Donnelly’s chocolates have well-developed chocolate flavors. Many pieces use strong flavors of spices, fruits, or nuts. I recommend identifying each piece before biting into it—the chocolate-banana combination is better when you expect it than when you are surprised. The cardamom piece is similarly better savored when you are prepared to sense the cardamom. (This spice is not used as much as its distinctive flavor and scent warrant. If you are not familiar with it, I recommend smelling and tasting a little separately before trying Donnelly’s cardamom-chocolate combination.)
Subject = FABULOUS! I just received my July shipment, the Royal Palm box of Dark Signature truffles, and have to tell you that they are now my favorite chocolatier! The flavors are in perfect balance, the chocolates are not too sweet (so many dark chocolates have been ruined by over-sweetening). The quality is superb! Thank you for introducing them to me
These Wockenfuss artisan truffles are not just absolutely delicious, they’re also gorgeously crafted. There are 12 truffles in the box, each with unique fillings, made with dark chocolate and milk chocolate. The onyl complaint you’ll have with these gourmet chocolates is that they are so beautifully decorated you’ll find it difficult to actually eat them.

Vosges ($40 for 16 pieces) is famous for round truffles with exotic, unexpected combinations like wasabi with black sesame and even Taleggio cheese with walnuts. Their bacon bar is beloved by many people we talked to, but their assorted chocolates weren’t as well received. Funniest comment: “Cumin?? That’s a mean trick!” Vosges are available in Chicago, New York City, Los Angeles, and Las Vegas.
Top chocolatiers generally work with couverture (first-rate chocolate containing a high percentage of cocoa butter) to make their creations, versus fresh cocoa beans, although an increasing number now experiment with bean to bar. Some makers even grow their own cacao beans. Direct contact between growers and makers is the best-case scenario for sustainable, or at the very least fair trade, chocolate.

There is nothing conventional about Kate Weiser’s chocolate bars. They are painstakingly crafted, yes, but from there Weiser goes rogue, taking the grandest Venezuelan cocoa and adding açaí berries, or, in the ultimate rebellious act, going blonde with a caramel and sesame seed brittle bar. Her riotous, Jackson-Pollock-splatter-painted candy bars and bonbons are beautiful the way a punk rock romance might be—exuberant and irreverent in style and taste.

There may be bars with frillier packaging and more envelope-pushing additions, but when it comes to pure, classic chocolate, Bonnat can lay claim to the crown. This family company began in 1884 and was beloved by Jackie Kennedy Onassis who gave bars to White House guests during the holidays. The Juliana bars are made from specially-grown Brazilian cacao beans, fermented, then dried in the sun slowly, over seven days. Back in France, the beans are painstakingly refined and tempered over five days. It’s an intricate process but, as Stephane Bonnat says, “In the Alps, we have time.”

Love love love these chocolates. We get them pretty regularly, and also purchase them as gifts for others. Great assortment or delicious chocolates. I love that amazon now includes ice packs when the weather is warm to protect them. I think it's weird that one day the price will be under 10 and the next day it might be over 18. We don't pay more than 10 for this bag, and not sure if it's a mistake or not, but just thought I'd throw it out there. It's a good deal when under 10.

And, no surprise, the world winner is also a hit with esteemed makers: "Meeting the wonderful Canadian couple David and Cynthia of Soma Chocolatemaker at the International Chocolate Awards World Championships was a gift," Friis-Holm says. "The rare beans originating from the troubled country of Venezuela that are featured in their Guasare 70% bar make for a very tasty, beautifully executed and worthy world winner."
These are the best cookies I've ever had! A friend gave me a box of these for Christmas, and my son and I devoured them. I had to get more. Do not think of the price tag. These are not Chips Ahoy or Oreos. These are desserts as dainty, tasty, and elegant as you'd find in a 4 star restaurant. You won't be able to eat a dozen at one sitting....possibly not in two. They are filling and just an amazing little bit of heaven. I am so glad I can get these through Amazon because the nearest Cosco is a two hour drive from me here on the Oregon coast. And I would feel so guilty driving that far just to buy cookies. But, I am ashamed to say, I'd probably do it. Yes. They are THAT ... full review

