Subject = FABULOUS! I just received my July shipment, the Royal Palm box of Dark Signature truffles, and have to tell you that they are now my favorite chocolatier! The flavors are in perfect balance, the chocolates are not too sweet (so many dark chocolates have been ruined by over-sweetening). The quality is superb! Thank you for introducing them to me
A mural of Milton S. Hershey adorns The Hershey Story Museum, which tells the story of Hershey’s rise to become one of the top chocolatiers in the world. Born on a Pennsylvania farm in 1857, Hershey eventually turned to chocolates and used fresh farm milk to mass-produce milk chocolate, which was until then a luxury confection. If Chicago is famous for its scenic and culinary treats then it would be totally unfair to overlook Vosges Haut-Chocolat. The chocolatier stands at the no. 2 position with the virtue of its unparalleled chocolate flavours, variety and essence. If you are in Chicago, you can find the best French confectionery treat here. Apart from the rich quality regular chocolate recipes, you can discover a range of experimental recipes as well using various flowers and spices.
Assortments include gift boxes, baskets, and samplers, or you could order a chocolate of the month collection for a gift that lasts. Their blue bandana chocolate bars are made from beans sourced directly from the farmers, while the five-star bars are filled with nuts, caramel, fruit, or granola. And that’s just the beginning bars of this chocolate serenade.
Dandelion Chocolate bars contain only two ingredients: cocoa beans and cane sugar. For the dark variety-favoring purist, their unadulterated bars are a direct reflection of the quality and unique characteristics of the bean. Constantly on the hunt for the best cacao crop, Masonis and Ring work directly with farmers from around the globe. Dandelion Chocolate also gets top points for presentation. Luxuriously wrapped in gold foil and handmade paper, each of their bars is signed by the chocolatier and printed with its unique origin story.

Mexico City maker TA.CHO won gold for its small run of bars made with cocoa from Tabasco, one of the primary regions in Mexico where the pod-shaped fruit is grown. And Fu Wan Chocolate from Taiwan received top accolades for its rough-ground bars made from Taiwanese cocoa. The bars' coarse texture reflects how chocolate was traditionally made in Mesoamerica (where it originated).
Elk Candy Company makes fine chocolate and marzipan. I do not think marzipan is very interesting when it is plain or merely coated in chocolate, so it is nice to find a chocolatier that has developed their marzipan further, as Elk Candy Company has done with their flavored marzipan rolls. I like marzipan this way. Elk sells it in slices. Flavors include pistachio, truffle, hazelnut, and orange.

Those were my favorites of the Bean to Truffle Collection. They are novel enough that I am pleased to have tried them once, but the exceptional price prevents me from recommending the collection. The other pieces in my box were well done but not highlights for me. The Pistachio Marzipan did not present the pistachio or marzipan flavors well, the Nougat Torrone does not feature much chocolate flavor, and the Gianduja seemed very slightly bitter.

My wife and I purchased a Chocolate of the Month Club for her Grandmother who lived in another state. It was a great gift, easy and convenient for us, and as a chocolate lover, she was thrilled. The best part was that every month, when she would receive her next shipment, she would call us and tell us all about it, and it gave us a chance to talk, catch up on her life, and stay connected. We hadn't anticipated the extra benefit of choosing that gift, but we truly appreciated it.
One of the few true bean-to-bar chocolatiers in America, Dandelion also sells macarons, hot chocolate, caramels, and pastries at its San Francisco shop. The single-origin brownies are a popular treat, but the brand’s single-origin chocolate bars, which ship nationwide, have a cult following, and each one feels like a special gift. 740 Valencia Street, San Francisco, CA
We reached out to some of the world's best makers to learn more about the chocolates they love. These aren't the kinds of confections you'll find wedged between gum and mints at the check-out counter. They are craft chocolates, known for their attention to quality and celebration of the wide range of flavors found in cocoa beans from different origins.
Sweet Girl Cookies will make you feel like a kid again, that is, if you’re like me and always tried (and still try) to choose the biggest cookie on the cookie plate. These gourmet cookies are generously big—4.4 ounces, and they cry out to be enjoyed with a big glass of milk or cup of coffee for dunking. Each cookie tends toward a dense cake-like rather than chewy texture, and each flavor is packed with chips. The middle of these cookies (even their “smaller” 2 ounce cookies) is one inch thick. We measured.
There are thousands of chocolatiers around the globe but every chocolatier can’t spell the magic on the taste buds equally. This line of chocolates began with an international love affair. After debuting his winning pralines at the World Fair in Brussels in 1910, Greek-American Leonidas Kestekides fell in love with a local Belgian girl and opened a tea room in Ghent. After his pralines again won gold at the Ghent World Fair in 1913, Leonidas began selling chocolates from his storefront "guillotine window," then expanded his operation to tea houses in Brussels and Blankenberge. Today Leonidas sells chocolates at over 1,500 storefronts worldwide, but the prolific brand's humble beginnings are never too far away — "democracy in chocolate" is their motto, meaning that the good stuff isn't only reserved for the rich. Purists will appreciate his Tablette Noir bar, which features 70 per cent cocoa.
Eeach Valrhona single origin bar bears the name of that bean’s terroir on its label, the most exclusive of these being the Vintage Single Origin bars, sold in limited quantities according to crop yield. Valrhona also suggests wine pairings designed to bring out the “notes” in each chocolate’s complex flavor profile. From chocolate pearls to tasting squares, the brand’s nec-plus-ultra chocolate bar selection is available at specialty grocery stores.
Juan enjoys Åkesson's Single Plantation Chocolate, Madagascar, Bejofo Estate, 75%, made with Criollo cocoa (the world's most precious and celebrated variety) grown in northwest Madagascar. "It distinguishes itself with well-defined aromas and flavors. But I especially enjoy the balance of its smooth and creamy texture – that makes it unforgettable."

Chocolate fits a lot of moods and personality types. There are the intensely dark, single-origin bars meant for connoisseurs, the whimsical cake pops at a kid’s birthday party and the mass-produced assorted chocolates that your average joe wouldn’t pass up. These Seattle Chocolate candy bars fall somewhere in between. They capture the kid-at-heart sentiment of cake pops combined with some of the same quality ingredients found in high-end chocolate bars.

Larry Burdick makes exquisite delicious chocolate pieces at Burdick Chocolate, a small manufacturer at the western edge of New Hampshire, northwest of Keene and 70 miles from Nashua. Burdick does a great job of making a variety of ornate fine chocolates and presenting them well. The pieces in his assortment differ from each other well, so that one is entertained by the changes in flavor, style, and shape. The flavors range from intense chocolate to balanced to strong non-chocolate flavors, and the sweetness ranges from bitter to very sweet. Some flavors are familiar, and some are exotic.
