Owner Patricia Tsai is a self-taught chocolatier whose background in the business world taught her how to avoid the pitfalls of running a sustainable food business. Since 2012, Tsai has been sourcing cacao from a small farm in Tabasco, Mexico. At Chocovivo, she roasts and grinds those beans into chocolate using a grinder made in Mexico; she also has an ancient Aztec stone grinder, which is fascinating to watch in action. The shop sells a variety of chocolate products, including hot chocolate mix and chocolate sauce, but Tsai’s single-origin and blended bars (flavored with locally sourced coffee, spices, and essences) have attracted a loyal following. Something was also lost in presentation. The uniformity of the pieces made for a bland appearance. An open box showed an array of blocks. The nearly identical undecorated chocolates lacked the attractiveness of of other chocolatiers’ colorful pieces with diverse shapes and decorations. And, while creative effort has clearly gone into zChocolat’s collection, I found the pieces pleasant but not compelling.
Taza Chocolate tries to maintain Mexican traditions when crafting its products. Each disc is made from stone ground organic cacao beans to create a bold, rustic chocolate disc. Taza means “cup” in Spanish and the company encourages customers to use the discs to make classic Mexican hot chocolate, which usually has a hint of spice in the mix. The discs in this box each represent their own unique flavor and spice combinations. There are six choices—cinnamon, cacao puro, vanilla, guajillo chili, salted almond and coffee—that chocolate enthusiasts can use in sauces, drinks or desserts.
If you’re looking for something a little simpler but still well within gourmet chocolate range, we suggest these caramels. Made with an infusion of sea salt, the caramels manage to merge a chewy texture and sweet notes with crunchy and bold sea salt. The salt doesn’t overwhelm the senses and instead provides a way to enhance the base flavors and textures of the caramel for a truly unique gourmet experience. These caramels are made with real butter and salt along with fresh cream for an authentic taste at an affordable price.
Vosges’ truffles are mild. This works well in the Woolloomooloo, which delivers a macadamia flavor that is pervasive without being strong. However, the other pieces are generally too mild for my taste. You might expect the curry in the Naga or the wasabi in the Black Pearl to be prominent, but they are weak. The flavors are present, but you have to work at tasting them.

The Wild Strawberry was also strong, very nice for strawberry. Some pieces were classics like the House Dark and some were playful like the PB & Jelly or the Speculous S’more, and they were all well done, not a false note among them. My biggest flavor criticism might be that the Gianduja Hazelnut was a little sharp for hazelnut, whereas I prefer a broader, smoother flavor.

K’s 5-star review: Through a narrow lobby and off the street, Chocolat Moderne is tucked on the 9th floor off the beaten path. Please do not let this discourage your New York chocolate trekking -- it is worth taking the extra step (or, if preferred, elevator ride) to visit. This chocolatier is absolutely stocked with a decadent selection (and I do mean selection and decadent) hosting rack after rack of freshly created bonbons. The lady herself, Joan Coukos, and her hubby were the hands-on reps at the counter, so the charming customer service was stellar. Bonbons are painted in perfectly tempered shell molds (Valrhona has never been in better form) with filled centers that absolutely ooze with a bravado of focused flavors -- from the trending and expected sea salt caramel and liquor-splashed ganaches, to oreintal persuasions such as persimmon peach and shiso lime. Pieces were $2.5-$3.5. Bars $8. Chocolat Moderne has middle man retailers such as D&D and Whole Foods that offer some of their products. However, I would strongly recommend visiting the NY location if it's available to your schedule -- you deserve it!
Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.

The web site does not offer a choice of pieces. My 25-piece box contained duplicates, so that only 14 flavors of the 27 depicted on the chart were in the box.
