I gave each of them a ranking sheet where they could rank each brownie mix on a scale of 1 – 10 points. I also encouraged them to take notes and describe in detail their takes on the brownies. The brands were left anonymous and each type of brownie mix was given a number so we could track the scores.  I gave them a few descriptive words to help while judging such as moist, chewy, fudgy, cakey, dense, too sweet, spongy, oily, weird aftertaste, fake flavor, lacks flavor, weird aftertaste, etc.  They also had to circle their favorite chocolate brownie mix. The results may surprise you!
If you’re looking for something a little simpler but still well within gourmet chocolate range, we suggest these caramels. Dilettante claims confectionary descendance from Julius Rudolph Franzen, pastry chef to Franz Josef, Emperor of Austria and King of Hungary. I have only their truffles to judge them by. Unfortunately, I prefer other pieces with a greater variety of components and expression. Truffles are too often an overdose of chocolate and cream. Dilettante may move up on my list when I have more experience with their products, such as their gift box assortment.

Chuao Chocolatier: (pronounced chew-wow) This company specializes in textural surprise. The whiz kid behind the firecracker truffle (chipotle caramel fudge with sea salt and popping candy) likes to thread in a secret layer of heat that doesn’t hit until the finish so you get the full-on rich chocolaty pleasure with a spank of fun at the end. The other favorite in this tasting was the Salted Chocolate Crunch with toasted panko breadcrumbs, olive oil ganache and a dusting of sea salt—a truly devilish bit. La Chatelaine Chocolat Co: Located in, of all places, Bozeman Montana, owners JP Wlady Grochowski and Shannon Hughes Grochowski are most inspired by nature. Says Shannon, “We walk through a small forest each day to work, and feel inspired each time, whether it’s the color of the leaves, deep green of the spruces or the scent of sage, or the local snow-capped Bridger Mountains. We also find a lot of inspiration in France, where we spend each summer with our children and Wlady's maman and cousins.” Top taste was the Absinthe in dark chocolate ganache and the dark and rich Arriba truffle —composed of 72% dark chocolate made from Forestero beans of Arriba origin.

For our first review, we took into account availability and usability of online stores: For example, Kee’s Chocolates from New York City came highly recommended from colleagues and editorial publications, but isn’t available online, and our goal was to find something that is accessible to most people. Overall, we came to a well-edited list of 11 of the most highly rated samples to put in front of a panel of nine friends and food experts for a blind tasting.
Godiva has long been known as a company that produces some of the finest artisanal chocolates at very affordable prices. Their classic gold gift box is no exception, in either case, providing chocolate lovers with an assortment of high-quality chocolate textures, each with bold, intense flavors. Most users really enjoyed the taste and presentation of the fine chocolates though the price as a bit high for some. We find the price to be only slightly above average for 19 pieces of artisan chocolate.

Famous in New York and internationally as an uncompromising chocolatier, Jaques Torres makes gourmet chocolate chip cookies that are an elegant and rich version of everyone’s favorite cookie. Each cookie measures 5 inches in diameter. Jacques uses his rich, house blend 60% dark chocolate baking discs, which means this cookie skews to the adult tastes, or kids with a discerning palate.

The Connoisseur Collection is an assortment of delightful flavors, but it is weak on chocolate. Many of the pieces are very sweet or creamy or fruity but have little or no chocolate flavor. Some do, such as the Aztec with its chocolate flavor that is simultaneously strong and delicate. In spite of the poor representation of chocolate, I would be tempted to recommend the Connoisseur Collection for the other wonderful flavors, including passion fruit, chai tea, orange and pistachio marzipans, and hazelnut. Unfortunately, the product I received weighed 5.5 ounces, much less than the 6.7 ounces claimed. This makes the price $105 per pound, which is hugely overpriced.
Norman Love Confections: Chef Norman Love’s chocolates always have a tropical high toned fruitiness to them—even his dark selections. We loved his holiday candy cane selection (which comes in a fetching candy cane-shaped box.) The sleek, lustrous very colorful chocolates won big for shock and awe—they also tasted great too. This was one of the most festive and fun collections that we opened.
Anchorage, Alaska, is known for its stunning views of the aurora borealis, and Sweet Chalet is known for its similarly remarkable aurora bonbons. Each bonbon is hand-painted, so no two are alike in their beauty. The appearance of the aurora bonbons is only half of their appeal; they come in unique flavors ranging from caramelized pear with saffron to raspberry rosewater.

Packaging: While we were fans of the chocolate, the packaging we're not too sure about. One taster described the box as something you would give to your Tinder Valentine (but given how popular Tinder is, is that a bad thing?). While that may be taking it a little far, the lace covered heart is definitely va-va-voom so while these chocolates may be perfect for your S.O. maybe don't give them to your grandma.
“We became convinced it was impossible to become number one in the world buying beans from brokers,” Alessio says. “The broker cannot tell you who grew the beans, or how it was done.” I don’t take Alessio for a weepy humanitarian, and yet he practices enlightened self-interest when it comes to the people who grow his cacao. He has invested in Chuao, agreeing to pay off the farmers’ mounting debts and buying baseball uniforms for the local team. He needs their best work so that he and Cecilia can do their best work.
First time there we tried a few chocolate candies. We started eating them as soon as we left the shop and could not stop! They were so good, we kept walking and eating and didn't pay attention to where we were going. In Venice that can really get you lost! After finding our way back to the shop we bought more candy. This time enough to get us through the rest of the trip.

