By and large, the truffles are nice. In the Class 5, the chocolate led, and the raspberry was a good partner. The Black Diamond made good use of chocolate. The Rocky Top had a mild pleasant coffee flavor. The Powder Day was a good firm white chocolate. Mostly the strengths were medium, although the hazelnut was weak in the milk chocolate Mud Season.

Because Jacques Torres is as serious about technique as he is about fun, it’s possible to walk out of one of his eight New York City stores without a pure, single origin bar of dark chocolate and a bag full of chocolate-covered Cheerios (the idea for which he had when a mother quieted her wailing baby with a handful of the cereal.) His 80 percent Porcelana cocoa bars are unusually sweet and silky for chocolate with such a high cocoa content, but Torres says the qualities of these rare, special beans allow him to ratchet up the cocoa without adding more sugar.

Some of the Fruity pieces were excellent, particularly the Mango Passionfruit ganache. The fruit flavor was nicely bittersweet and strong with a good peak, complemented by slightly bitter chocolate. The Lime ganache, Raspberry ganache, and Red Berry bouquet coulis were also quite good with strong fruit flavors. The Orange Zest coulis was very interesting. I had the sensation of flavor in the upper palate versus on the tongue. The Apricot coulis flopped, though; it was weak and not sweet enough for me.
I discovered this wonderful chocolate brand more than a year ago in one of my Amazon Sweet Surprise boxes and immediately started searching for more. Hands down, this is the best chocolate I’ve ever had, European or American. The flavors in this selection are among my all-time favorites made by Seattle Chocolate. This SoHo chocolate shop and store showcases luxurious, single-origin chocolates and confections derived primarily from Criollo cacao beans. The Chocolate Dream Box is a treasure at the southern tip of Silicon Valley, not far from Fleur de Cocoa. B.T. McElrath Chocolatier was an artisan chocolatier in Minnesota but has become a part of Annie B’s. (I have not done a new review since the change.) McElrath’s truffle assortment was excellent, with balanced and moderately strong flavors. In most pieces, the flavors remained distinct, working together without losing their own identities. B.T.’s Signature Dark Chocolate Truffle had a full chocolate flavor without any bitterness and without being very sweet. Other flavors include caramel; passion fruit; lavender and pepper; chile and lime, lime, coconut, and ginger; cinnamon and star anise. All were well done. I would ask for a different and stronger caramel flavor, but that is a quibble of personal preference.
This month’s selection of Green Mountain Chocolates is amazing. My daughter (who gave me the membership as a Christmas gift) advised me that they are rated as one of the top three chocolates in the country. I was not satisfied at Pierre Marcolini. The Massepain Pistache was unremarkable. The dark chocolate in the Noisettine Fondant was so strong it almost overpowered the hazelnut. The ingredients and components in the piece were good, but the composition was not great. In the Trianon Fondant, the dark chocolate exterior did overpower the filling, and the wafers were soggy, not crisp.

K’s 5-star review: Through a narrow lobby and off the street, Chocolat Moderne is tucked on the 9th floor off the beaten path. Please do not let this discourage your New York chocolate trekking -- it is worth taking the extra step (or, if preferred, elevator ride) to visit. This chocolatier is absolutely stocked with a decadent selection (and I do mean selection and decadent) hosting rack after rack of freshly created bonbons. The lady herself, Joan Coukos, and her hubby were the hands-on reps at the counter, so the charming customer service was stellar. Bonbons are painted in perfectly tempered shell molds (Valrhona has never been in better form) with filled centers that absolutely ooze with a bravado of focused flavors -- from the trending and expected sea salt caramel and liquor-splashed ganaches, to oreintal persuasions such as persimmon peach and shiso lime. Pieces were $2.5-$3.5. Bars $8. Chocolat Moderne has middle man retailers such as D&D and Whole Foods that offer some of their products. However, I would strongly recommend visiting the NY location if it's available to your schedule -- you deserve it!
Katalin Csiszar and her husband, Zsolt Szabad, began the award-winning Rozsavolgyi in their home in Budapest in 2004. They source beans from Venezuela growers, and roast them very lightly to preserve their true flavors. Only organic cane sugar and a small amount of of cocoa butter goes in before they are formed into intricate patterns meant to mimic fireplace tiles, and wrapped by hand in paper that looks like your chic grandma’s vintage silk scarf. Purists rave about their Criollo and Trincheras bars, but those who like surprises go for inclusions like olives and bread, and flavors of Japanese matcha, and Indian masala spices.

With a noticeable lack of selection it doesn't take long to get through their few products to understand the limitations of this website.
