in the milk chocolate, dark chocolate, or darkest dark chocolate. I wonder if the cream they are using is a little unusual. (The web site gives a hint: In addition to heavy cream, the truffles contain butter and butterfat.)

After surveying the options, devil’s food seemed like the best choice for side-by-side testing. Since the key characteristic of a devil’s food cake is its richness, we figured we’d be able to judge more fairly by basing our test on the big brands’ most indulgent offerings. Next, the pros in our Test Kitchen baked each cake according to the directions on its package. To rid our bakers and testers of any preconceived biases, we prepared and compared each brand without its flashy packaging or marketing claims.
Though this taste test determined which cake we prefer, it’s worth noting that there was one ingredient missing—the frosting! It’s easy to imagine that many of these brands would have tasted sweeter, more moist and flavorful with a dollop of creamy frosting on top…unless, of course, you’re on board with the naked cake trend. Even if you don’t have a five-star boxed mix on hand, delicious icing can go a long way toward improving a so-so cake.

After debuting his winning pralines at the World Fair in Brussels in 1910, Greek-American Leonidas Kestekides fell in love with a local Belgian girl and opened a tea room in Ghent.
