We did notice that none of their categories included two of the most popular “candy holidays”, Halloween and Christmas, but Easter chocolates are sold year-round.

Garrison has other novelties, but the toffee was best. The Ultimate Nougat Bar suggested something I would like to see chocolatiers try—remaking classic candy bars with fine ingredients. Unfortunately, the Nougat Bar fell short. It felt too empty of flavor, and the first three ingredients do not impress (dried egg whites, sugar, and potato starch).

I absolutely LOVE chocolate! The 36-piece assortment I ordered from William Dean Chocolates contained a broad selection of chocolates and flavors, from the familiar peanut butter or even childhood favorite peanut butter and jelly, to fine lavender or port and plum. B.T. McElrath Chocolatier was an artisan chocolatier in Minnesota but has become a part of Annie B’s. (I have not done a new review since the change.) McElrath’s truffle assortment was excellent, with balanced and moderately strong flavors. In most pieces, the flavors remained distinct, working together without losing their own identities. B.T.’s Signature Dark Chocolate Truffle had a full chocolate flavor without any bitterness and without being very sweet. Other flavors include caramel; passion fruit; lavender and pepper; chile and lime, lime, coconut, and ginger; cinnamon and star anise. All were well done. I would ask for a different and stronger caramel flavor, but that is a quibble of personal preference.
Within three weeks, the Tessieris decided that they weren’t going to buy chocolate anymore—they would make it. Cecilia apprenticed with bean-to-bar artisans around Europe. Each cookie tends toward a dense cake-like rather than chewy texture, and each flavor is packed with chips. The middle of these cookies (even their “smaller” 2 ounce cookies) is one inch thick. Visiting the Republica del Cacao should be on every chocoholic's bucket list! The youngest company among our selections, the Republica del Cacao is an Ecuadorian chocolate firm founded in 2004. The brand arose out of an effort to preserve the indigenous Arriba cacao plants grown predominantly on family farms in the Manabí, Los Ríos and El Oro regions of Ecuador. Republica del Cacao's claim to fame is their single-origin dark chocolate bar, made with nothing but cacao, sugar and cocoa butter, allowing the complex flavors of each region's chocolate to speak for themselves. The company has also branched out into beverages like hot cocoa, coffee and chocolate- and coffee-flavored liqueurs.
Elk Candy Company makes fine chocolate and marzipan. I do not think marzipan is very interesting when it is plain or merely coated in chocolate, so it is nice to find a chocolatier that has developed their marzipan further, as Elk Candy Company has done with their flavored marzipan rolls. I like marzipan this way. Elk sells it in slices. Flavors include pistachio, truffle, hazelnut, and orange.
Chocolate doesn’t get any fresher than Jouvay, perfected by the Grenada Cocoa Farmers Cooperative based at the rural Diamond Chocolate Factory. The idea was to partner with local farmers working right in the ecosystem to grow the best quality beans. While visiting the 18th-century factory inside a converted rum distillery built by French monks, see the cocoa beans drying on trays under the Caribbean sun. Growers employ a centuries-old French tradition of “walking” the beans—turning them gently by walking over the shells, which are later roasted and removed.
