Finally you swirl the mixture in open tanks called conches, which smooths the texture while helping to blow off acids and other nasty flavors. It’s complicated, demanding work, and few small companies even attempt it.
This is a box of confections for an adventurous chocolate lover. Every piece is memorable. The sesame nougat was the first one we tried and it still sticks out as one of my favorites. It has the perfect texture of chewy caramel, a little crunch from toasted sesame seeds and the snap of perfectly tempered dark chocolate. The Star Anise & Pink Peppercorn starts with the licorice-like star anise and finishes with the pink peppercorn, the flavors unfolding on the tongue like a sensory short story. While I don’t think any of the flavors would be offensive, some people might be scared off by the esoteric flavor combos. (Those palates will be happy with our well-made runner up.)

This line of chocolates began with an international love affair. After debuting his winning pralines at the World Fair in Brussels in 1910, Greek-American Leonidas Kestekides fell in love with a local Belgian girl and opened a tea room in Ghent.  After his pralines again won gold at the Ghent World Fair in 1913, Leonidas began selling chocolates from his storefront "guillotine window," then expanded his operation to tea houses in Brussels and Blankenberge. You don’t have to look all that hard to find a world-class chocolatier in New York, but while you’re looking, don’t skip over Stick With Me. Located in the Nolita neighborhood of Manhattan, chocolatier Susanna Yoon is crafting handmade bonbons and caramels that rival desserts served at some of the most expensive restaurants in the country. The bonbons look more like hand-painted marbles and less like chocolates, with playful flavors like speculoos s’more and black and white to match.


Unlike many places on this list, Sweenor’s Chocolates is shockingly affordable; a 1-pound box of assorted chocolates will only cost you $23.50. But don’t take their low prices as an indication of low quality! Their versions of classic treats (chocolate-covered raisins, malted milk balls) blow your concession stand snacks out of the water. It’s worth a trip to Cranston, Rhode Island, for this sweet shop.

This Italian chocolatier specializes in hazelnut-flavored chocolate pralines, combining a hazelnut chocolate cream and a whole hazelnut with a crisp chocolate shell in either milk or dark chocolate. Most chocolate makers know nothing about where their cacao comes from. A former consultant for a well-regarded European chocolate maker told me that until last year, the firm’s cacao buyer had never been to a plantation. Farmers sell to brokers who sell to bigger brokers; by the time the cacao reaches the factory, nobody knows its story. Sometimes this arrangement allows growers to mistreat workers without accountability. It also can allow them to get the same price for unripe, rotting or generally trashy beans—at their worst, these are known as "dogs and cats"—that they get for the good stuff.

And, no surprise, the world winner is also a hit with esteemed makers: "Meeting the wonderful Canadian couple David and Cynthia of Soma Chocolatemaker at the International Chocolate Awards World Championships was a gift," Friis-Holm says. "The rare beans originating from the troubled country of Venezuela that are featured in their Guasare 70% bar make for a very tasty, beautifully executed and worthy world winner."

Chef Willem DeGroot’s amaretto truffle made my head spin. The amaretto flavor works very well with the large amount of alcohol in the truffle, and I recommend it highly. However, the hazelnut truffle is too much liqueur and not enough hazelnut. The Black Tulip truffle has a startling appearance; it is covered with sharp tufts of chocolate. Its strong cognac flavor is not to my taste.
The only drawback that we found is that Simply Chocolate's prices are often considerably higher than the competition. For instance, many of the chocolates made by Vosges can be purchased directly from that retailer at a significant savings, even when factoring in Vosges' higher shipping costs. You'll want to shop around a bit, especially if your chocolate purchase includes a brand that may be sold elsewhere for less.

The 36-piece assortment I ordered from William Dean Chocolates contained a broad selection of chocolates and flavors, from the familiar peanut butter or even childhood favorite peanut butter and jelly, to fine lavender or port and plum. The Port and Plum was one of my favorites of the box. The flavors interplayed nicely and had some depth. The Mexican Mango was a very nice mango puree with a little bit of spiceness.
