The Quatre Epices was well balanced blend of four spices. Wild Cherry had a nice piquant cherry flavor the first time I tried it but was milder on a later occasion. The Praline Noisette was good with a sharp hazelnut flavor, and the Mocha Cream was good, but some of the other gianduja pieces were mild or weak. The Honey had mild flavors with not much honey shining through. The cinnamon of the Cinnamon Toast was present but stood alone, not partnering well with the chocolate.
Tessa Halstead grew up in the chocolate business: Her father ran a chocolate shop in Dallas a generation ago. Today in Austin, she’s built Chocolaterie Tessa into a community hub. Chocolat Céleste is a mixed bag; I have enjoyed some pieces but not all (relative to experienced expected for the price), and prices have escalated. I suggest the Grand Cru collection. Although pricey, $139/lb. in 2012, it is a rare opportunity to taste criollo (a type of cacao, from which chocolate is made). I enjoyed the criollo pieces in the collection. They should be approached as a tasting experience: Cleanse your palate with water, smell, taste, let the chocolate dissolve, and take the time to experience it. The collection also has non-criollo pieces that I found a bit flat and dry compared to the criollo.
In the lofty strata where Tessieri operates, “making chocolate” means that you make the chocolate. You import cacao beans from plantations. You roast them and husk them and grind the cacao nibs into a fine paste. You add sugar and grind some more. Finally you swirl the mixture in open tanks called conches, which smooths the texture while helping to blow off acids and other nasty flavors. It’s complicated, demanding work, and few small companies even attempt it.

She walked to the sideboard and pulled down three trays, each arrayed with a different cru. Valrhona was the first to borrow that wine term and apply it to chocolate; Amadei uses it to describe bars made with beans from the same region. Amedei’s Grenada I Cru was quiet and had something about it that reminded me of raspberries. The Jamaica was stronger and made me think of pipe tobacco; so did the Venezuela, but it also had a durable aftertaste of good black coffee. Then Cecilia offered me a tray of the first chocolate she made, called Toscano Black 70 percent. This time, I had trouble picking individual voices out of the choir. I mostly remember the overall sensation of getting all the deliciousness any sane person could want.

Fittingly, the chocolate takes center stage from the onset, not a more familiar dense semi-dark chocolate but rather, almost exactly as another has put it, like milk chocolate cocoa powder, somehow at the very intersection of sweet and dry. It's plenty sweet but not over the top, and the sharpness of the cocoa powder is somehow there. Another similar analogous experience is the smell of a milk chocolate bar when first being unwrapped. Most chocolate makers know nothing about where their cacao comes from. A former consultant for a well-regarded European chocolate maker told me that until last year, the firm’s cacao buyer had never been to a plantation. Farmers sell to brokers who sell to bigger brokers; by the time the cacao reaches the factory, nobody knows its story. Sometimes this arrangement allows growers to mistreat workers without accountability. It also can allow them to get the same price for unripe, rotting or generally trashy beans—at their worst, these are known as "dogs and cats"—that they get for the good stuff.
I rarely recommend chocolates at this price level, and I certainly cannot make Christopher Elbow a regular treat, but I do recommend experiencing these exquisite chocolates. They would also make a superb gift. (Alternatives at this quality but somewhat cheaper are Burdick and Jacques Torres.) While I recommend Elbow’s chocolates, the toffees did not stand out for me.

French Broad: This chocolatier opened in Asheville in 2007 and does a nice job of giving the chocolate lover a big truffle for the buck. These were some of the largest truffles we tasted. Their Buddha Collection’s vegan truffle was a favorite (composed of bitter sweet chocolate and coconut cream), lending the truffle a nice exotic edge. The Lavender and honey from the signature collection box—a milk chocolate ganache around a dark chocolate ganache blended with local honey and lavender—was the a delicious riff on lavender. The mole negro—housemade mole in dark chocolate and rolled in sesame seeds—great texture and spice.
I was not satisfied at Pierre Marcolini. The Massepain Pistache was unremarkable. The dark chocolate in the Noisettine Fondant was so strong it almost overpowered the hazelnut. The ingredients and components in the piece were good, but the composition was not great. In the Trianon Fondant, the dark chocolate exterior did overpower the filling, and the wafers were soggy, not crisp.
This month’s selection of Green Mountain Chocolates is amazing. My daughter (who gave me the membership as a Christmas gift) advised me that they are rated as one of the top three chocolates in the country.