I enjoy finding artisan chocolatiers when I travel. Chocolat Abeille (French for bee) is a gem in downtown Omaha. Their general assortment includes a variety of beautiful pieces including fruit, tea, and other flavors. Among these, the Caramel Ganache presented its chocolate flavor nicely, while others tended to be stronger in their fruit or other flavors. They are made in small batches and may sell quickly; the pieces that were available varied slightly over several visits in the course of a week. My favorite was a larger special piece (priced to match), the Hazelnut Banana Crisp, with a nice balance between its banana, hazelnut, and chocolate flavors.
I delayed sampling The Truffle Shop because the prices and shipping costs are so high, amounting to $7 per 1.3-ounce truffle when six truffles are ordered. The amaretto truffle may have been worth the experience once in a lifetime, but I have to say the rest are overpriced. The $25.50 cost for six truffles includes wonderful packaging: a nice gift wrap on the box, individually wrapped truffles in hand-assembled cups and wraps and rings. The presentation is exquisite. The $15.95 shipping paid for two-day FedEx, styrofoam packaging, and an unnecessary gel refrigerant in January, with no cheaper option available.
When we heard she was debuting Wild Ophelia, an American-inspired “sister” line to Vosges, we were excited to try it for ourselves. Intended as an “American road trip through chocolate,” Wild Ophelia aims to connect the American farmers’ movement with chocolate. The 41 percent cacao milk chocolate bars feature all-natural ingredients such as New Mexican pecans, California almonds and Michigan cherries sourced directly from small farms across the USA. Markoff first gained fame with offbeat creations like the Mo’s Bacon Bar, so it’s no surprise that Wild Ophelia features unexpected flavors such as BBQ Potato Chips, Beef Jerky and Peanut Butter & Banana.
At $120 a pound, Maison du Chocolat ($60 for 28 pieces) is pretty expensive chocolate, but it’s some of the best we’ve ever tasted. These are bonbons for the chocolate purist because you can still really taste the chocolate in each one. Even in the raspberry ganache, which is so packed with fresh flavor that you could swear you just ate the perfect raspberry, the complexity of the chocolate still comes through. The ganaches are incredibly smooth and the chocolate that comprises the shell is perfectly tempered, giving a very satisfying “snap” on first bite. The flavors, though, are more traditional than our main pick’s. While every chocolate in the Recchiuti box pleasantly surprised us, the Maison chocolates, although excellent, aren’t as adventurous. For a Valentine’s or romantic gift, we feel the Recchiuti make a better choice.
However, it is the chocolate that counts here. Norman Love falls short. Although the pieces were visually great, quite polished, and perfectly executed, they did not use chocolate well. Perhaps a third had a good chocolate presence. There were quite good non-chocolate flavors, including peanut butter, pistachio, lime, and pumpkin. The Peanut Butter & Jelly was very good but not good enough to justify putting them in an expensive confection.
With colorful eye-popping displays of sumptuous chocolate truffles and confections, Sprüngli offers the traditional high-end Swiss chocolate experience. This luxury chocolate shop first opened its doors in 1836, later to build a reputation on its signature macaron, the Luxemburgerli. Chocolate-covered nuts and hot chocolate mixes are offered to take home, in addition to the ultimate grand cru truffles that would send anyone’s eyes rolling back in delight. Rub shoulders with the city’s well-to-do while enjoying a coffee and chocolate cake in the Paradeplatz flagship shop’s second-floor café. Numerous locations in Zurich.
For the chocolate purist, or anyone looking for the perfect corporate gift, we think Maison du Chocolat ($60 for 28 pieces) is a great premium choice. The flavors are subtle enough to really let the chocolate shine. The packaging, reminiscent of brown pebbled leather, is understated and innocuous enough to gift for professional reasons. Although these chocolates are incredibly smooth and slightly less sweet than the Michel Cluizel, the overall flavor profile isn’t quite as daring as those in the Recchiuti box and might not provide the same sensory adventure as our main pick. We also think the assortments available online are a little big for a Valentine’s gift (although you can purchase smaller boxes in their stores).

Their blue bandana chocolate bars are made from beans sourced directly from the farmers, while the five-star bars are filled with nuts, caramel, fruit, or granola. And that’s just the beginning bars of this chocolate serenade.
We saved the biggest for last. Levain’s gourmet cookies push the limits of the definition of cookie. They have been described as “Molten Cookie Dough” for their barely baked middles that ooze with warm, sweet goodness. Weighing in at 6 ounces each they are the size of generous muffin tops. Each flavor is rich, buttery, super-decadent. We had the fun of standing in line to enter the teeny tiny New York store to order one of each flavor—Chocolate Chip Walnut, Oatmeal Raisin, Dark Chocolate Chocolate Chip and Dark Chocolate Peanut Butter Chip. I was lucky to have a posse of eager tasters with me. The edges have a slightly crisp cookie texture that gives way to an interior of cookie/cake-y crumb. The cookie’s center is a barely baked oooey goooey celebration of sweet. This is not a cookie for the faint of heart.

Anna Shea Chocolates is an experience not to be missed. The flavors, ingredients, technique, and artistry are excellent, including an excellent color chart and playful names. The assortment includes a variety of flavors including fruit, cinnamon, liqueurs, and some playful flavors like red velvet and birthday cake. The assortment was light on nut flavors, which tend to be my favorites.
