When you step into Jacques Torres Chocolate, you feel as though you’ve stepped into a small European specialty store. Many customers compare the experience to the movie Chocolat. The Wild Strawberry was also strong, very nice for strawberry. Some pieces were classics like the House Dark and some were playful like the PB & Jelly or the Speculous S’more, and they were all well done, not a false note among them. My biggest flavor criticism might be that the Gianduja Hazelnut was a little sharp for hazelnut, whereas I prefer a broader, smoother flavor.

K’s 5-star review: Nama grand mariner and Nama champagne: rich and delicious. Absolutely. Remind me of Burdick's Pave, which are one of my absolute favorites. The Nama are a better value -- more pieces with the benefit of a handy prong to keep all the cocoa dusted pieces from feather off on your fingers. Boxes run $18.00 each as of 4/2014. Potato chips: really didn't click. Tasted greasy and didn't flatter either -- more guilt and less pleasure.

Kit Kat is a wafer biscuit bar which is covered by chocolate. It was created in England and is currently produced by Nestle, and in the U.S., H.B. Reese Candy Company. It comes in packets of two or four fingers, and comes in a variety of flavors including Kit Kat White, Kit Kat Mint, and Kit Kat Cookies & Cream. Planète Chocolat sells most of their chocolates in prepared boxes, so I could not pick out my preferences. Some pieces, mostly truffles, are available separately. The pieces in the box I got had textured tops that I could not match up with the diagram, so I could not tell what was what. Planète Chocolat’s chocolates look fancy, but that does not make them taste fancy, and I would rather pay for taste than looks.

I visited Melt while in transit through London and was only able to sample a few pieces. My favorite was the Crispy Croquant, a hazelnut feuillantine with superb texture, excellent hazelnut flavor, and a nice scent. The Raspberry and Mint marvelously combined those flavors with a soft raspberry ganache and crystallized mint leaves in a white chocolate shell. The Sea Salted Praline and Gianduja Dome were also very good. The Sea Salted Caramel trailed a bit behind. It lost points for falling apart when bitten into and a strong note in the caramel that did not quite harmonize with the rest of the piece for me.

We did notice that none of their categories included two of the most popular “candy holidays”, Halloween and Christmas, but Easter chocolates are sold year-round.

WOW is all I can say having received my first selection of your chocolates as a present from my father-in-law this Christmas. Zabar’s is as New York as it gets. Whether you’re celebrating Hanukkah, Christmas or New Years, Zabar’s bagels, deli meats, and pastries will put you in a New York state of mind. The Black and Whites are particularly fun to eat. Do you eat one side first then the other, or take an equal bite of both sides down the middle? I haven’t decided yet, so I’ll keep practicing.
Kate Weiser’s pieces were very attractive, the flavors wre not bad, and some of the compositions were interesting and appealing. Unfortunately, most of the flavors were too weak. I can only recommend the pieces with stronger flavors, including the Pistachio, Cookie Monster, Ninja Turtle, Key Lime Pie, Peanut Brittle, Cherry Almond, Lavender Apricot, and Salted Caramel. That is a broad enough range (fruit, nut, and other flavors) that most people would find several things to like and can craft an order likely to please themselves. The Pistachio blended its pistachio and hazelnut flavors nicely. The Cookie Monster is a novelty piece rather than traditional flavors but is well executed with its cookie base and vanilla bean ganache. In contrast, the title flavor in another novelty piece, the Sweet Potato, was very weak. Additionally, the chocolate flavor in many pieces is not well represented.
In 2005, when John Grahm took over this mid-century Los Angeles shop where Marilyn Monroe once purchased her sweets, he fashioned it into an edgy and modern version of Old Hollywood elegance. Partnering with designer Kelly Wearstler, Grahm created a line of stunning bars covered in edible crystal, filled with tortilla chips and cayenne pepper, and flavored with balsamic vinegar. But tradition still rules at Compartés, so everything is handmade and people (not machines) do the packaging.

Shugarman’s Little Chocolate Shop is the definition of “off the beaten path.” You won’t find a website for this 420-square-foot shop in Madrid, New Mexico, but if you visit, you’ll find an ever-rotating selection of uniquely flavored chocolates. Mixtures like dark chocolate with pink peppercorns, lavender, lemongrass and merlot salt sound crazy, but chocolatier Harvey Shugarman makes it work.
High-quality chocolate, made from the best cacao beans, is the first step. Next is the filling. When a confectioner makes the conscious decision to make high-quality chocolates, they forgo preservatives and artificial flavors and use natural fruit, nuts, butters, spices and herbs. The end result is something that isn’t as shelf stable as Russell Stover or other drugstore candies. Preservatives in those drugstore offerings affect the flavor of the chocolates. When you pit the long-life brands to more perishable high-end chocolates in a blind taste test, the differences are glaringly clear.

Chocolatier and pastry chef Marc Aumont has been crafting fine chocolates for decades, taking over his father’s business in France at the age of 16. Today, Aumont makes the desserts at chef Gabriel Kreuther’s restaurant in midtown Manhattan and commandeers the chocolate shop next door. The chocolate room itself is encased in glass so patrons can see each bonbon as it rolls off the enrobing conveyor belt, a mesmerizing process. La Chatelaine Chocolat Co: Located in, of all places, Bozeman Montana, owners JP Wlady Grochowski and Shannon Hughes Grochowski are most inspired by nature. Says Shannon, “We walk through a small forest each day to work, and feel inspired each time, whether it’s the color of the leaves, deep green of the spruces or the scent of sage, or the local snow-capped Bridger Mountains. We also find a lot of inspiration in France, where we spend each summer with our children and Wlady's maman and cousins.” Top taste was the Absinthe in dark chocolate ganache and the dark and rich Arriba truffle —composed of 72% dark chocolate made from Forestero beans of Arriba origin.

Elk Candy Company makes fine chocolate and marzipan. I do not think marzipan is very interesting when it is plain or merely coated in chocolate, so it is nice to find a chocolatier that has developed their marzipan further, as Elk Candy Company has done with their flavored marzipan rolls. I like marzipan this way. Elk sells it in slices. Flavors include pistachio, truffle, hazelnut, and orange.
