I'm not a huge chocolate fan but when I get a craving, I can always come here to satisfy it. I don't think I've tried any truffles that weren't made perfectly. Not only are they beautiful but you can tell their fresh with quality ingredients. McElrath’s truffle assortment was excellent, with balanced and moderately strong flavors. In most pieces, the flavors remained distinct, working together without losing their own identities. B.T.’s Signature Dark Chocolate Truffle had a full chocolate flavor without any bitterness and without being very sweet. Other flavors include caramel; passion fruit; lavender and pepper; chile and lime, lime, coconut, and ginger; cinnamon and star anise. All were well done. I would ask for a different and stronger caramel flavor, but that is a quibble of personal preference.

Unfortunately, the performance of this scent on my skin is fairly weak. It doesn't project off of me at all. Despite the other notes listed, I really only smell the cocoa powder.
Although I'm really not a big fan of dark chocolate, I received this as a gift and have to say I'm delighted with it. I love almond and the dark chocolate of this is not bitter or too strong like some sweet dark chocolate bars tends to be. This is a nice one! I'm not necessarily a super gourmand lover, but when I want to smell something just for myself and enjoy on a relaxed, rainy day at home I'm into the foodier smells. This is a great example of something foody but not sickly. There is a definite dryness to the chocolate. There also feels like a note of amber at the backend that keeps it from smelling JUST like an opened milk chocolate bar.

Katalin Csiszar and her husband, Zsolt Szabad, began the award-winning Rozsavolgyi in their home in Budapest in 2004. They source beans from Venezuela growers, and roast them very lightly to preserve their true flavors. Only organic cane sugar and a small amount of of cocoa butter goes in before they are formed into intricate patterns meant to mimic fireplace tiles, and wrapped by hand in paper that looks like your chic grandma’s vintage silk scarf. Purists rave about their Criollo and Trincheras bars, but those who like surprises go for inclusions like olives and bread, and flavors of Japanese matcha, and Indian masala spices.

The pieces in a one-pound box were quite varied in appearance, with few repetitions. Most pieces have full flavors of moderate strength. The designs were elegant but not as ornate as Burdick’s. The cinnamon-ginger piece was very good, and the chocolate-coconut mixture is notable. Some pieces are somewhat ordinary, not entirely worthy of a fine chocolatier.

Jacques Torres’ products are excellent, and there is not much to detract for that. A correspondent recommended the Alizé Heart of Passion, but the nut pieces are my favorites, with the Heart and other fruit pieces second. Most of the nut pieces, such as the Heavenly Hazelnut, had the fine crunchy texture of a praliné. The Cinnamon Praline was also a great nut piece, with hazelnuts. The European Peanut Butter had sort of an airy taste to the peanut butter. The Heart had a nice pop to the passion fruit flavor enveloped by chocolate flavor. The Creamy Raspberry, Fresh Squeezed Lemon, and Love Bug were also excellent fruit pieces.

Valrhona, the Rolls Royce of chocolate, has been crafting couvertures (chocolates with high cocoa content) since 1922. Hailing from France's Rhône Valley, Valrhona's wine country influence is unmistakable. The label on each Valrhona cru (single origin bar) bears the name of that bean's terroir, the most exclusive of these being the Vintage Single Origin bars, sold in limited quantities according to crop yield. Valrhona also suggests wine pairings designed to bring out the "notes" in each chocolate's complex flavor profile. K’s 4-star review: Champagne Truffles are amazing. When you shop in the store, they have "mini" truffles which are even better. I absolutely recommend these as a highlight of a trek along 5th Ave (among other distractions). Other chocolates from the case weren't as impressive (or disappointing: the triple-layer gianduja was dry and crumbled apart in the bag). Oh, and don't expect that the chocolate will be packaged nicely with a self-selected assortment: you get a clear plastic baggy like you just bought bulk dime store candy. Otherwise, staff was courteous and helpful. So, yay! I'm a fan of one piece! Rather generous rating for one piece ... ah well.

I visited Melt while in transit through London and was only able to sample a few pieces. My favorite was the Crispy Croquant, a hazelnut feuillantine with superb texture, excellent hazelnut flavor, and a nice scent. The Raspberry and Mint marvelously combined those flavors with a soft raspberry ganache and crystallized mint leaves in a white chocolate shell. The Sea Salted Praline and Gianduja Dome were also very good. The Sea Salted Caramel trailed a bit behind. It lost points for falling apart when bitten into and a strong note in the caramel that did not quite harmonize with the rest of the piece for me.

At last I asked Alessio what they were. “Cacao pods,” he said. “In formaldehyde so they do not dry up.” The one off in a corner behind the door was a unique Venezuelan variety called Porcelana. The other, placed on a low table next to all the trays of chocolate, gleamed and glistened like a trophy. That one was Venezuelan too, Alessio said with a smile. It came from Chuao.

Late last year, I grew curious about an Italian chocolate brand called Amedei. I mean curious in the same sense that sharks are curious about surfers. Amedei, founded in 1990, is the joint project of a 42-year-old Italian named Alessio Tessieri and his younger sister, Cecilia; he buys the cacao and she turns it into dark, glossy bars.
