The truffles have thin shells and medium-strength flavors. Another piece was sweet and fruity, quite appealing. However, without a chart, you do not know what to expect. The web site also offers no selection of pieces. The marzipan piece I liked seems to be gone. Jacques Torres’ products are excellent, and there is not much to detract for that. Christopher Elbow ($35 for 16 pieces) was our top pick for 2014. In a blind tasting, a panel voted it their favorite. In the most recent tasting, the chocolates came across as too sweet and the flavors a little heavy-handed. While they are absolutely beautiful—the chocolates resemble baubles and jewels—they were squeezed out of the top spots by this year’s contenders.
Some pieces I liked were the dark chocolate Palets d’Or, Le Cocktail (with a blend of nuts, was what fine chocolate should be but not the oustanding piece I expected from Bernachon’s reputation), Le Métis (praline, marzipan, and pistachio, was an unusual melange and interesting), L’Aveline (hazelnut praline, was very good with sharp flavors that were not overpoweringly strong), La Truffe (a very good truffle), Le Chuao Pepitos (strong chocolate), La Nougatine (good caramel), and La Truffette (an orange flavor that blends well with the chocolate).

Baking Notes: I cooked every brownie mix for LESS time than listed on the box. I used cake testers to test the middle to make sure the brownies were done. Click HERE for an inexpensive cake tester. None of them reached even the minimum baking time listed on the box. My advice to you is to ALWAYS set the timer for less time than listed on the box.  If not, you may end up with hockey pucks for dessert!

One piece had a very good blend of hazelnut and almond with a fine crunchy texture. The marzipan was very good; Jacky Pédro brought out the flavor well. He must have sense of humor and self-confidence to label one of his products Le Crottin du Pin. To avoid spoiling your appetite, I will not translate the name, but the piece is a cocoa meringue with a chocolate cream filling. It was nice and very unusual and just a bit bitter. I also strayed from chocolate and tried the Patés de Fruits, which were very good.

Susanna Yoon used to make the chocolates at Thomas Keller’s three-Michelin-starred Per Se, where each meal ends with a tableside buffet of bonbons. Donnelly’s chocolates have well-developed chocolate flavors. Many pieces use strong flavors of spices, fruits, or nuts. I recommend identifying each piece before biting into it—the chocolate-banana combination is better when you expect it than when you are surprised. The cardamom piece is similarly better savored when you are prepared to sense the cardamom. (This spice is not used as much as its distinctive flavor and scent warrant. If you are not familiar with it, I recommend smelling and tasting a little separately before trying Donnelly’s cardamom-chocolate combination.)

Yes, you can get your chocolate fix with flavors that include Coffee Toffee (“Nina”) and Peanut Butter Truffle (“Penelope”). But you’ll really be turned on by the tart come-ons of “Zoey” a Blueberry Lemon Chia cookie with a tart, fresh-squeezed lemon juice glaze, or “Lilly” a Lemon Sugar Cookie with Lemon Heads and a fresh-squeezed lemon glaze (best eaten upside down so the glaze dazzles your tongue with a mouth watering tartness). When I spoke with Eric Case of Valrhona Chocolate, he made a point to differentiate filled chocolates from chocolate bars: “Chocolate and chocolates. Chocolate is something made from a bean, to give to someone that then creates a bonbon, or a confection, or a candy. ‘Chocolates’ are all kinds of things that happen to use chocolate in the ingredients, but they also have marzipan, toffee, nuts, or fruit.” Because of these additions, the shelf life of a quality box of chocolates is (generally) much shorter than that of a bar.
This Italian chocolatier specializes in hazelnut-flavored chocolate pralines, combining a hazelnut chocolate cream and a whole hazelnut with a crisp chocolate shell in either milk or dark chocolate. People were surprised when Anthony Bourdain's Good & Evil chocolate bar debuted in 2012 at more than $100 a pound, but Amedei's Venezuelan-sourced Porcelana bar already weighs in at more than $160 per pound. Cecilia Tessieri — one of the world's few female chocolatiers — makes some of the most expensive chocolate in the world. Since opening its doors in 1990, the Tuscany-based brand Amedei has contributed to a $27,000 cupcake in Dubai, as well as a $1,000 sundae at New York's Serendipity. Tessieri also makes an eclectic line of pralines, the filled chocolate bonbons that inspired her to go into business in the first place, and excellent bars such as the Cru Madagascar Extra Dark Chocolate (70 per cent) or Chuao Bar (70 per cent). But her creations are not for the budget-conscious!
I brought in 20 judges.  This way I could ensure that we had a variety of taste testers with different palettes.  I had a few rules and one of them was they couldn’t communicate with each other while tasting the brownies. I studied a phenomenon called “group think” in college and know people can be swayed by other people’s opinions. So it had to be less talking and more eating!  They were happy to oblige because I was offering them BROWNIES.
