I didn’t want to get specific kinds that some people couldn’t find in their local market. I wanted to test the most popular and recognizable brands.

These are so delicious! Taste like you'd expect a dark chocolate sea salt caramel to taste, but with just a hint of bourbon flavor. Highly recommend. Shipped without a cold pack in November (high has been in the 70s this week) and they arrived in great shape. Ordered as a gift for someone who was willing to share with me. Kollar Chocolate’s pieces show excellent technique: They have good flavors, the flavors are generally well expressed, the chocolate is good, and the pieces are attractive and physically well crafted. However, I did not get a great sense of depth of flavors or blending of them. By and large, the flavors in each piece seemed distinct from each other and did not combine to form an experience absorbing to the senses.

This Italian chocolatier specializes in hazelnut-flavored chocolate pralines, combining a hazelnut chocolate cream and a whole hazelnut with a crisp chocolate shell in either milk or dark chocolate. It’s a decadent chocolate experience, but with a complexity and mild bitterness from the hazelnut that makes it a more adult experience. Perfect for nut lovers.

For the chocolate purist, or anyone looking for the perfect corporate gift, we think Maison du Chocolat ($60 for 28 pieces) is a great premium choice. The flavors are subtle enough to really let the chocolate shine. The packaging, reminiscent of brown pebbled leather, is understated and innocuous enough to gift for professional reasons. Although these chocolates are incredibly smooth and slightly less sweet than the Michel Cluizel, the overall flavor profile isn’t quite as daring as those in the Recchiuti box and might not provide the same sensory adventure as our main pick. We also think the assortments available online are a little big for a Valentine’s gift (although you can purchase smaller boxes in their stores).

But as a judge at the International Chocolate Awards and a Grand Jury judge at the Academy of Chocolate awards I have tasted a lot of chocolate - and these are my favourites, in reverse order of my opinion of their deliciousness.

Located in the Nolita neighborhood of Manhattan, chocolatier Susanna Yoon is crafting handmade bonbons and caramels that rival desserts served at some of the most expensive restaurants in the country. The bonbons look more like hand-painted marbles and less like chocolates, with playful flavors like speculoos s’more and black and white to match.
Richart’s Intense Valentine Gourmet Chocolates are $77 for a box of 49 chocolates. The real frustration here is that it's 49, not 50, so those of us with a strong sense of symmetry will have to eat them quickly just to cope. However, they are legitimate French Chocolates, each one having one of seven fancy flavors / aromas - floral, spicy, citrus, balsm, roasted, fruity, or herbal. The box also comes with a dark chocolate plaque for your valentine, so maybe that's piece 50.
Donnelly’s chocolates have well-developed chocolate flavors. Many pieces use strong flavors of spices, fruits, or nuts. I recommend identifying each piece before biting into it—the chocolate-banana combination is better when you expect it than when you are surprised. The cardamom piece is similarly better savored when you are prepared to sense the cardamom. (This spice is not used as much as its distinctive flavor and scent warrant. If you are not familiar with it, I recommend smelling and tasting a little separately before trying Donnelly’s cardamom-chocolate combination.)
This cozy shop/café takes an artistic approach to crafting decadent chocolates. Their hand-painted bonbons are a marvel to look at and taste: Black Forest Bacon Bites, Coconut Lime, and Strawberry Balsamic, among others. Truffles also reflect fun names and flavors like Yes, Yes, Yes (layers of white, milk and dark chocolate) and Bite Me (with a brownie ganache). Other fine confections include French macarons, toffees made with Texas pecans, and rich cakes and pastries.

Chocolat Céleste is a mixed bag; I have enjoyed some pieces but not all (relative to experienced expected for the price), and prices have escalated. I suggest the Grand Cru collection. Although pricey, $139/lb. in 2012, it is a rare opportunity to taste criollo (a type of cacao, from which chocolate is made). I enjoyed the criollo pieces in the collection. They should be approached as a tasting experience: Cleanse your palate with water, smell, taste, let the chocolate dissolve, and take the time to experience it. The collection also has non-criollo pieces that I found a bit flat and dry compared to the criollo.