The Thai peanut butter cups at Alma Chocolate in Portlandm Oregon, are what make this shop famous, but don’t discount their other offerings. Their bonbons are some of the best in the country and come in beautiful flavors such as fig and marzipan and passion fruit caramel. They also pay homage to chocolate’s Latin roots by making hand-crafted chocolate icons, made with 74 percent single-estate dark chocolate and painted with 23-karat edible gold.
The best chocolates in Texas are hand-crafted by Kate Weiser in Dallas at her namesake chocolate shop. These confections are gorgeous. Her bonbons (which come in inventive flavors such as lavender apricot, yuzu, and buttery popcorn) are bright and colorful. Kate Weiser Chocolate is perhaps best known for “Carl the Snowman.” Named as one of Oprah’s favorite things, this hollow dark chocolate snowman is filled with hot cocoa mix and mini marshmallows. It makes the dreamiest hot chocolate you could ever imagine.
The Wild Strawberry was also strong, very nice for strawberry. Some pieces were classics like the House Dark and some were playful like the PB & Jelly or the Speculous S’more, and they were all well done, not a false note among them. My biggest flavor criticism might be that the Gianduja Hazelnut was a little sharp for hazelnut, whereas I prefer a broader, smoother flavor.
“Wow,” said Krader, biting into one of the company’s flat, square truffles. “This is definitely the chocolate with the most distinct point of view.” By that, she meant that it had perhaps the most unusual flavor of the bunch, with distinctly fruity notes. “This is from someone who’s redefining what truffles can be,” she said. “The flavorings don't punch you in the face, and it tastes like it was just made.” In other words: advanced chocolatiering. “There’s a sophistication about them,” she said. “Truffle neophytes might want something more general.”
Chocolate contributes more than $700 million to the Ecuadorian economy. A single 1.8 ounce bar of the finest chocolate divided into 12 squares will set customers back more than $250. For the adventurous chocoholics who want to see chocolate production from seed to bar, the Cacao Route offers the opportunity to visit cacao farms and eventually eat chocolate in a number of dishes as well as sweet and bitter bars. Cacao Route tours take place near the Pacific coast, with options to tour the Organic Cacao Museum, horseback ride along the path and visit plantations and packing facilities, as well as in the Amazon, which features spa treatments at the Papallacta
If you like chocolate bark covered with fresh fruits and nuts, you will go nuts for the chocolate of Paul de Bondt. He was born in Holland and married an Italian, Cecelia. The couple makes international chocolate with flair. Try their lemon lime 64 percent bar made from Madagascar’s finest cacao. Although one can find several outstanding chocolate makers in Tuscany, de Bondt proves noteworthy for his scientific approach to chocolate, offering various percentages of the same cocoa in a series of bars that lets you find just the right nuances for your chocolate preferences. Hailing from France’s Rhône Valley, Valrhona’s wine country influence is unmistakable. The label on each Valrhona cru (single origin bar) bears the name of that bean’s terroir. Valrhona also suggests wine pairings designed to bring out the “notes” in each chocolate’s complex flavor profile. From chocolate pearls to tasting squares, the brand’s nec-plus-ultra chocolate bar selection is available at specialty grocery stores.

Masters at everything they do, these Toronto chocolate experts present pure chocolate bars made with beans from around the world, taste-tempting chocolate confections, and truffles like works of art. The conoidal Douglas fir truffles—symbolic of the Canadian coniferous icon—blend fruity cocoa from the Dominican Republic and natural oils from the fir trees to give the experience of eating chocolate in the middle of a pine forest. SOMA also highlights their expertise in frozen confections like whiskey and chocolate gelato, nods to their first store space in the corner of a distillery. Two stores and a chocolate lab in downtown Toronto.

Because Jacques Torres is as serious about technique as he is about fun, it’s possible to walk out of one of his eight New York City stores without a pure, single origin bar of dark chocolate and a bag full of chocolate-covered Cheerios (the idea for which he had when a mother quieted her wailing baby with a handful of the cereal.) His 80 percent Porcelana cocoa bars are unusually sweet and silky for chocolate with such a high cocoa content, but Torres says the qualities of these rare, special beans allow him to ratchet up the cocoa without adding more sugar.
Chocoholic travelers can have an immersive experience in Hershey, Pennsylvania, at Hershey Park. The amusement park, with roller coasters, water rides and candy mascots, also holds two hotels and one campground. Guests can take in shows and concerts, eat thousands of calories thanks to chocolate-themed menus and rich desserts or even get sticky with a "chocolate fondue wrap" at the full-service spa.
Blink and passers-by could easily miss the Veruca Chocolates cafe and store in Chicago’s sleek Lincoln Park neighborhood. Pediatrician-turned-chocolatier Heather Johnston fills her glass cases with bonbons, caramels, and dipped truffles in a range of flavors every season. The house specialties include a mango and passionfruit-infused ganache bonbon, but don’t miss the almost smoky blackened sugar chocolates, or browned butter bonbons with an addictively nutty flavor. Toasted pumpkin seeds give orange-hued pumpkin caramel truffles a bit of crunch. Veruca ships nationwide. 1332 North Halsted Street, Chicago, IL — Ashok Selvam
Taza Chocolate tries to maintain Mexican traditions when crafting its products. Each disc is made from stone ground organic cacao beans to create a bold, rustic chocolate disc. Taza means “cup” in Spanish and the company encourages customers to use the discs to make classic Mexican hot chocolate, which usually has a hint of spice in the mix. The discs in this box each represent their own unique flavor and spice combinations. There are six choices—cinnamon, cacao puro, vanilla, guajillo chili, salted almond and coffee—that chocolate enthusiasts can use in sauces, drinks or desserts.
One of the oldest candy businesses in the country, Schimpff’s Confectionary in Jeffersonville, Indiana, is half chocolate shop, half museum, which makes it a charming tourist destination on its own. Beyond the collection of candy-making history here, the chocolates are old-fashioned and scrumptious. Don’t leave without picking up some caramel-covered marshmallows, which are called “mojeskas” in this part of the country.

The praline/hazelnut mix starts to emerge in the background quickly after application. Hazelnut alone is more familiar, and I like to think I would've pointed it out without knowing about it ahead of time, but the addition of praline makes for a more nuanced and alien blend, albeit very desirable and certainly not taking much away from the cocoa-dominance of the fragrance.
